This Healthy Gluten-Free Instant Pot Banana Bread (or oven-baked gluten-free banana bread) was so moist that I almost called it Banana Bread Pudding! So deliciously moist that you would think that the banana bread would contain copious amounts of oil, right? Wrong! This healthy Gluten-Free Banana Bread contains no oil whatsoever! Bananas, greek yogurt, eggs, oats and almond flour come together to make this banana bread the best banana bread ever!
I swear to you guys that I was so shocked at how easy and AMAZING this healthy gluten-free banana bread turned out.
The first time I made this Super Moist and Healthy Banana Bread in my Ninja Foodi All-In-One using the pressure cooking setting.
When I turn the bundt pan over, I couldn't believe my eyes. I poked at the bread several times since it looked to moist to possibly be cooked.
But it was!
Moist and Healthy Gluten-Free Banana Bread? Was it actually possible?
Since I was too doubtful to believe that this was not one of my kitchen fairies tricks, I quickly ran to the store to by more bananas.
If I could reproduce the same moistness in the oven, then I knew that this recipe would be one that all my readers could enjoy.
And it was!
So, what's the secret to creating the Healthy Moist Gluten-Free Banana Bread?
Caramelizing the bananas first in a skillet!
Seriously, by allowing heat to breakdown the sugars in the bananas, a gooey delicious gluten-free banana bread, in the oven or in an Instant Pot, is absolutely possible.
What ingredients do you need to make this Healthy Gluten-Free Banana Bread?
- ripe bananas
- eggs
- almond flour
- oats
- greek yogurt (or sour cream or ricotta)
- maple syrup (I use Lakanto Maple Syrup)
- brown sugar (I use Lakanto Golden Sugar)
- cinnamon, salt, vanilla, baking soda, vinegar
How do you caramelize the bananas?
- take a non-stick skillet and heat it on medium-high heat
- add the bananas to the skillet
- stir and mash the bananas every so often
- after about 5 minutes, the bananas will start to form bubbles
- remove the bananas from the heat and let sit until they have slightly cooled
How do you make Oat Flour?
Oat flour is simply quick-cooking oats that have been ground down to a flour type consistency. To make this flour, simply place 1 cup of the oats in a high-speed blender and blend for 30 seconds.
You can also buy oat flour but it is much more expensive them making your own!
How do you make Healthy Gluten-Free Banana Bread?
- caramelize the bananas
- beat the greek yogurt (or sour cream or ricotta) with the maple syrup
- add the caramelized bananas and eggs and beat until incorporated
- add in remaining ingredients (except for vinegar and baking soda) and combine
- add in vinegar and baking soda, stir and pour the mixture into the baking dish
- bake for 60 minutes or until a toothpick comes out clean
How do you bake this moist banana bread in an Instant Pot or Pressure Cooker?
- grease a bundt pan (or any other pan that fits in your pressure cooker)
- add 1 cup of water to the Instant Pot dish
- pour your gluten-free banana bread mixture into the greased pan and cover it tightly with aluminum foil
- place the pan in the pressure cooker and seal the vent
- turn the pressure cooker on "hi" and set the timer for 60 minutes
- allow the pressure to be released naturally
- once pressure has been released, carefully remove the banana bread - BE CAREFUL AS THE DISH WIILL BE HOT
- allow the banana bread to cool for 10 minutes before inverting
How do you cook this healthy banana bread in the oven?
- preheat the oven to 350 degrees F. Grease a 9 x 5 loaf pan with cooking spray
- prepare the gluten-free banana bread filling
- pour filling into the loaf pan
- bake for 60 minutes or until a toothpick comes out clean
- let cool completely before inverting the banana bread
Why is this Moist Banana Bread considered healthy?
- it does not contain any gluten
- it has much less sugar than regular banana bread (if you use the ingredients listed)
- it does not contain any oil
- 1 slice contains only 156 calories and 5.6 grams of sugar
- if on Weight Watchers, it is only 2 Blue Points, 1 Purple Smart Point and 3 Green Smart Points
Tips and Substitutions
- Almond Flour - although I have not tried it yet, I am pretty sure you could replace the almond flour with oats or coconut flour for a nut-free version. If you are only using oats, you will need to increase the number of oats to a total of 2.5 cups total. If using coconut flour, use only ½ cup of coconut flour with the 1.5 cups of oats.
- Greek Yogurt - you can replace this with sour cream or ricotta cheese. Both full fat and fat-free versions work.
- Sugar-Free Maple Syrup - any maple syrup will work
- Sugar-Free Brown Sugar - use coconut sugar for a Paleo option or regular brown sugar
- You can also add some nuts, coconut flakes, chocolate chips, peanut butter chips or white chocolate chips to the batter
- Feel free to dust the banana bread with powdered sugar or add a little Cream Cheese Frosting to the top
- Add the baking soda and vinegar only at the very end of the recipe. The reaction between the two ingredients creates air bubbles which help to make the gluten-free banana bread rise.
- If your banana bread is starting to brown too quickly in the oven, simply cover the top with aluminum foil

Moist Healthy Instant Pot or Oven-Baked Gluten-Free Banana Bread
Using an Instant Pot or Pressure Cooker to make this Banana Bread was so easy. Delicious and moist, this gluten-free and oil free banana bread is weight watchers friendly as well. Easy and super moist!
- Total Time: 1 hours 10 minutes
- Yield: 10-12 servings 1x
Ingredients
- 4 medium over-ripened bananas
- 1 cup 0% Plain Greek Yogurt
- ½ cup Lakanto Maple Syrup
- 2 eggs
- 1.5 cups quick cooking oats (divided)
- 1 cup almond flour
- 2 tbsp Lakanto Brown Sugar
- 1 tbsp cinnamon
- 1 tsp vanilla
- ½ tsp salt
- 1 tbps baking powder
- 1 tbsp vinegar
Instructions
Instant Pot or Pressure Cooker Method
- Grease a metal bundt pan (make sure it fits in your instant pot!) and set aside. Add 1 cup of water to the pressure cooker.
- Heat a non-stick skillet on medium-high heat. Add bananas. Stir and mash the bananas for 5-8 minutes or until bananas mixture starts to bubble. Remove from heat and let cool slightly.
- In a high-speed blender, add 1 cup of oats and process until the oats become powder. Set aside.
- In a medium size mixing bowl, beat maple syrup and greek yogurt on high speed until incorporated. Add in slightly cooled bananas and continue to beat for 1 minute.
- Add in remaining ingredients EXCEPT for baking powder and vinegar. Beat for 1 minute.
- Lastly, add baking powder and vinegar. Stir to incoporate
- Pour mixture into bundt pan, cover top with foil and place in pressure cooker.
- Seal the vent and place pressure cooker on high for 60 minutes.
- Allow pressure to be released naturally, remove banana bread and let cool for 10 minutes before inverting
Oven Method
- Preheat oven to 350 degrees F. Grease a 9 x 5 loaf pan and set aside.
- Follow steps 2-6
- Pour mixture into loaf pan and bake for 60 minutes. If top begins to brown, cover with foil.

I know it sounds crazy but it does take that long to bake the banana bread. This recipe doesn't make making banana bread any faster but it ABSOLUTELY keeps it deliciously moist. I would replace the oats with the exact same amount of oat flour. As for the maple syrup, I would replace it with the same amount of honey or use about 1/4 - 1/3 cup of brown sugar for the 1/2 cup of maple syrup. I have not tried this conversion so let me know how it turns out!
