The other day when we were walking around Costco, Mr. Grumbles and I stumbled upon a bag of Super Seed Coconut Clusters by Innofoods Inc.
As Mr. Grumbles, being a coconut-lover, quickly grabbed the bag and placed it in the cart.
I, on the other hand, quickly grabbed the bags and took them out of the cart.
Why do you ask?
Well, they are downright expensive!
If you look them up on amazon, an 18 oz bag of these Coconut Clusters is about $18!! That's about $1 for 1 oz!!!
I quickly scanned the bag and declared "I can easily make these at home...And I can make them into a Keto version for a lot cheaper!"
Of course, Mr. Grumbles gave me a skeptic look and that was all it took for me to be determined to make these coconut clusters at home!

As you can see, the nutritional profile is comparable in total calories and protein. However, when it comes to the amount of sugar, my Super Seed Keto Copycat Coconut Clusters have under 1 g of sugar whereas the storebought Coconut Clusters have 7 g of sugar!
What ingredients do you need to make these Super Seed Keto Copycat Coconut Clusters?
- unsweetened coconut flakes
- sprouted (or raw) pumpkin seeds
- raw unsalted sunflower seeds
- chia seeds
- coconut oil
- sweetener
- OPTIONAL - maple extract, coconut extract, vanilla, etc...
How do you make these easy Super Seed Keto Copycat Coconut Clusters?
- Preheat the oven to 350 degrees F.
- Prepare a 8 x 8, 9 x 9 or any other size rectangular or circular size pan by lining it with parchment paper
- Add all the coconut, seeds and salt to a medium-size mixing bowl and stir to combine the ingredients
- Pour coconut oil over the dry ingredients and stir it well so that the coconut oil covers all the dry ingredients.
- If using, add in additional extract flavourings such as vanilla or maple
- Add the sweetener to the bowl and stir to make sure that the sweetener is covering all the sides of the coconut and the seed
- Pour the mixture into the baking dish and press down slightly
- Bake for 8-10 minutes or until the coconut begins to brown.
- Remove from the oven and using spatula or turner, press down on the mixture
- Let cool completely
- Once cooled, place it in the fridge or freezer to cool even further before breaking it into pieces
What can I substitute some of the ingredients with?
- use any type of seed or nut in equal amounts
- use flax or hemp seeds instead of chia seeds
- use butter instead of coconut oil
- use regular sugar instead of sweetener
- use maple extract or maple syrup instead of the vanilla extract
Tips and Tricks for making these Keto Copycat Coconut Clusters:
- don't use a pan that is too large as the clusters will spread apart too much and will not be able to be broken down into chunks (if this does happen, just eat it as granola!)
- I have only tried this recipe with raw seeds and am unsure of how they would turn out if you use roasted seeds but I think they should turn out just fine (if you make them with roasted seeds, let me know how they turn out!)
- If you use salted seeds, omit any additional salt
- Make sure you press the mixture down AFTER it comes out of the oven to make sure that the ingredients bind well together
- You can always use aluminum foil to cover the pan. Make the foil double the size of the pan and when the coconut clusters come out, fold the foil over the top of the clusters. Use a spatula and press the mixture down firmly. Flip the aluminum foil packet to allow for any leftover coconut oil to not pool a little on the bottom of the clusters.
- I have only made this recipe using Lakanto Classic sweetener. I think other erythritol based sweeteners should work as well as regular sugar
- Store these coconut clusters in the fridge for up to 14 days or in the freezer for up to 3 months. Since they contain coconut oil that will liquefy at room temperature, I do not suggest keeping them on the counter.
- If you try to use coconut flakes instead of coconut chips, they may crumble more - to prevent this, allow the coconut clusters to cool completely and place them in the freezer for about 30 minutes before trying to break them into chunks

I am not sure as allulose causes baked goods to brown quickly. Also, erythritol firms when it cools and I do not believe the same thing will happen with a monk fruit allulose. Worse case if you decided to try it with your sweetener and they don't hold together, you will simply end up with a delicious granola! Keep me posted if you do try your sweetener blend!

