As an adult, I don't often get that child-like sense of accomplishment very often. There were so many more feats to conquer as a kid, that the feeling of pride happened nearly every day. This recipe is one that I can honestly say gives me great pride even though it is by far one of the simplest recipes I have ever posted!
When I first sent the picture of these beautiful bacon potato roses to my mum, she couldn't believe how well they turned out. Her next comment was "I probably wouldn't make these just for your dad since they would take too much time."
This is when I got super excited and proclaimed, "they only take 10 minutes to prepare!".
Silence on the other line told me that she thought that maybe I was slightly exaggerating but I swear to you, I am not!
The Execution
Slice your potatoes into even discs and place in a bowl. Add the olive oil and seasonings and toss to coat all sides of the potato slices.
Next, take one strip of bacon and lay it flat on a cutting board.
Add overlapping slices of potato along the length of the bacon.
Roll the bacon up and place in Reusable Silicone Baking Cups or directly in a muffin pan.
Finally, place the bacon potato roses in the oven and let them bake for about 50 minutes or until cooked.

Bacon Potato Roses (Whole30)
These elegant potato bacon roses are really easy. Simply roll the potato slices with a piece of bacon and throw them in the oven. Within 30 minutes, beautiful potato bacon roses are formed!
- Total Time: 1 hours 5 minutes

Ingredients
- 6 slices of bacon (Whole30 approved)
- 200 - 300 g potato, sliced (approximately 1-2 depending on size)
- 2 tbsp olive oil
- 1 tbsp rosemary, dried
- 1 tsp thyme, dried
- 1 tsp salt
- 1 tsp garlic powder
- ½ tsp black pepper
Instructions
- Preheat oven to 400 degrees F. Prepare baking dish with 6 Reusable Silicone Baking Cups or spray muffin pan well with non-stick cooking spray.
- Wash and slice the potato into even circles. Place potato slices in a large bowl and add oil and seasoning. Stir to combine.
- Place 1 piece of bacon on cutting board. Lay 1 slice of potato on bacon and continue overlapping potato slices the entire length of the bacon.
- Carefully roll bacon and place in muffin tin. Repeat with all bacon slices.
- Place bacon rolls in oven for 40-50 minutes or until cooked through.
Notes
- Feel free to add some shredded parmesan cheese with 10 minutes remaining and return to oven.
