I can not believe how the kitchen "fairies" were looking over my shoulder when I decided to attempt to make a low-carb, gluten-free version of hushpuppies.
By not adding any wheat or corn products, I ended up with the perfect blend of a delicious fried green tomato and a hushpuppy...what luck!
Now, technically speaking, they really aren't a true "Fried Green Tomato" nor or they truly a "hushpuppy". Officially, both of these authentic recipes call for high carb cornmeal as well as other gluten flour.

So, what exactly is a hushpuppy?
A hushpuppy is thick cornmeal-based batter, deep fried in small balls. Sometimes it's formed into a more oblong oval a la Cook Out, but the most prevalent shape is is the sphere.
Hushpuppy recipes should be relatively simple. They generally only require five main ingredients in the batter: cornmeal, flour, baking soda, an egg, and milk. Add whatever seasonings you choose and fry it up.
What is a fried green tomato?
Fried green tomatoes are a side dish usually found in the Southern United States, made from unripe (green) tomatoes coated with cornmeal and fried.
Traditional preparation of fried green tomatoes begins by cutting the tomatoes into approximately ¼-inch (~0.6 cm) slices.
They are then seasoned with salt and pepper, coated with plain, coarse cornmeal, and shallow fried in bacon fat for a few minutes each side, or until golden brown. Shallow frying is preferred, as the tomatoes do not float in the oil, which allows the weight of the tomato to press the cornmeal to the underside of the tomato.

So, since this recipe is keto and gluten-free, they can not officially be an authentic version of either one of these foods.
But boy...do they sure mimic both fried green tomatoes and hushpuppies so let's put the technicality asides and let's make this AMAZING dish!

What are green tomatoes?
Green tomatoes can be either one of two things...They are either unripe red tomatoes or a type of heirloom tomato that actually is green even when it has ripened.
Tomatoes that are green when ripe (real green tomatoes) often have vertical stripes or other variations in the colouring will feel soft when pressed and will taste much like a red tomato, possibly slightly sweet or spicy depending on the variety. Unripe (red) tomatoes will be pale green all over, feel nearly solid and will have a more acidic or tart flavor.
What can I use if I can not find any green tomatoes?
I simple substitution for green tomatoes is tomatillos.
Tomatillos are actually a Mexican pepper and not really a tomato. However, they are nice and dense, slightly tart and are the right colour.
Do NOT replace the green tomatoes with red tomatoes as red tomatoes will contain WAY TOO MUCH water and you will have to add so much coconut flour that you will not be able to taste the actually tomato flavour.

What type of whey protein powder can you use?
Any brand of whey protein powder will work. Definitely make sure that it is "plain" or "unflavoured" otherwise you will end up with a chocolate or vanilla taste which will NOT work:-)!
I LOVE Cabot Whey Protein powder which I buy from Amazon. It does not contain any added sugars which is also why I like it so much!
How do you make these Keto Fried Green Tomato Hushpuppies?
- Place all the hushpuppy ingredients in a food processor and pulse until combined.
- Heat the oil in a wok or other Dutch oven over medium heat until it reaches 350 degrees F.
- Drop 1-2 tbps of batter into the hot oil and fry for 3 minutes.
- Flip and fry for an additional 2 minutes or until golden brown.
- Transfer to a paper towel-lined plate and repeat with the remaining batter.

What shape should you make these hushpuppies?
You can make these hushpuppies into either round balls or flat disks.
Because I don't like to have an abundance of leftover oil, I tend you use a little as possible. Because of this, I tend to flatten out my hushpuppies so that I can just flip them once instead of rolling them around to fry every side.
However, feel free to shape them any way you like!
Can I use a different type of oil to fry these Keto Fried Green Tomato Hushpuppies?
I love using coconut oil as it can be heated to very high temperatures.
However, if you don't have coconut oil, you can replace it with any "high heat" oils.
The best oils for standing up to high heat during frying are avocado, peanut, canola, sunflower, and sesame oil. These oils have a high smoke point (400°F and higher), which means they are better suited for cooking at higher temperatures.

Simple ingredients and only a handful of minutes to prepare. The perfect weeknight low-carb dinner or side dish!
- Total Time: 16 minutes
- Yield: 12 1x
Ingredients
- 1 lb diced green tomatoes
- 1 tbsp hot sauce
- 6 green onions, diced
- 2 tsp garlic powder
- 2 eggs
- 3 tbsp butter, melted, unsalted
- ⅓ - ½ cup coconut flour (depending on consistency - see note)
- 1 tsp baking powder
- 1 tsp smoked paprika
- 1 tsp salt (or more if you like your food on the saltier side)
- ½ tsp xantham gum
- ¼ cup unflavoured whey protein isolate
For frying:
- ½ cup coconut oil (plus more depending on the type of dish you use)
For the Sauce:
- ¼ cup sugar-free hot honey
Instructions
- Place the green tomatoes and onions in the food processor and pulse until they have been broken down into small chunks.
- Place all the remaining hushpuppy ingredients in a food processor and pulse until combined. Heat the oil in a wok or other Dutch oven over medium heat until it reaches 350 degrees F. or just begins to boil.
- Drop 2 tablespoon of batter into the hot oil and fry for about 3 minutes. Flip and fry for an additional 2 minutes or until golden brown. Transfer to a paper towel-lined plate and repeat with the remaining batter.
Notes
- I like to use a Wok pan to fry so I do not have to add as much oil as other types of cookware. If you use a different type of pan, add enough oil to the pan so that there is about ½ inch of oil on the bottom.
- Depending on the size of your pan, you may be able to do all the hushpuppies at once - Since I use a wok, I can only do 4 hushpuppies at a time.
- Feel free to sprinkle the hushpuppies with additional salt after they have fried
- Start with ⅓ cup of coconut flour and add additional coconut flour until the mixture is soft but can be formed into a patty.
- I use an ice cream scoop or cookie dough scoop to measure out the batter
