Who said that a healthy diet couldn't involve Chinese food? When I recently asked Mr. Grumbles what type of food he was in the mood for, he coyly replied "Chinese food". His tone implied the fact that he did not think that I would be able to recreate a healthy version of some of his favourites. His doubt only fueled my desire even more so that I not only came up with a healthy Whole30 Pork Fried "Rice" recipe but several others that will be featured in the coming weeks.
The great thing about Chinese food is that the vast majority of their dishes are not heavy in the wheat department. Vegetables, meat, rice and noodles are the primary ingredients in almost all Chinese food.
However, when you talk about American take-out Chinese food, now we have to include horrible ingredients like MSG, canola oil, vegetable oil, sugar and soy.
I decided to start my healthy Chinese food journey with a simple and easy recipe. Pork fried rice typically involves pork, eggs and rice served in a soy-based sauce. By switching out the rice with riced cauliflower and the soy-based sauce with coconut aminos, the new and improved healthified version of Pork Fried "Rice" was created!
How to make Whole30 Pork Fried "Rice"
Step 1:
- Take your choice of pork cut and dice it into small sections. The easiest way to do this is to place your pork in the freezer for 1-2 hours before you are going to cut it up. When you pull the pork from the freezer, the firmer texture makes it much easier to slice or dice. I used a pork loin in this recipe but any boneless piece of pork will work.
- Not a fan of pork? Simply replace it with boneless skinless chicken breasts.
Step 2:
- Cook the pork in a large skillet on medium-high heat for about 5-10 minutes, depending on the thickness of your pork pieces.
Step 3:
- Prepare the sauce ingredients as the meat is cooking and set aside.
- Add the chopped onion, garlic and riced cauliflower to the skillet and stir to combine.
- Add the beaten eggs and stir until the eggs are set (approximately 2 minutes).
- Finally, add the sauce and stir everything together.
To serve this Whole30 Pork Fried "Rice" top each bowl with some chopped chives.
Now, since I was trying to "trick" Mr. Grumbles into thinking he was eating the "real" thing, I added a handful of green peas and some leftover chopped red pepper.
And what was Mr. Grumbles verdict... "This is good, Cat" and proceeded to eat two full bowls!

Simple Pork Fried "Rice" (Whole30, Keto)
Only a couple of ingredients and this Whole30, keto Pork Fried Rice comes together in no time. Perfect for a quick healthy Whole30 and Keto Chinese meal.

Ingredients
- 1 lb pork ribs, cut into small pieces
- ½ onion, diced
- 1 tbsp ghee (or olive oil)
- 3 raw eggs, scrambled
- 24 oz frozen riced cauliflower, thawed
- 6 green onions, sliced
- 3 tbsp coconut aminos
- 3 tbsp rice vinegar
- 1 tbsp sesame oil
- 1 tsp Lakanto Golden (omit for Whole30)
- 1 tsp minced ginger
- 1 tsp fish sauce (Red Boat variety is Whole30)
- salt and pepper to taste
Instructions
- In a large skillet, heat ghee on high heat. Once the skillet is hot, add chopped pork. Let cook 30 seconds and then flip pork to cook the other side. Once the pork is cooked add in the chopped onion and cook for 5 minutes or until onion begins to soften.
- While onion and pork are cooking, prepare the sauce. In a small bowl, combine the coconut aminos, rice vinegar, sesame oil, sugar (if using), ginger and fish sauce. Stir and set aside.
- Once the onion is cooked, push pork and onion mixture to one side of the skillet. Pour scrambled eggs into the empty side of the skillet and using a rubber spatula, stir eggs until scrambled and set.
- Add riced cauliflower (or rice) to the egg mixture. Stir onion and pork into the egg mixture and add the sauce. Stir to combine and add more salt, pepper or coconut aminos depending on taste.
- Divide mixture into 6 bowls and top with chopped green onion.
Notes
- You can also use pork tenderloin or a boneless pork chop.
- Feel free to use leftover cooked pork, chicken or tofu. Just add the cooked meat with the cauliflower rice near the end of the recipe.
- Feel free to use leftover cooked rice instead of riced cauliflower
- Soy sauce can replace the coconut aminos if you are not on the Whole30
- omit the brown sugar to stay Whole30 compliant
