This quick and delicious Microwave Caramel Sauce recipe is a no brainer.
Making it homemade is infinity times better than a store-bought sauce, doesn't contain any weird chemicals, and this recipe takes literally 10 minutes, which means I can make it all day every day.
You know I love my caramel.
So, far, I have made Keto Caramel Apple Cookie Cups for the holidays, Chocolate Caramel Crunch Cheesecake (Gluten-Free, Keto) when I have a craving, and of COURSE White Chocolate Peanut Caramel Cups - Keto to name a few favourites, but this recipe might be my most favourite…probably because it’s done in just minutes and seriously can be eaten with a spoon.

What I love about this Keto Microwave Caramel Sauce
- Traditional caramel sauce requires candy thermometers but this recipe does not require one
- It does not contain any chemicals like store-bought caramel sauce
- It does NOT solidify in the fridge so you can literally pour it on ANYTHING without having to heat it first
- There is no granular texture
- It takes under 10 minutes to make
- It only requires basic ingredients
- IT TASTES ABSOLUTELY DIVINE!!!
What Ingredients Do You Will Need to Make this Easy Keto Microwave Caramel Sauce:
- Heavy Cream: This is the base for the sauce, and heavy cream makes the sauce rich and silky.
- Vanilla: Use Pure Vanilla extract in this recipe. The vanilla really shines through!
- Butter: I use unsalted butter in this recipe because I prefer to add it to suit my tastes
- Allulose: this sugar substitute does not become granular when it cools which keeps this caramel silky smooth
- Salt: You can use kosher or sea salt in this recipe to make it a Salted Caramel Sauce, which I highly recommend. Use as much or as little as you like, but make sure you stir it in enough so it all dissolves and doesn’t settle to the bottom.
- Baking Soda: The purpose of baking soda in the caramel is to react with the acid, which creates tiny carbon dioxide air bubbles. Once the caramel has cooled, the air bubbles inside the caramel create a softer texture.
How do you make this caramel sauce in the microwave?
- melt your butter and add in the allulose and cream - make sure you use a VERY large bowl because it will bubble up in the microwave!
- Whisk the mixture until it’s combined and then pop it in the microwave for a 2 minutes
- Remove from the microwave and whisk the ingredients
- Return the bowl to the microwave for an additional 4 minutes
- Whisk it again and return it to the microwave for an additional 2 minutes
- Carefully (the bowl will be hot) remove it from the microwave and add the salt, vanilla and baking soda - the mixture will bubble profusely so be careful!!!
- Add additional salt to make it homemade SALTED caramel sauce and make sure you stir the salt in enough for it to dissolve.
Storing Keto Caramel Sauce?
You can store this caramel sauce in the fridge in an airtight container for up to 1 week.
If you want to store it longer, you can freeze it for up to 3 months. I like to store it in smaller containers so I can just grab a container and place it in the fridge to thaw.
Tips and Tricks
- The caramel will seem a bit thin at first. Just keep whisking it and it will thicken as it cools. You can always reheat it for a few seconds if it gets too thick.
- IF the caramel seems to thin, return it to the microwave for an additional 1-2 minutes
- Make sure you use a VERY large bowl as the mixture will bubble up the sides
- Be prepared for the caramel sauce to bubble profusely when you whisk it after it has been heated and after you add the baking soda
- Feel free to replace any of the sugar-substitute ingredients with real sugar
- Adding in the baking soda (NOT baking powder) will help to create the deep rich caramel colour
- If you want SUPER thick caramel sauce, add an additional 2-4 minutes to the microwave time

Keto Caramel Sauce that is made in the microwave in under 10 minutes! Simple ingredients and no candy thermometer needed!!!

- Yield: 2 cups 1x
Ingredients
- ½ cup unsalted butter, melted (1 stick or 112 g)
- ½ cup allulose
- 1 cup heavy cream
- 1 tsp kosher salt
- 1 tsp vanilla
- ¼ tsp baking soda
Instructions
- In a 8-10 cup microwave-safe glass bowl (or larger) combine melted butter, allulose and heavy cream, whisking until blended and there are no lumps. Heat mixture in microwave on high for 2 minutes and remove to stir. Return to microwave and heat for 4 more minutes. Whisk, being careful as the mixture will bubble profusely, and return to the microwave for 2 more minutes.
- Stir in salt, vanilla and baking soda and stir to incorporate (be CAREFUL as the mixture will bubble violently once againg) and allow the caramel to cool until warm, not hot. The mixture will thicken as it cools.
- Serve warm or store in the fridge or freezer for later.
