Everyone in my office has recently been obsessing about the Girl Scout Cookies.
Whether it be Samoas, Thin Mints, Do-Si-Dos or any other of their popular flavours, it seems that everyone has a favourite.
What's my favourite?
Thin Mints....no, definitely the peanut butter flavoured Do-Si-Dos...actually maybe the chocolate coconut Samoas...
If you are like me, it is very hard to pick a favourite!
Having been disciplined and walking by the adorable little Girl Scout faces and politely saying "No Thank-you" as they ask if I would like to buy any of their cookies, I was very proud of how well I had resisted the temptations.
Until this Saturday!
Having a dream about eating the cookies on Friday night, I woke up with an absolute burning desire to eat some of these delectable treats.
Not knowing where to find these cookie-selling-munchkins, I decided to see if Google would be able to help.
Low and behold, I actually found out that you can track the location of the Girl Scouts by simply entering your zip code.
According to the website, cookies were being sold right under my nose, exactly 2 miles away!
I quickly got on my shoes and headed down to their location only to get there and to not find a Girl Scout anywhere in sight.
I checked Google again and realized that I was an entire day early!
Determined to get some Girl Scout Cookies, I started thinking that if they only sold the cookies in "dough" form, I could get cookies whenever I pleased.
And that's when the lightning struck!
Why not make edible, gluten-free and keto Girl Scout cookie dough?!!
After successfully completing the gluten-free and keto version of the Girl Scout Thin Mints, I set off to make a second flavour.
Asking Mr. Grumbles which was his favourite Girl Scout flavour, he quickly replied "Samoas".
And so a Keto Somoa Girl Scout Cookie Dough was the next flavour to create.
Who created the Girl Scouts and When?
According to Wikipedia, Girl Scouting in the United States of America began on March 12, 1912, when Juliette "Daisy" Gordon Low organized the first Girl Guide troop meeting of 18 girls in Savannah, Georgia.
It has since grown to 3.7 million members.
Low dreamed of giving the United States and the world "something for all the girls." She envisioned an organization that would bring girls out of their homes to serve their communities, experience the out-of-doors, and have the opportunity to develop "self-reliance and resourcefulness." From its inception, the Girl Scouts has been organized and run exclusively by women, for girls and women.
When did the Girl Scouts start selling cookies?
Girl Scout cookie sales started as early as 1917, five years after the Girl Scouts were founded. In the 1920s and 1930s, Scouts would bake their own sugar cookies and sell them door to door. In 1936, the Girl Scouts licensed the first commercial baker to start making Girl Scout cookies.
What are the Girl Scout Cookie Flavours?
- Lemon-Ups - tangy lemon-icing-topped shortbread cookies
- Thin Mints - mint-flavoured cookies with a delicious chocolaty coating
- Samoas - caramel and toasted coconut-covered cookies with a chocolate swirl
- Tagalongs - a layer of peanut butter with a rich chocolaty coating
- Do-si-dos - crisp and crunchy oatmeal on the outside and creamy peanut butter inside