Omg this is TOO good! I tasted the Costco stuff and it was delicious but I'm cheap so I was like, I bet someone already has a copycat recipe! Thank you so much! My new fav snack! I sprinkled some in my chia pudding along with a little bit of chopped strawberries! So delicious! Thought I hit a treasure trove of keto resources but everything I've tried from your site leaves a lot to be desired. Keto coconut clusters were nothing like innofoods and frankly was gross. I'll stick to the Innofoods when I'm feeling generous with my carbs.

They are great so try making this recipe so you can customize how sweet you make them! Decrease the sweetener by about 1 tbsp for a less sweet version.

When I first posted this recipe last year, Costco only carried the Super Seed Coconut Clusters. This recipe is based on the original Super Seed variety. However, since then, Costco now carries a "Keto" version which does contain nuts. I went ahead and updated my post to reflect that this recipe is a copycat version of the "Super Seed Coconut Clusters" from Innofoods and NOT the "Keto Coconut Clusters". If only I had known that they were going to make a "keto" version, I would have definitely chosen a different post title!:-) Sorry for the confusion!

I do not understand how these can be called "copy cat" when Costco's Keto Coconut Cluster product has Almonds and Pecans and this recipe has neither. No nuts at all actually which is why the cost can be reduced so much, most expensive items left out.

Made these today. I added an egg white and scooped it onto a baking sheet like cookies. I squeezed the mixture into the cookie scoop and flattend on the baking sheet. I flattened again on the baking sheet halfway through the baking. I baked 5 minutes longer. I did notice quite a bit of pooling from the coconut oil. I brushed the excell oil onto the cookies. I think next time I will add a tablespoon of coconut flour to absorb some of that oil. I ended up with 13 cookies, with a crispy and chewy texture.

Hiya, so I admit I'm one of those people that follow recipes as a "general suggestion" lol. To answer your question, I prolly used about double the amounts (added black/white sesame seeds, almonds, walnuts) and halved the Monk fruit/erythritol sweetener. I mixed the vanilla extract and TWO egg whites together. After coating the mixture with coconut oil, I then added the egg whites/vanilla, and lastly the sweetener. Hope that helped! xoxo

Awesome, just like my favorites at Costco for much less! The first time there was a little too much coconut oil on the bottom. The second time I cut back on the oil and added some chopped almonds.

You can probably use less coconut oil and add some Sugar-free maple syrup instead. I use Lakanto Maple Syrup. Also, you could use egg whites instead of coconut oil. Let me know how they turn out!

Hi Cat, thank you so much for the recipe. I now make coconut clusters at least twice a week as they do not last very long in my house lol! I make the coconut "smiles" from scratch using fresh coconut (using a vegetable peeler and toasting in oven on lowest temp possible). I also watched some YouTube videos on keto granola where egg whites were used to help bind the nuts together. I tried this with your recipe and I'm happy to report that it helps to bind the clusters together and this way, they can be left out on the counter without having to be stored in the fridge. They also end up being crispier! So glad I found your site, keep up the good work!

I have not tried toasted coconut chips. They may work except that they have already been "toasted" once so watch them closely as they will probably brown/burn quicker than raw coconut chips.

Very good. I added sliced almonds and chopped pecans. Used an 8x8 glass Pyrex. Pressed down 1/2 way through cooking and again when I took them out. Placed them outside to cool where it was 36* today. Cut into small squares and they are sticking together nicely. Used Lankanto granulated monk fruit sweetener and these are a little too sweet. Will cut in 1/2 next time. Thank you!

I just re-made these and tried using coconut flakes instead of chips and they do not work as well. The coconut flakes absorb the coconut oil, whereas the coconut chips do not. The only way they will work is if you put them in the freezer and keep them in the freezer. You can buy coconut chips on Amazon. If you end up with too many crumbs, place them in a bowl and eat them with some milk for breakfast.

Hi Cat, like another post we absolutely love the flavor. Like her I used flakes as I could not find the larger shape chips. I used a smaller lined Pyrex so they would pack in tight. I pressed them after and put them in the fridge after cooling on the counter. We got some chunks, but the quickly dissolve into crumbs. Great flavor but I’d love it if they stuck together in clumps. Ideas?

Did you use the right size pan? All the ingredients need to be touching so try a smaller pan next time. As for the "crumbs", you can pour some almond milk over them and it them like cereal or granola!
