Everyone in my office has recently been obsessing about the Girl Scout Cookies.
Whether it be Samoas, Thin Mints, Do-Si-Dos or any other of their popular flavours, it seems that everyone has a favourite.
What's my favourite?
Thin Mints....no, definitely the peanut butter flavoured Do-Si-Dos...actually maybe the chocolate coconut Samoas...
If you are like me, it is very hard to pick a favourite!
Having been disciplined and walking by the adorable little Girl Scout faces and politely saying "No Thank-you" as they ask if I would like to buy any of their cookies, I was very proud of how well I had resisted the temptations.
Until this Saturday!
Having dreamt about eating the cookies on Friday night, I woke up with an absolute burning desire to eat some of these delectable treats.
Not knowing where to find these cookie-selling-munchkins, I decided to see if Google would be able to help.
Low and behold, I actually found out that you can track the location of the Girl Scouts by simply entering your zip code.
According to the website, cookies were being sold right under my nose, exactly 2 miles away!
I quickly got on my shoes and headed down to their location only to get there and to not find a Girl Scout anywhere in sight.
I checked Google again and realized that I was an entire day early!
Determined to get some Girl Scout Cookies, I started thinking that if they only sold the cookies in "dough" form, I could get cookies whenever I pleased.
And that's when the lightning struck!
Why not make edible, gluten-free and keto Girl Scout cookie dough?!!
After successfully completing the gluten-free and keto version of the Girl Scout Thin Mints, Samoas, Do-Si-So and Tagalongs, I set off to make a 5th flavour, Caramel Chocolate Chip cookie dough.
Who created the Girl Scouts and When?
According to Wikipedia, Girl Scouting in the United States of America began on March 12, 1912, when Juliette "Daisy" Gordon Low organized the first Girl Guide troop meeting of 18 girls in Savannah, Georgia.
It has since grown to 3.7 million members.
Low dreamed of giving the United States and the world "something for all the girls." She envisioned an organization that would bring girls out of their homes to serve their communities, experience the out-of-doors, and have the opportunity to develop "self-reliance and resourcefulness." From its inception, the Girl Scouts has been organized and run exclusively by women, for girls and women.
When did the Girl Scouts start selling cookies?
Girl Scout cookie sales started as early as 1917, five years after the Girl Scouts were founded. In the 1920s and 1930s, Scouts would bake their own sugar cookies and sell them door to door. In 1936, the Girl Scouts licensed the first commercial baker to start making Girl Scout cookies.

What ingredients do you need to make this Edible Keto Caramel Chocolate Chip Cookie Dough?
- almond flour
- coconut oil
- almond milk
- sweetener (I use Lakanto Sugar)
- peanut butter
- maple syrup (I use Lakanto Maple Syrup)
- caramel extract
- chocolate chips (I use Lily's which are sugar-free)
- salt and vanilla
How do you make the caramel ribbons for this Edible Keto Caramel Cookie Dough?
For the Caramel Swirl:
- In a small bowl, add peanut butter and maple syrup
- Heat in the microwave for 20 seconds or until peanut butter has melted
- Add in a dash of caramel extract
- Stir and set aside
How do you make this Gluten-Free Edible Keto Caramel Chocolate Chip Cookie Dough?
- In a medium-size mixing bowl, combine the coconut oil and the sweetener
- Add in the vanilla, almond milk and salt and stir (don't worry if it does not fully mix together)
- Stir in the almond flour
- In a small dish, melt the peanut butter with the maple syrup and microwave for 20 seconds or until the peanut butter has melted
- Stir in the caramel extract
- Swirl the peanut butter throughout the cookie dough
- Place the mixture in the fridge for 10-20 minutes or until it slightly hardens
- Shape into round bite-size pieces if desired
How do you store this Edible Caramel Chocolate Chip Cookie Dough
Since there is almond milk, the cookie dough needs to be stored in the fridge. It can be stored for 5 days. If it is too hard when you take it out of the fridge, simply place it in the microwave for 10 seconds or until it is the softness you desire.
You can also store these in the freezer for up to 3 months
Can I use regular sugar instead of sweetener?
You can absolutely replace the sweetener with sugar in a direct 1:1 ratio. Taste the mixture and add any additional sugar if desired.
You can also use regular maple syrup as well as chocolate chips.
Can I use regular all-purpose flour?
You can use all-purpose flour to make this cookie dough but since all-purpose flour can contain E. Coli, you first need to bake it on a sheet pan at 350 degrees for about 5-7 minutes

Edible Keto Caramel Chocolate Chip Girl Scout Cookie Dough
This Edible Keto Caramel Chocolate Chip Cookie Dough is my 5th Girl Scout cookie that I have made into a deliciously creamy gluten-free and sugar-free edible cookie dough

Ingredients
- 1 cup almond flour
- 3 tbsp coconut oil
- 2 tbsp almonld milk
- 2-4 tablespoon Lakanto Golden (or brown sugar - start with 2 tbsp and add additional tbps depending on how sweet you like your cookie dough)
- 1-2 tablespoon Lily's chocolate chips
- pinch of salt
- dash of vanilla
For the Caramel Swirl
- 1 tbsp peanut butter
- 2 tsp Lakanto maple syrup
- ⅛ tsp caramel extract
Instructions
- In a medium-size mixing bowl, combine the coconut oil and the sweetener
- Add in the vanilla, almond milk and salt and stir (don't worry if it does not fully mix together)
- Stir in the almond flour
- In a small dish, melt the peanut butter with the maple syrup and microwave for 20 seconds or until the peanut butter has melted
- Stir in the caramel extract
- Swirl the peanut butter throughout the cookie dough
- Place the mixture in the fridge for 10-20 minutes or until it slightly hardens
- Shape into round bite-size pieces if desired
Notes
- store bites in the fridge or freezer
- we enjoy these bites slightly heated in the microwave for about 10 seconds
- start with 2 tablespoon of sugar and add additional sugar depending on how sweet you like you cookie dough
- you can replace the peanut butter with regular butter