Where did the name "Samoa" come from?
I searched high and low to try to find the origin of Samoa and did not find anything conclusive.
There are 2 different ideas on why the name "Samoa" was given to the 2nd most popular Girl Scout cookie (In case you haven't guessed, Thin Mint is the number one flavour.)
- Explanation #1 - Due to the coconut flavour of the cookie, some believe that the Samoa cookie is named after the Island of Samoa which is riddled with coconuts
- Explanation #2 - A less likely explanation is that the word "Samoa" sort of sounds like “some more,” as in, "Give me some more of those delicious coconut cookies".
What ingredients do you need to make the gluten-free and keto Samoa Girl Scout Cookie Dough?
- almond flour
- coconut oil
- almond milk
- sweetener (I use Lakanto Sugar)
- Lily's chocolate chips
- peanut butter
- maple syrup (I use Lakanto Maple Syrup which is sugar-free)
- toasted unsweetened coconut flakes
- salt, vanilla and caramel extract (optional)
How do you toast the shredded coconut for the Keto Samoa Girl Scout Cookie Dough?
On the Stove-top:
- Heat a small frying pan on medium heat.
- Once hot, turn the heat down to medium-low and add in coconut flakes
- Stir continuously until coconut begins to brown
In a toaster oven:
- Place coconut on a piece of aluminum foil
- Turn the toaster oven on for 30 seconds to 1 minute
- Once coconut begins to brown, remove from the toaster oven, stir and return it for an additional 30 seconds to a minute or until it is nice and golden
*Be very careful and make sure you watch the coconut carefully. Coconut is VERY dry and can burn quickly! (Trust me, I know as I put a coconut flour wrap in my toaster oven and set the toaster oven on fire!)
How do you make these Gluten-Free and Keto Samoa Girl Scout Cookie Dough?
- In a medium-size mixing bowl, combine the coconut oil and the sweetener
- Add in the vanilla, almond milk and salt and stir (don't worry if it does not fully mix together)
- Stir in the almond flour mix and toasted coconut flakes thoroughly and set aside
- In a small dish, melt the chocolate chips with a little coconut oil
- Swirl the chocolate throughout the cookie dough and set aside
- In a second small dish, melt the peanut butter with the maple syrup and stir in the caramel extract
- Swirl the "caramel" throughout the cookie dough
- Place the mixture in the fridge for 10-20 minutes or until it slightly hardens
- Shape into round bite-size pieces if desired
How do you store this Keto Samoa Cookie Dough
Since there is almond milk, the cookie dough needs to be stored in the fridge. It can be stored for 5 days. If it is too hard when you take it out of the fridge, simply place it in the microwave for 10 seconds or until it is the softness you desire.
You can also store these in the freezer for up to 3 months
What is the best way to enjoy this edible Keto Samoa Girl Scout Cookie Dough?
Both Mr. Grumbles and I enjoy the cookie dough slightly warmed in the microwave for about 10-20 seconds.
Can I use regular sugar instead of sweetener?
You can absolutely replace the sweetener with sugar in a direct 1:1 ratio. Taste the mixture and add any additional sugar if desired.
Do I have to add the Chocolate Swirl?
You can easily omit the swirl step and simply stir in the chocolate chips instead of melting them.
If you chose to do so, I suggest using smaller chocolate chips to make sure they get evenly distributed throughout the gluten-free and keto cookie dough.
Can I use store-bought Caramel instead?
Yes! I make a quick "cheater" caramel sauce by mixing the peanut butter with the maple syrup and adding the caramel extract but if you want, you can easily buy caramel sauce (usually found around the ice cream cones) at your local grocery store.

Samoa Girl Scout Cookie Dough - Gluten-free and Keto
All the delicious flavours of a Samoa Cookie without any gluten or added sugar. Easy to make, try these keto treats today!

Ingredients
- 1 cup almond flour
- 3 tbsp coconut oil
- 2 tbsp almond milk
- 3-4 tbsp sweetener (depending on how sweet you like your cookie dough)
- 2 tbsp unsweetened coconut, toasted
- pinch of salt
- dash of vanilla
- OPTIONAL - ⅛ teaspoon coconut extract
Chocolate Swirl
- 1 tsp coconut oil
- 1 tbsp chocolate chips (I use Lily's which are sugar-free)
Caramel Swirl
- 1 tbsp peanut butter
- 2 tsp maple syrup (I use Lakanto Maple Syrup)
- ⅛ tsp caramel extract
Instructions
- In a medium-size mixing bowl, combine the coconut oil and the sweetener
- Add in the vanilla, almond milk, salt and coconut extract (if using) and stir (don't worry if it does not fully mix together)
- Stir in the almond flour and toasted coconut flakes thoroughly and set aside

- Place the mixture in the fridge for 10-20 minutes or until it slightly hardens
- Shape into round bite-size pieces if desired
