How to Make a Beet Crust for Pizza?
Preheat oven to 400 degrees F. Line a pizza pan with parchment paper and set it aside. If you don't have a pizza pan, simply place the parchment paper on a cookie sheet.
In a food processor, add the beets and eggs. Process for 1-2 minutes or until the beet has completely been pureed. Next, add in all remaining ingredients and blend for 1-2 minutes. The mixture should form resemble a thick pourable batter. If this does not happen, add 1 tablespoon at a time of coconut flour until the mixture thickens.
Place the mixture on the parchment paper and using your hands, press the beet mixture onto the pizza pan to form a circle.
Place beet pizza crust in the oven and bake for 10 minutes. Slide the pizza pan or cookie sheet from under the parchment paper so that the parchment paper is directly on the rack in the oven. Bake for an additional 10 minutes.
Remove beet pizza from the oven and let cool for 5 minutes. Using a cooling rack, flip pizza onto a cooling rack and remove parchment paper. Let crust cool completely before turning it back over. Once the crust has cooled, add your pizza toppings and return the pizza to the oven for an additional 10 minutes.
What type of beets can you use?
- Organic canned beets work well but do need to be drained.
- Raw beets can be used but must be cooked first. To cook beets, scrub the beets well and cover them in some olive oil. Wrap each beet tightly in aluminum foil and bake in a 400 degree F preheated oven for approximately 45 minutes. Let the beets cool enough to be handled. Take a paper towel and rub beets to remove the skin.
Why are beets healthy?
According to the L.A Times, beets are dense with nutrients, including potassium, betaine, magnesium, folate, and Vitamin C and a good dose of nitrates. Beets can also help reduce blood pressure and anemia, improve circulation and cognitive function. Studies have explored how beets may contribute to improved athletic performance by enhancing blood flow, which improves the delivery of fuel to muscles and the removal of byproducts such as lactic acid that can dull performance. Many sports teams such as USC’s basketball team, are even using beet juice as a pre-workout supplement.
