Why are Cookies so popular around Christmas?
According to Martha Stewart, the tradition of cookies at Christmas probably relates to that time when cookies were stored so they'd be on hand for guests.
According to Frederick Opie, PhD., at Babson Colleg in Boston, "You can't do that with a pie if you're expecting visitors over a prolonged period of time. Christmas in many cultures was a time of visiting. It was cold, so you weren't out farming, and you had time to visit. Cookies were made in large amounts and with great care as something to share. And giving gifts didn't mean going out and buying something. Most gifts were sweets or crafts."
There are cases when cookies become a little too popular and thus, you end up with too many cookies.
This happens to me every year.
So therein lies the dilemma...

- sugar cookies
- snickerdoodles
- ginger snaps
- Linzer cookies
- shortbread cookies

- ANY COMBINATION OF THE ABOVE!

As you can see, any cookie that has a fairly similar taste will work. I would, however, caution a word to the wise and watch anything with peppermint, lemon and peanut butter.
I am not sure that a Lemon Peppermint Peanut Butter Cookie Pop would taste very good!:-)
What if I don't have any leftover cookies that need to be used up?
Easy...just buy some!
You can use Oreos, Chips Ahoy or any other type of cookie that you have lying around or that is on sale. I would stick to a brand that is on the crunchier side and less "cake" like.
How do you make these 4-Ingredient Leftover Cookie Pops?
- place the cookies in a food processor
- turn the machine on until the cookies are broken down into crumbs
- add the cream cheese and turn the machine on again for 1 minute or until the mixture forms a ball
- if the dough seems to dry, add additional cream cheese, 1 tablespoon at a time, until mixture comes together and can be rolled to form a cookie pop
- take 1 tablespoon of the cookie mixture and form it into a ball using the palm of your hands.
- place cookie pops back into the fridge to cool for 30 minutes
- roll the cookies again to tighten their structure
- if using, place a little honey on the end of the cake pop stick and push it into the cookie pop
- return cookie pops to the fridge to firm up
- melt chocolate in a double boiler
- dip cookie pop into chocolate and coat with toppings
How do you keep the cookie pops standing up to dry?
- use an old shoebox and poke holes in it
- use several coffee mugs and place 4-6 cookie pops upright in each mug
- fill a wine glass with coffee beans or other beans to help hold cookie pops upright
What if I don't have a double boiler?
I actually don't have a double boiler! I take a small saucepan and fill it with about 1-2 inches of water (making sure that my top glass bowl will not touch the water) and bring it to a boil. Once it is boiling, I reduce the heat to low (you want the water to be barely simmering) and place a glass mixing bowl over the saucepan. Add the chocolate chips to the glass bowl and stir until the chocolate melts.
What if I don't have Cake Pop Sticks?
I didn't have any cake pop sticks so I used short bamboo skewers instead. If you don't have those either, then simply omit the stick all together and you have Leftover Cookie Truffles instead of Cookie Pops!
What type of coating works best?
Use the type of chocolate coating that works best for the type of diet you are following.
- Sugar-Free, Keto - Use Lily's Chocolate chips or for white chocolate use Bake Believe
- Paleo, Vegan - Use Enjoy Life chocolate chips
If you are not following any dietary restrictions, then any brand will do.
However, if you want the easiest type of melting chocolate, look for the wafer type such as Ghiradelli Melting Wafers in Chocolate or White Chocolate.
Tips and Tricks to making these 4-Ingredient Leftover Cookie Pops
- make sure that the mixture of cookie flavours work before using them together
- you may have to add additional cream cheese if the dough seems too dry
- if you are running short on time, you can easily start this recipe and finish it whenever you have time
- these can easily be frozen for up to 3 months
- after coating cookie pops, you can place them in the fridge to firm up faster
- store these cookie pops in the fridge
- YOU DO NOT HAVE TO COAT THE COOKIE POPS. I actually really liked the cookie pops without the coating so if you want to skip the coating, go right ahead
- decorating the cookie pops with crushed almonds, flaked coconut or sprinkles helps to mask any "not-so-perfect" areas

4-Ingredient Leftover Cookie Pops
This is the absolutely best way to use extra, stale or leftover Christmas cookies. It only takes 4-Ingredients to make these quick and easy cookie pops that can be gluten-free, Paleo, dairy-free and keto-friendly depending on what type of cookie you begin with.
- Total Time: 15 minutes
- Yield: 24 cookie pops 1x
Ingredients
- 400 g (14 oz) cookies
- 2.5 oz cream cheese (or more depending on how dry your cookies are)
- 1.5 cups white chocolate chips (optional - can use chocolate chips instead)
- 1 tbsp coconut oil
- sprinkles for decorations (optional)
Instructions
- In a food processor, process cookies until they break down to a crumb texture. Add cream cheese and process until everything comes together and can be formed into a ball.
- Take 0.5 oz and roll cookie crumble mixture into round balls. Place in fridge to cool for 20 minutes.
- Remove and roll cookies again to form tighther round balls.
- Using small cake pop sticks or bamboo skewers, dip end of skewer in honey and pierce cookie mixture. Repeat with all remaining cookies. Place back in the fridge for another 30 minutes to harden.
- To coat cookie pops, add chocolate chips to a small glass bowl that is sitting over a saucepan that has about 1 inch of water boiling. This makes a double boiler. Place chocolate chips in glass bowl with coconut oil and stir to melt chocolate chips.
- Once chocolate has melted, dip each cookie pop in chocolate and then decorate with sprinkles.
- Allow to cool completely before removing them from rack.
