It turns out that when I was a tiny wee little thing, spinach soufflé was one of my favourite dishes.
I recently asked my Mum for the recipe and after making it, I decided that although it was delicious, I felt like it was missing a "little something".
Also, since I like to do most of my cooking on Saturday and Sunday in order to have some leftovers for the beginning of the week, I decided to transform my childhood spinach soufflé into a quick and easy casserole.
Since then, I have made my Spinach Sausage Ricotta Casserole about once a month and I always have my Make-ahead Chocolate Souffle in the freezer ready to be baked!
So, having some leftover ham needing to be used up, I decided to add a twist and create the most delicious Leftover Ham Casserole dish you will ever eat!
So, go buy yourself a ham and either make my Easy Keto Ham in an Air Fryer Maple Glaze or my Maple Bourbon Injected Ham - Easy and Delicious so you can have some leftovers for this super tasty casserole!

What ingredients do you need to make this keto Spinach Sausage Ricotta Casserole?

- Smoked paprika, garlic, salt and pepper (or other types of seasoning)
- shredded cheese (I used Gouda)

What is Ricotta Cheese?
Old-fashioned ricotta is made by taking the curds leftover from cheese production (traditionally parmesan), adding acid to them, then heating them until whatever proteins are leftover coagulate.
The curds are then strained, drained, and sold. The word ricotta means "twice cooked," in reference to this process.
Modern ricotta, on the other hand, is generally made with fresh whole or skimmed milk to which acid is added directly. As a result, most packaged ricottas are a bit fatter and creamier than ricotta made by the traditional method.
Ricotta cheese can be either labelled "whole milk", "reduced-fat" or "fat-free". Feel free to use any of these varieties as they all work really well!
You can also make your own (which I ABSOLUTELY plan on doing soon) which is fairly simple but for this recipe, I used store-bought ricotta.
Which are the best tasting brands of ricotta if you don't want to make your own?
Many brands have added gums and stabilizers which I try to stay away from.
Here is a list of my top store-bought ricotta brands:
- Calabro Whole Milk Ricotta Cheese
- Sorrento Whole Milk Ricotta Cheese
- Whole Foods 365 Whole Milk Ricotta
The brands I personally do not care for are made by Trader Joe's and Organic Valley.

What type of Riced Cauliflower can be used?
Although you can absolutely take the time to make homemade riced cauliflower, I almost always opt to use prepackaged riced cauliflower.
Since riced cauliflower has become so popular today, you can literally find it in almost ANY grocery store. And, at about $2 per bag, you can't really make it at home for any less expensive.
If you are using a bag of frozen riced cauliflower, simply allow the cauliflower to thaw before adding it to the rest of the ingredients.
What kind of spinach can you use?
I have made this with both fresh and frozen spinach.
If you are using FRESH spinach:
- heat a deep skillet that has a lid on medium-high heat
- chop or rip spinach into smaller sections
- once hot, reduce the heat to medium and add in the spinach (it will look like too much spinach but I promise you it will cook down.
- place the lid on the skillet and allow it to cook, stirring every so often
- once the spinach has fully wilted, remove it from the heat and allow it too cool
- drain any water that remains
If you are using frozen chopped spinach:
- most frozen spinach comes in 16 oz (or 454 g) packages.
- this is the weight INCLUDING any water and therefore, once it has cooked and the water has been removed, you will be left with about half of the weight and therefore you will need 2 frozen packages for this casserole
- take 1 package and place it in the microwave for about 3-5 minutes
- once it is cool enough to handle, squeeze out almost all of the water
- repeat with remaining package
- I do not suggest doing both packages at once as the spinach gets so hot that you have to wait quite sometime before you are able to handle it.

What can other types of meat can you use instead of leftover ham?
- any type of leftover pork such as from my Mexican Pulled Pork Carnitas, 5-Spice Ginger Pulled Pork or my Crispy Slow Cooker Pulled Pork (Whole30, Keto, GF)
- leftover cooked and shredded Ranch Chicken
- leftover cooked sausage ( I use my sausage recipe from my Sausage Egg McMuffin recipe)
- leftover taco meat or Sloppy Joe Meat
- leftover Air Fryer Turkey
- or, don't use any meat!!!
How do you make this quick and easy Keto Leftover Ham Casserole?
- Preheat the oven to 375 degrees F. Grease a 9 x 11 baking dish well and set it aside.
- Combine the ricotta, eggs and seasoning and beat until incorporated
- Add in the cooked spinach and stir everything together
- Add in the cooked leftover ham and ¾ of the gouda (or other cheese) and stir a final time
- Pour the mixture into the baking dish and flatten out the top

- Add leftover shredded cheese to the top
- Bake for 40-50 minutes or until the cheese begins to brown
