These elegant potato bacon roses are really easy. Simply roll the potato slices with a piece of bacon and throw them in the oven. Within 30 minutes, beautiful potato bacon roses are formed!

These elegant potato bacon roses are really easy. Simply roll the potato slices with a piece of bacon and throw them in the oven. Within 30 minutes, beautiful potato bacon roses are formed!

Ingredients

Units Scale
  • 6 slices of bacon (Whole30 approved)
  • 200 - 300 g potato, sliced (approximately 1-2 depending on size)
  • 2 tbsp olive oil
  • 1 tbsp rosemary, dried
  • 1 tsp thyme, dried
  • 1 tsp salt
  • 1 tsp garlic powder
  • 1/2 tsp black pepper

Instructions

  1. Preheat oven to 400 degrees F.  Prepare baking dish with 6 Reusable Silicone Baking Cups or spray muffin pan well with non-stick cooking spray.
  2. Wash and slice the potato into even circles.  Place potato slices in a large bowl and add oil and seasoning.  Stir to combine.
  3. Place 1 piece of bacon on cutting board.  Lay 1 slice of potato on bacon and continue overlapping potato slices the entire length of the bacon.
  4. Carefully roll bacon and place in muffin tin.  Repeat with all bacon slices.
  5. Place bacon rolls in oven for 40-50 minutes or until cooked through.  

Notes

  • Feel free to add some shredded parmesan cheese with 10 minutes remaining and return to oven.
