Who would have thought that combining apple, cheddar cheese and maple syrup one would end up with the most delicious and interesting pizza ever! Even though this combination sounds crazy, this Apple Cheddar Bacon Pizza has become a favourite in our home.
I am not going to attempt to tell you that I came up with this combination of flavours on my own.
That would be lying...and I am not a liar.
This combination of bacon, cheddar cheese, spinach, apple and maple syrup could only be concocted by someone with a more wild imagination than my own.
Where on earth did I find this pizza?
Well, if you travel 123.67 miles east of Plattsburg, NY into Vermont, then make a left at the mailbox that is slightly angled to the right, drive 10.24 miles to the farm with the cow that has a black spot on it's left side and then make a quick right after the cow, you will arrive at Parker Pie!
Although that is a slight exaggeration, Parker Pie Company is seriously in the middle of the country, off the beaten path in the small town of West Glover, VT.
My parents who live in Quebec (Canada) found out about this place in an article written by the Montreal Gazette. Intrigued by how good the author had stated this "Green Mountain Special" pizza was, they set out to see what all the fuss was about.
And boy did they fuss! After over 2 years of hearing about this Green Mountain Parker Pie Company pizza, we finally got a chance to try it on our last visit home in July.
And am I ever glad we did! It took forever to find it and although the atmosphere is one of picnic tables with the light scent of cow manure when the wind blows in the right direction, the pizza was absolutely delicious.
Of course, once I got home, I knew I had to attempt to recreate this wonderful masterpiece.
How to make this Apple Cheddar Bacon Pizza:
Step 1: Prepare your crust
I used my Avocado Pizza Crust (Whole30, Keto, GF) recipe for my base but any homemade or storebought crust will do.
Step 2: Prepare your ingredients
In a large skillet, add your chopped bacon and cook until beginning to brown. Add the chopped red onion to the bacon and cook for an additional 2-3 minutes. Remove your bacon and onion with a slotted spoon and set aside. Using a kitchen brush, dip the brush into the bacon grease and spread the grease over the entire pizza crust. Sprinkle the oil with the garlic powder. Next, add the cheese to the crust, followed by the sliced apple. Make sure you are using good cheddar cheese as it will make all the difference. My all-time favourite cheddar cheese is White Oak Cheddar by Cabot.
Sprinkle the bacon and onion over the apples. Add the sliced spinach and place the pizza in the oven for 10-15 minutes or until the cheese has melted and the apples have softened. Finally, take the maple syrup and drizzle it all over the pizza.
The combination of the sweet and salty is absolutely amazing!
Substitutions and Modifications:
Pizza Crust - you can easily make your own or use a store-bought version. Since most of the ingredients are cooked ahead of time, you will most likely have to par-bake your crust before adding any toppings
Bacon - you could use turkey bacon, ham or prosciutto
Bacon Grease - replace it with a light tasting olive oil
Red Onion - any onion will work.
Apples - replace with pears or omit altogether
Cheddar Cheese - I use White Oak Cheddar by Cabot. If you want to use a different cheddar, try to find one that is white in colour for the appropriate flavour.

Apple Cheddar Bacon Pizza (Gluten-Free, Keto)
Combining apple, bacon, red onion, cheddar cheese with a maple drizzle creates most delicious, keto, gluten-free pizza imaginable. Delicious and easy to make.

Ingredients
- 1 Dairy Free Avocado Pizza Crust (Or other crust of choice)
- 4 oz bacon, chopped
- 6 oz cheddar cheese, shredded
- ½ red onion, diced
- 1 cup spinach, sliced
- ½ apple, thinly sliced
- 2 tsp garlic powder
- ¼ cup maple syrup (I use Lakanto Maple Syrup)
Instructions
- Preheat oven to 400 degrees F. Prepare your pizza crust and set aside.
- In a large skillet, add the chopped bacon and continue to cook until starting to brown (about 5-7 minutes). Add in chopped onion and cook an additional 2 minutes. Remove bacon and onion from grease with a slotted spoon and set aside.
- Take a brush and dip it into the bacon grease. Gently spread 1 tablespoon of the bacon grease over the pizza crust. Sprinkle with garlic powder and then add cheese, followed by apples and finally, sprinkle the crust with the bacon and onion mixture. Lastly, add the sliced spinach and place in the oven for for 10-15 minutes or until cheese has melted and apple slices have softened.
Notes
- To slice spinach, roll a group of leaves together to form a tube. Slice perpendicularly to optain strips of spinach.
- I use Lakanto Maple Syrup for a sugar-free version but feel free to use any maple syrup.
