As it comes as no surprise, my Valentine is Mr. Grumbles.
Just like these White Chocolate Strawberry Cheesecake Muffins, Mr. Grumbles has a crusty exterior with a soft and loveable interior!
Knowing that his favourite dessert would have some strawberry and cheesecake component, I decided to make a version of my Strawberry Cheesecake into individual muffins for the perfect portion-controlled treat.
Why did you only make 6 muffins and not the standard 12 muffins that most recipes call for?
- there are only 2 people in our house so 6 muffins are enough for us
- it is always easier to double a recipe than it is to divide a recipe (at least it is for me!) so if you do want to make 12 muffins, simply double the ingredients (but do not add any additional baking time)
*UPDATE*
Mr. Grumbles liked these muffins so much that he requested them again so this time I made them into 12 muffins. Therefore, this new recipe calls for 12 muffins instead of 6 but feel free to cut the recipe in half if you only want 6 muffins.
What ingredients do you need to make these White Chocolate Strawberry Cheesecake Muffins?
For the Crust:
- coconut flour
- butter
- brown sugar
- cinnamon
- jam
For the Cheesecake
- cream cheese
- greek yogurt
- white chocolate
- egg whites
- coconut flour
- salt and vanilla
For the Strawberry Jam
- strawberries
- lemon
- sugar
- chia seeds
What ingredients do you need to use to make these Keto and Sugar-Free?
- Brown Sugar - use Lakanto Golden Sugar
- Sugar - use erythritol blended with monk fruit
- White Chocolate - use Bake Believe White Chocolate Chips
How do you make these Cheesecake Muffins?
- Combine the crust ingredients and divide the mixture between muffin tins. Press it down to form the crust
- Combine the cheesecake ingredients and pour half the mixture over the crust.
- Add 1 teaspoon of jam to each cheesecake muffin and top with remaining cheesecake.
- Add 1 additional 1 teaspoon of jam and swirl to incorporate
- Bake in the oven for 20 minutes
- Allow to cool completely
- let set for 2-3 hours or overnight
How do you make this Sugar-Free Jam
- Chop your strawberries and place them in a small saucepan.
- Add 2 tablespoon of water and 1 tablespoon of lemon juice
- Bring to the boil and then turn the heat to medium and let it simmer for around 15 minutes.
- Mash with a potato masher or blend the strawberries in a high-speed blender
- Taste the jam and if it is not sweet enough, add additional sweetener
- Remove the jam from the heat. Once cooled, place the jam in the fridge to firm
Tips and Tricks to make these White Chocolate Strawberry Cheesecake Muffins
- if your jam seems to thin, simply stir in 1 tablespoon of chia seeds. Leave the jam for an hour to allow the chia seeds to thicken the jam
- if you don't want to make your own jam, simply buy store-bought instead
- feel free to make this with raspberry, blueberry or blackberry jam instead
- don't worry if the white chocolate cheesecake muffins drop or crack when they are removed from the oven as the jam will cover any imperfections
- feel free to halve this recipe to make 6 muffins instead of 12 muffins
- you can make these muffins into 2 mini cheesecakes by using 4-inch springform pans
- you could triple this recipe to create a full-sized cheesecake but you will need to increase the baking time to 50-60 minutes. Make sure you use a water-bath if you make this into a full-sized cheesecake
- if you can't find sugar-free white chocolate chips, feel free to substitute with sugar-free chocolate chips for a chocolate version which is sure to taste just as delicious!
- not looking to make this recipe sugar-free or keto-friendly? Simply replace the ingredients with a direct 1:1 ratio with regular sugar ingredients

Ingredients
For the Sugar-Free Strawberry Jam:
- 2 cups strawberries, chopped
- ¼-½ cup sugar (I use Lakanto)
- 1 tbsp lemon juice (about the juice from 1 lemon)
- OPTIONAL - Chia seeds if mixture is too loose
*Not all the jam is necessary for these muffins. You will only need about ½ cup for the muffins*
For the Graham Cracker Crust:
- 5 tbsp butter, softened
- ½ cup coconut flour (or almond flour)
- 4 tbsp brown sugar (I use Lakanto Golden)
- 1 tbsp cinnamon
- 1 tbsp strawberry jam
For the Strawberry Cheesecake:
- 8 oz cream cheese, softened
- 6 oz 0% plain Greek Yogurt (I use Siggi's Icelandic)
- 3 oz white chocolate, melted (I use Bake Believe which is sugar-free)
- 1 tbsp coconut flour (or almond flour)
- 2 egg whites (about ¼ cup liquid egg whites)
- 1 tsp vanilla
Instructions
For the Strawberry Jam:
- Prepare the jam by placing the strawberries in a small saucepan.
- Add 2 tablespoon of water and 1 tablespoon of lemon juice
- Bring to a boil and then turn the heat to medium and let it simmer for around 15 minutes.
- Mash with a potato masher or blend the strawberries in a high-speed blender
- Taste the jam and if it is not sweet enough, add additional sweetener
- Remove the jam from the heat. Once cooled, place the jam in the fridge to firm
Making the Muffins
- Preheat the oven to 350 degrees F. Grease or line 12 muffin tins and set aside
- In a medium-size bowl, add all the crust ingredients and stir until combined. Press approximately 1 tablespoon of mixture into each muffin well to form the base. Set aside.
- In the same bowl, cream the cheesecake ingredients. Add 2 tablespoon of mixture to each well. Add 1-2 teaspoon of jam and then add another layer of cheesecake mixture to all the muffins.
- Top each muffin with 1-2 teaspoon of jam and using a chopstick or wooden skewer, swirl the strawberry jam into the cheesecake mixture.
- Place in the oven and bake for 20 minutes.
