Are these Sugar-Free Meringue Ghosts not the most adorable decorations you have ever seen?! Simply combining a couple of ingredients, you can easily make Meringue Ghosts at home in minutes. Perfect for Halloween!
What is Meringue?
Meringue is a type of dessert or candy, often associated with Italian, Swiss, and French cuisine, traditionally made from whipped egg whites and sugar, and occasionally an acidic ingredient such as lemon, vinegar, or cream of tartar. A binding agent such as salt, corn starch, or gelatin may also be added to the eggs.
Since making my Easy Lemon Meringue Pie, I knew I wanted to start doing more creative things with meringue.
I am not going to lie and tell you that I can up with making ghosts out of meringue on my own. I was actually on Pinterest when I noticed these adorable little guys.
I decided to try and make a sugar-free version of these adorable Meringue Ghosts.
How did they turn out?
Truthfully, the first batch ended up browning too much. Do you know what a brown meringue ghost resembles? Use your imagination but I can assure you they were not something that looked pleasant to eat!
So, on my second batch, I lowered the oven temperature by 5 degrees F. and only baked them for 30 minutes.
The result?
Adorable, edible Meringue Ghosts!
How to Make Sugar-Free Meringue Ghosts
Step 1: Beat egg whites
In a clean medium-size mixing bowl, add egg whites. To make life simpler, I used liquid egg whites from a carton. I measured 6 tablespoons of liquid egg whites which is the equivalent of 2 "real" egg whites. Add in the cream of tartar and beat egg whites on medium speed until frothy. Turn handheld mixer to high speed for 1-2 minutes. Next, add 1 tablespoon of powdered sugar and almond extract. Continue to beat on high speed until egg whites begin to become glossy. Add in the final tablespoon of sugar and beat 1 more minute.
Step 2: Pipe the Ghosts
Fill a large piping bag with a ¼ inch tip with meringue. On a covered baking sheet, slowly pipe a 1-inch "blob" and then slowly, while still applying pressure, lift the piping bag until the desired "ghost" height has been reached. Repeat with the remaining meringue mixture (I ended up with 18 ghosts about 3 inches high).
If you don't have a piping bag, take a large ziplock bag, fill it with the meringue and then cut off one corner of the ziplock bag to act as your piping tip.
Step 3: Bake the Ghosts
Place the baking sheet in the preheated oven (195 degrees F.) for 30 minutes. Then, turn off the oven but do not open the door or remove the ghosts for at least 1-2 hours.
Step 4: Add the eyes
Using black gel, carefully dot 2 eyes on each ghost. Let the gel dry and store ghosts in an airtight container.
Sugar-Free Meringue Ghosts (Low Calorie and Low Carb)
These sugar-free meringue ghosts are easy to make and low in calories and carbs. Gluten-free, top this meringue ghosts on your next Halloween cupcake or cake.

Ingredients
- 2 egg whites (or 6 tablespoons of liquid egg whites from a container)
- ⅛ tsp cream of tartar
- ¼ tsp almond extract
- 2 tbsp Swerve confectioner
Instructions
- Preheat oven to 195 degrees F. Line a baking sheet with a silicon mat or parchment paper.
- In a medium mixing bowl, beat egg whites and cream of tartar on medium speed until frothy and tripled in size. Add 1 tablespoon sugar and almond extract and continue to beat until egg whites appear glossy. Add additional sugar and beat for an additional minutes.
- Fill a large piping bag with a ¼ inch tip with meringue. On a covered baking sheet, slowly pipe a 1-inch "blob" and then slowly, while still applying pressure, lift the piping bag until the desired "ghost" height has been reached. Repeat with the remaining meringue mixture (I ended up with 18 ghosts about 3 inches high).
- Place the baking sheet in the preheated oven for 30 minutes. Then, turn off the oven but do not open the door or remove the ghosts for at least 1-2 hours.
- Using black gel, carefully dot 2 eyes on each ghost. Let the gel dry and store ghosts in an airtight container.
Notes

- Feel free to use regular icing sugar instead of Swerve.
