I know this recipe might have you thinking that I have run out of recipe creations. I mean really, a post on roasting carrots? Yes, ladies and gentleman, this is a simple yet elegant post, but one of these Caramelized Oven Roasted Carrots are one of my most delicious recipes!
When I was a preschooler, my Mum would pull me in my sled to preschool on cold winter days. I only went half days but was still encouraged to bring a snack. Most kids would bring in cookies or granola bars but not this kid. This kid wanted a big old peeled carrot.
I'm not kidding.
My Mum would peel me a huge carrot and wrap it in saran wrap for my afternoon snack. I even remember a time when the teachers suggested to my Mum that maybe I should cut back on the carrots as my skin had a slight orange tinge developing.
I thought it was cool to look like an Oompa Loompa but fearful for my beta-carotene overdose, my Mum obliged and the carrots were rotated with other fruits and vegetables.
To this day, at the ripe old age of 42, I credit my childhood carrot addiction for my 20/10 vision. (For those of you who don't know, 20/10 is the best vision possible...twice as sharp as that of a person with normal (20/20) vision.)
Although carrots were definitely consumed growing up, I don't ever recall having them roasted. Boiled...yes. Raw...yes. Roasted...no.
For those of you who have never had roasted carrots, I urge you to try this recipe. Roasting the carrots with a simple olive oil and sea salt toss produces the most delectable and sweet, mouthwatering carrots you will have ever had.
I.....AM.....NOT.....KIDDING!
How to make Caramelized Oven Roasted Carrots
Step 1: Cut the carrots
First, peel and cut the carrots. Since I buy organic carrots and am a fan of the Eat Dirt philosophy, I save time by not peeling my carrots. However, if this bothers you, feel free to rinse and peel your carrots. Try to get your carrots to be of similar size as this helps to get the carrots evenly roasted. I HIGHLY recommend this fry cutter. I got one for Christmas and I honestly don't think I could live without it (Thanks again, Mum and Dad!)
Step 2: Season Carrots
Toss the carrots with a little olive oil and sprinkle them with some salt. Place them in a single layer on a large baking sheet. Sprinkle them again with a little more salt and place them in the oven for 30-40 minutes depending on how crunchy or therefore lack of crunch you like.
Step 3: Enjoy!
Although these carrots taste delicious on their own, I also really enjoy crumbling some blue cheese or some grated Parmesan cheese on top of them and placing them back in the oven for a couple of minutes.
Easy, delicious, full of nutrients and kid-approved, these carrots will quickly become a family favourite!

Caramelized Oven Roasted Carrots (Whole30)
These are truly addicting and yet so healthy. Toss them in olive and sprinkle them with sea salt and out of the oven come sweet and delicious Whole30 caramelized carrots

Ingredients
- 2 lbs organic carrots, peeled (if desired)
- 2 tbsp olive oil
- 2 tsp salt
Instructions
- Preheat oven to 425 degrees. Line a rimmed baking sheet with parchment paper or spray well with cooking spray.
- Cut carrots into the size of a french fry. Place carrots in a large bowl and toss with olive oil and salt.
- Arrange carrots in a single layer on a baking sheet. Roast in the oven for 30-40 minutes or until desired texture/sweetness is met. Add additional salt if desired.
