Everyone in my office has recently been obsessing about the Girl Scout Cookies.
Whether it be Samoas, Thin Mints, Do-Si-Dos or any other of their popular flavours, it seems that everyone has a favourite.
What's my favourite?
Thin Mints....no, definitely the peanut butter flavoured Do-Si-Dos...actually maybe the chocolate coconut Samoas...
If you are like me, it is very hard to pick a favourite!
Having been disciplined and walking by the adorable little Girl Scout faces and politely saying "No Thank-you" as they ask if I would like to buy any of their cookies, I was very proud of how well I had resisted the temptations.
Until this Saturday!
Having a dream about eating the cookies on Friday night, I woke up with an absolute burning desire to eat some of these delectable treats.
Not knowing where to find these cookie-selling-munchkins, I decided to see if Google would be able to help.
Low and behold, I actually found out that you can track the location of the Girl Scouts by simply entering your zip code.
According to the website, cookies were being sold right under my nose, exactly 2 miles away!
I quickly got on my shoes and headed down to their location only to get there and to not find a Girl Scout anywhere in sight.
I checked Google again and realized that I was an entire day early!
Determined to get some Girl Scout Cookies, I started thinking that if they only sold the cookies in "dough" form, I could get cookies whenever I pleased.
And that's when the lightning struck!
Why not make edible, gluten-free and keto Girl Scout cookie dough?!!
After successfully completing a gluten-free and keto version of Mr. Grumbles's favourites, Thin Mints, Samoa AND the Tagalong flavours, I decided it was high time for me to create my favourite flavour...Do-Si-Dos!
Seriously, what can possibly beat a crunchy oatmeal type cookie with a creamy peanut butter filling?!!
Who created the Girl Scouts and When?
According to Wikipedia, Girl Scouting in the United States of America began on March 12, 1912, when Juliette "Daisy" Gordon Low organized the first Girl Guide troop meeting of 18 girls in Savannah, Georgia.
It has since grown to 3.7 million members.
Low dreamed of giving the United States and the world "something for all the girls." She envisioned an organization that would bring girls out of their homes to serve their communities, experience the out-of-doors, and have the opportunity to develop "self-reliance and resourcefulness." From its inception, the Girl Scouts has been organized and run exclusively by women, for girls and women.
When did the Girl Scouts start selling cookies?
Girl Scout cookie sales started as early as 1917, five years after the Girl Scouts were founded. In the 1920s and 1930s, Scouts would bake their own sugar cookies and sell them door to door. In 1936, the Girl Scouts licensed the first commercial baker to start making Girl Scout cookies.

What are the ingredients in the ORIGINAL Do-Si-Do Girl Scout cookie?
- flour
- sugar
- whole grain oats
- vegetable oil
- peanut butter
- dextrose
- cornstarch
- soy lecithin
So, with this list in hand, I decided to create a gluten-free, keto and absolutely delicious edible version!
What ingredients do you need to make the gluten-free and keto edible Do-Si-Do Cookie Dough?
- almond flour
- coconut oil
- almond milk
- sweetener (I use Lakanto Sugar)
- peanut butter
- maple syrup (I use Lakanto Maple Syrup which is sugar-free)
- peanuts (or another type of nut)
- salt, vanilla and cinnamon
How do you create the gluten-free and keto "oatmeal" flavour and texture necessary for this cookie?
Believe it or not, simply grinding up some nuts will create the "oatmeal" texture needed. Then, by adding a little cinnamon, the "oatmeal" flavour was created.
How do you make the peanut butter swirl for this Keto Do-Si-Do Girl Scout Cookie Dough?
For the Peanut Butter Swirl:
- In a small bowl, add peanut butter and sugr-free maple syrup
- Heat in the microwave for 20 seconds or until peanut butter has melted
- Stir and set aside
How do you make this Gluten-Free and edible Keto Do-Si-Do peanut butter Girl Scout Cookie Dough?
- Place the nuts in a ziplock bag. Seal the bad and using the back of a spoon (or a meat mallet) crush the nuts until they are broken down to a coarse texture. Set the nuts aside.
- In a medium-size mixing bowl, combine the coconut oil and the sweetener
- Add in the vanilla, almond milk and salt and stir (don't worry if it does not fully mix together)
- Stir in the almond flour and the crushed nuts
- In another small dish, melt the peanut butter with the sugar-free maple syrup in the microwave for about 20 seconds and stir
- Swirl the peanut butter throughout the cookie dough.
- Place the mixture in the fridge for 10-20 minutes or until it slightly hardens
- Shape into round bite-size pieces if desired
How do you store this edible Do-Si-Do Cookie Dough?
Since there is almond milk, the cookie dough needs to be stored in the fridge. It can be stored for 5 days. If it is too hard when you take it out of the fridge, simply place it in the microwave for 10 seconds or until it is the softness you desire.
You can also store these in the freezer for up to 3 months
Can I use regular sugar instead of sweetener?
You can absolutely replace the sweetener with sugar in a direct 1:1 ratio. Taste the mixture and add any additional sugar if desired.
What can I use instead of coconut oil?
You can easily replace the coconut oil in a 1:1 ratio with the following
- melted unsalted butter
- additional peanut butter
- avocado oil
- palm oil or shortening
How can I make these higher in fat?
Depending on your macro needs, you can always increase the fat percentage by replacing the almond milk with additional sources of fat such as butter, peanut butter or more coconut oil

Keto Do-Si-Do Girl Scout Cookie Dough
Creamy and crunchy, this edible peanut butter Keto Do-Si-Do Girl Scout Cookie Dough is for all my peanut butter addicts
- Total Time: 4 minutes
- Yield: 16 bites 1x
Ingredients
- ¾ cup almond flour
- ⅓ cup chopped peanuts (or other nuts)
- 2 tbsp peanut butter
- 2 tbsp coconut oil
- 2 tbsp milk
- 2 - 3 tablespoon granular sweetener (depending on how sweet your peanut butter is as well as how sweet you like your cookie dough)
- dash vanilla extract
- pinch of salt
For the Peanut Butter Swirl
- 1 tbsp peanut butter
- 1 tsp maple syrup (I use Lakanto Sugar-Free Maple Syrup)
Instructions
- Place the nuts in a ziplock bag. Seal the bad and using the back of a spoon (or a meat mallet) crush the nuts until they are broken down to a coarse texture. Set the nuts aside.
- Prepare peanut butter swirl by melting the peanut butter with the syrup in the microwave for 20 seconds. Stir and set it aside.
- In a medium-size mixing bowl, combine the coconut oil and the sweetener
- Add in the vanilla, almond milk and salt and stir (don't worry if it does not fully mix together)
- Stir in the almond flour and the crushed nuts
- Swirl the peanut butter throughout the cookie dough.
- Place the mixture in the fridge for 10-20 minutes or until it slightly hardens
- Shape into round bite-size pieces if desired
