Are you trying to get more plant based protein in your diet? If you answered "yes" then these cookie dough bites are just the recipe you were looking for! Made with a mixture of almond butter and pea protein powder, these delicious little bites are nutrient packed and super easy to make.
What is pea protein?
Pea protein is produced via the extraction of soluble pea protein from yellow split peas. It is dried to produce pea flour. Thus, pea protein is a completely plant based vegan approved protein powder. It is also suitable for those individuals who must rely on a lactose-free or plant-based diet.
Why should you try pea protein?
Utilizing plant-based proteins instead of animal proteins is the more sustainable option. Most people don’t realize the extent to which land is harmed in the production of meat proteins. In fact, an article released by Roquette reveals how the land requirements for animal protein production are 10 times greater than that required for plant-based proteins.
Also, because it is lectin free, very low in phytates and contains nothing artificial, it is ideal for people with digestive issues. Most pea protein brands have a 98% digestibility rating, making it an ideal option for fueling one’s body throughout the day without having to worry about digestive complications. Since we all know how much I suffer from digestive discomfort, this is a great option for me in order to keep abdominal bloating and pain at bay.
Substitutions
Pea Protein - substitute with either casein, egg white protein powder, almond flour or coconut flour (you may need less or more then what I have listed in the recipe depending on your choice of "binder")
Almond butter - substitute peanut butter, any seed butter, tahini or even plain butter
Liquid Sweetener - substitute with maple syrup, honey, agave or Vitafiber
Chocolate Coating - this can be completely omitted or simply take any chocolate of choice including regular, lactose free or sugar free chocolate chips
The Execution
Step 1:
Combine almond butter and liquid sweetener in a large mixing bowl and place in microwave for 30 seconds. Stir and place back in the microwave until "butter" has liquefied. Next, add protein powder or flour of choice and stir to combine. Place mixture in fridge to cool.
Step 2:
Once mixture has cooled, add in chocolate chips. Next, take 1 heaping tablespoon and roll the mixture between the palms of your hands to form a nice ball. Repeat until mixture has all been used. Place in fridge or freezer to keep cool.
Step 3:
If using, taking chocolate chips and coconut oil and place in a large glass measuring cup. Microwave on high for 30 seconds. Stir and repeat until mixture is fully melted. Once melted, remove protein balls from fridge (or freezer) and, using a fork, roll protein ball in chocolate until fully covered. Place on a plate lined with parchment paper.
Step 4:
Store protein balls in fridge or freezer and enjoy!

Ingredients
For the Cookie Dough Bites
- 200 g almond butter
- 30 g sugar free maple syrup (I use Lakanto Maple Syrup)
- 35 g vanilla pea protein powder
- 14 g Lily's chocolate chips
- 1 tbsp vanilla extract
- ¼ tsp salt
For the Chocolate Coating (if using):
- 2 oz 85% dark chocolate bar, chopped
- 1 tbsp coconut oil
Instructions
- Place almond butter and liquid sweetener in a glass bowl and microwave for 30 seconds or until softened.
- Stir to combine and add vanilla extract and protein powder. Stir in chocolate chips and salt. Place in fridge for 10-30 minutes to firm.
- Once firm, take one heaping tablespoon and form into a ball. Set aside and continue to form balls until all mixture has been used (I got 16 balls)
- Place in freezer.
- Prepare chocolate coating by placing chocolate and oil in a glass measuring cup. Microwave for 30 seconds and stir to combine. If chocolate has not melted, add another 30 seconds. Let cool.
- Cover a plate with parchment paper. Remove cookie dough bites from freezer. Using a fork, roll cookie dough ball in chocolate coating and set on parchment paper. Repeat with all bites and then place in fridge to cool.
