You just have to love a recipe that comes together using only 1 bowl, a microwave and is ready in under 10 minutes! Plus, did I mention that these keto collagen cereal bars are also sugar-free and packed with protein?!!

Protein Collagen Peanut Butter Cereal Bars
You only need some simple ingredients to make these high protein cereal bars. You can use any type of keto cereal (or use my 5-Minute Skillet Keto Granola - Copycat Kiss My Keto recipe), some peanut butter (or any Homemade Nut Butter), coconut oil and collagen protein powder.

The only brand of collagen protein powder that I will use is by Naked Nutrition. They have plain, vanilla, caramel and chocolate collagen protein powders, all of which contain zero grams of sugar and only 1 gram of carb per serving.
Why it is important to do some research when it comes to collagen
It's crucial to research a company selling collagen protein powder to ensure you're investing in a safe, effective, and high-quality product. Not all supplements are created equal, and some may contain fillers, additives, or low-grade collagen that can reduce their benefits.
Research helps verify the company’s sourcing practices, ensuring that the collagen is sustainably and ethically derived, often from grass-fed or wild-caught sources.
It also allows you to check for third-party testing and certifications, confirming the product’s purity and safety. Doing thorough research protects your health and investment.

Making Low Carb Collagen Bars
Here are the basic steps to making these keto protein collagen bars:
Step 1 - Combine your cereal
- In a large bowl, toss together your cereal and toss to combine (Tip - I used 3 different kinds of cereal, one of which was protein crisps and the other was lupin flakes, of various sizes to ensure that the cereal would stick together)
Step 2 - Melt the peanut butter and coconut oil
- In a large measuring cup, add the coconut oil and peanut butter and melt in the microwave for 30-60 seconds.
Step 3 - Add the collagen and stir
- Add the collagen to the peanut butter mixture and stir to combine.
- Pour the mixture over the cereal, tossing to coat the cereal with the peanut butter collagen mixture.
- Taste the mixture and add additional sweetener or salt to suit your taste.

Step 4 - Chill and drizzle with chocolate
- Evenly divide the mixture into 12 cereal bars (Tip - I like using a cookie scoop to keep them the same size)
- Place the protein collagen peanut butter cereal bars in the fridge to harden
- Optional - Melt 3 oz of chocolate in the microwave - Stir in 1 scoop of collagen into the chocolate and drizzle the chocolate over the low carb collagen bars.

- Keep the bars in the fridge until ready to eat.

Ingredients
For the Collagen Cereal Bars:
- 2 ⅓ cup low carb cereal of choice
- ½ cup peanut butter
- ¼ cup coconut oil
- 5 scoops (70 g) Naked Nutrition Caramel Collagen Creamer
- salt and sweetener to taste
For the Optional Chocolate Topping:
- 3 oz bittersweet sugar-free chocolate
- 1 scoop (14 grams) Naked Caramel Collagen Creamer
Instructions
- In a large bowl, toss to combine the cereals.
- In a microwaveable large measuring cup, add the coconut oil and peanut butter. Microwave on high for 30-60 seconds or until the coconut oil is fully melted. Stir in the collagen protein powder.
- Pour the peanut butter collagen mixture over the cereal and toss to coat. Using a cookie scoop, divide the mixture into 15 cereal bites (I used a 1 tablespoon cookie scoop), placing each bite onto a rimmed baking sheet that has been lined with parchment paper. Place baking sheet in fridge to firm, about 30 minutes.
- Optional Chocolate - While cereal bars are firming, melt the chocolate in the microwave for 30 seconds. Stir and if needed, return to the microwave in 15 second intervals until fully melted, stirring after each 15 seconds. Once sugar-free chocolate has fully melted, stir in collagen. Pour chocolate over each cereal bite.
- Place in fridge until firm.
