What ingredients do you need to make these low carb and sugar-free Keto Fudgy Mocha brownies?

What is Oat Fibre?
Oat fibre is an insoluble fibre made from grinding the oat hull, which is the shell that surrounds the oat groat (or kernel).
Whole oat groats come from harvesting oats, washing them, and removing their hulls. The groat is the source of most oat products we use. But unlike rolled oats, steel-cut oats, and all those other celebrity oat siblings, oat fiber is actually made purely from the husk.
Oat fibre doesn’t have a lot to offer in the way of nutrients, as it’s pretty much non-digestible. But that’s just fine because it isn’t consumed in order to load up on vitamins and minerals — leave that job to blueberries and kale.
Oat fibre shines in other ways.
It can be an outstanding substitute for wheat flour if you’re looking to keep your tasty baked creations gluten-free or low-carb.
Try using it alone or in a homemade flour blend, working in tandem with coconut flour, almond flour, or flax meal. Plus, oat fibre is a superstar at absorbing liquids, so it can be outrageously helpful in keeping the texture of your baked goods moist and soft.
Where can you buy oat fibre?
- I buy my oat fibre from Vitacost and the brand I use is NuNaturals. It runs $4.79/lb and a little goes a long way so it lasts quite a long time.
- As you can see in this post, I am spelling "fiber" as well as "fibre". Fibre is the same word as fiber. The only difference between them is their spelling. Fiber is preferred in American spelling; fibre is the preferred spelling in British English. Since I have dual citizenship, I decided to pay tribute to both my nationalities!

What is Palm Shortening?
Palm shortening is made from palm oil, an oil derived from the tropical palm tree (which is different from the coconut palm).
Palm oil is actually the second most common cooking oil in the world, only bested by soybean oil, and is a shelf-stable oil with a high smoke point.
Palm shortening is palm oil with some of the unsaturated fats removed so that it is even more stable and has a thick, luxurious texture that is perfect for baking.
The purpose of palm shortening is to replace traditional shortening, which is ridden with trans fats from industrial processing.
The standard practice for harvesting palm trees for palm oil destroys tropical forests and habitats of endangered species, so it’s definitely an important concern!

What is Espresso Powder?
Espresso powder is not the same as instant coffee.
Espresso powder is made from darkly roasted coffee beans that have been ground, brewed, dried, and then ground to a very fine powder. It's much more concentrated than instant coffee, which means you only need a teaspoon or so in your chocolate recipe to do the trick.
For this recipe, I use anywhere between 1-2 teaspoon of espresso powder but feel free to adjust the amount depending on your taste preference.
What is the difference between cocoa powders?
Dutch Processed Cocoa Powder:
- To make Dutch-process cocoa, cocoa beans are soaked in an alkali solution, which neutralizes their acidity and reduces the bitterness
- the process was invented in 1828 by a Dutch chemist
- usually labelled as “processed with alkali” or “alkalized”
- typically produces a darker brown colour in baked goods
- because it is neutral, it does not react with baking soda and therefore often paired with baking powder (but not always!)
Natural Cocoa Powder:
- the completely natural state of the cocoa bean (no alkali solution is used)
- more acidic, bitter and a strong concentrated chocolate flavour
- because it is more acidic, it tends to be found in recipes that use baking soda which is a base
- the acid (natural cocoa powder) reacts with the base (baking soda) to allow for baked goods to rise
- most US and Canada brands (such as Hershey's) are Natural Cocoa Powder
For this recipe, I used Hershey's Unsweetened Cocoa Powder as it is the most common brand that most people should be able to find.
However, my absolutely FAVOURITE unsweetened cocoa powder is Droste. It is a Dutch-processed cocoa powder from Holland and although it is not cheap, it is absolutely the BEST cocoa powder I have yet to try. I buy the 3-pack from Amazon.

What type of sugar-free substitutes should you use in these Simple Keto Fudgy Mocha Brownies?
For these brownies, I used Allulose but I am sure that Bocha Sweet would work as well. Allulose and Bocha Sweet are the closest "relatives" to real sugar.
However, they are only about 70 % as sweet as most of the other sugar substitutes on the market so you will need to increase the amount of sweetener if you decide not to use Allulose.
I BEG you that if you are going to make these brownies to buy some allulose. It is an inexpensive sweetener and I can not guarantee the deliciousness of these brownies if you don't use it!

How do you make these AMAZINGLY Simple Keto Fudgy Mocha Brownies?
- In a medium-size bowl, beat together the eggs, palm oil shortening and allulose
- Add the remaining ingredients (except for the chocolate chips) and beat for 1 minute.
- Fold in the chocolate chips and spread the mixture in a foil-lined 8 x 8 dish that has been sprayed with cooking spray.
- Carefully pour about 1 tablespoon of water over the top of the brownies
- Bake for 15-20 minutes or until a toothpick comes out clean.
- Set aside and allow to cool completely before cutting.

Why do you drizzle water over the top of the brownies?
I found that when I added water to the top of the brownies I ended up with a perfectly gooey brownie with a deliciously gooey top.
In order to drizzle the water over the top, use a large spoon and pour the water into the spoon. Carefully tip the spoon and drizzle it over the top of the brownies.
Next, take the brownie pan and tilt it slightly to ensure that the water is distributed over most of the top of the brownies.

Tips, Tricks and Substitutions:
- The only substitution that I would suggest is to possibly replace the palm shortening with a combination of unsalted butter and coconut oil.
- IF yo substitute any other ingredients, I can not guarantee how they will turn out
- If you want thick brownies like the picture, bake them in a 9 x 5 loaf pan
- If you want you can double this recipe and use a 9 x 13 baking dish
- Remove the brownies from the oven when the center is just beginning to set (it should jiggle slightly)
- Make sure to allow the brownies to cool completely (at least 1 hour on the counter and an additional 1-2 hours in the fridge) to set
- Add more or remove the espresso powder depending on how "mocha" or non-mocha you want your brownies to taste
- for thicker brownies like in the pictures, use a 9 x 5 loaf pan and bake for 25-30 minutes
- to serve a large crowd, simply click on the "3x" button and bake these brownies in a 13 x 9 baking dish

These Simple Keto Fudgy Mocha Brownies are so easy to make. Ingredients
- 3 eggs
- 1 cup allulose (or bocha sweet)
- ½ cup oat fiber
- ¼ cup unsweetened cocoa powder
- 1-2 teaspoon espresso powder
- ¾ cup palm oil shortening
- 1 tsp vanilla extract
- ½ tsp baking powder
- ¼ tsp salt
- ¼ -½ cup sugar-free chocolate chips
- 1 tbsp water
Instructions
- Preheat the oven to 350 degrees F. Line an 8 x 8 baking pan with parchment paper or aluminum foil, leaving a ½ inch overhang (this will allow you to remove the brownies from the pan more easily)
- In a medium-size bowl, combine the eggs, palm shortening and sweetener and beat for 1 minute. Add in all remaining ingredients, including the chocolate chips and beat until fully combined.
- Spread the mixture in the pan and place it in the oven
- Bake for 15 minutes or until the middle of the brownies just begin to set. Allow the brownies to cool for 1 hour and then remove them from the pan, using the aluminum foil or parchment paper overhang. Place them on a wire rack to cool for an additional hour or place them in the fridge to cool completely before cutting
Notes
- do not try to cut these brownies while they are still hot - they will solidify once they cool
- for thicker brownies like in the pictures, use a 9 x 5 loaf pan and bake for 25-30 minutes
