Dates date back (funny use of words, right?:-) to ancient history. In fact, they have actually found fossil evidence of dates that go back 50 million years ago. They are thought to be the oldest cultivated fruit in the world!
Dates, despite being very sweet, have a high nutritional value. They are rich in carbohydrates, dietary fibres, proteins, minerals and vitamin B complex. They are made up of about 70% carbohydrates (equal ratios of glucose and fructose) and contain calcium, iron, magnesium, and potassium.
Recently there has been increased interest in the health-promoting properties of dates. Pharmacological studies have shown that dates are highly nourishing and may have numerous potential health benefits. They are believed to contain phytochemicals that may help to low cholesterol and decrease the risk of diabetes, cancer, and cardiovascular diseases.
According to Nutritionix a single date has 66 calories and 16 grams of carbs.
Now before you freak out, I am by no means advocating that you sit down and eat a pound of dates.
However, these sweet little gems have a place in my Whole30, low carb world.
Once again, I can not stress that food choices are all about moderation!
The great thing about dates is that a little goes a long way.
A single tablespoon of date paste in homemade BBQ sauce or in a salad dressing can make the most amazing impact of flavour.
And, when you think of it, most sauces or condiments make about 16 servings.
So, for the extra 1 gram of carb, dates can definitely find their way into my diet.
How to Make Whole30 Vegan Date Paste
- First, place your pitted dates in a food processor.
- If your dates feel a little too firm, pour boiling water over the dates and let them sit for 10 minutes in order to soften them.
- Next, add a little water and turn on your food processor.
- Let it run until you have a nice, thick consistency.
Doesn't that just look absolutely delicious!
How can you store this Whole30 Vegan Date Paste?
- Store the paste in the refrigerator for at least 2 weeks.
- Since I don't go through it fast enough, I put my paste in ice cube trays and freeze it. That way, whenever I need a little sweetness to a sauce, I can easily pullout a small amount.

- 2 cups (10-12oz) packed dates, softened
- ¼ -½ cup water

Instructions
- Place softened dates in a food processor. Add ¼ cup of water and turn on the processor for 1 minutes. If mixture looks too thick, add more water until desired consistency is reached.
