The Benefit of Eating More Cranberries
Moving forward, I intend to add a little education on ingredients, recipe history and cooking techniques throughout my blog. I love learning and hope you too will enjoy some little tidbits of information.
So, what about cranberries? Are they healthy or not?
Here's what I found on Medical News:

Are they low carb?
Actually, yes! In a 1 cup serving of cranberries, there are only 47 calories, with a total of 12 grams of carbs of which 4.6 grams are from fiber and 4 grams are from sugar. For this keto cranberry upside down cake recipe, that means that the cranberry topping only adds 1 gram of net carbs per slice of this easy keto holiday pie! Not bad when compared to all the other holiday treats that are currently being baked as we speak!
Vitamins in Cranberries
The main 5 vitamins that are found in cranberries are manganese, Vit. C, K1 and E as well as copper.
Manganese helps to eliminate free radicals and is crucial to bone health. Vitamin C is necessary for our immune systems, Vitamin E helps to regulate hormones and also helps to fight off infections. Vitamin K1 helps to enhance the absorption of Vitamin D and copper helps to make red blood cells as well as collagen.

Keto Cranberry Upside Down Cake - copycat Trader Joe's Pie
Have you ever heard of Nantucket pie? I hadn't either until a recent visit to Trader Joe's where I saw this pie on display. Intrigued, I decided to see if I could create a gluten-free, sugar-free and keto-friendly version of this cranberry pie.
With only 6 ingredients, including raw cranberries, sweetener, butter, eggs, and almond flour, I was able to make a near-perfect copycat Trader Joe's pie!

Easy Gluten-free Cranberry Pie with an Identity Crisis!
Here is what Trader Joe's has to say about this pie:
"Is it a pie? A cake? Or a cobbler? Traditionally found on holiday tables across New England, this Nantucket Style Cranberry Pie speaks for itself. Tart cranberries and walnut pieces form the base for this buttery, exquisite confection, and accents of almond and vanilla set this humble dessert apart from the rest. One bite of this pleasantly tart alternative to traditionally super-sweet holiday offerings, and you won’t want to argue about whether it should be called pie, cake or cobbler – you’ll just want more."
When I describe this copycat Trader Joe's pie to others, I refer to it as an upside down cake. Made in a springform pan, the cranberries, walnuts (you can omit these if you wish) and sweetener are nestled in the bottom and then topped with a light and airy vanilla keto cake batter.
Pop it in the oven for about 30-35 minutes and then after it has rested briefly, you flip the gluten-free cranberry pie over so that the cranberries end up on top and the cake on the bottom.
The result? I perfectly sweet cranberry topping with a spongy vanilla cake surrounded with cripsy edges, thanks to the sweetener!

Keto Upside Down Cranberry Nantucket Pie - Only 6 Ingredients!

Ingredients
For the Cranberry Topping
- 1 cup fresh or thawed cranberries, cut in half
- ¼ cup chopped walnuts (I prefer roasted walnuts but you can use raw)
- 3-4 tablespoon sweetener (depending on how sweet you like your desserts)
- ½ tbsp gelatin
For the Cake
- 2 large eggs
- ½ cup butter, melted and cooled
- ½ - ¾ cup sugar sweetener (depending on how sweet you like your desserts)
- 1 cup almond flour
- 1 tsp baking powder
- Optional - pinch of salt and splash of almond or vanilla extract
Instructions
- Preheat the oven to 350 degrees F. Grease (don't skimp on this step!) a 6-7-inch springform pan with cooking spray. Set the pan in a rimmed baking sheet and set it to the side.
- In a small bowl, combine the cranberries, sweetener, chopped walnuts and relating. Spread the mixture into the bottom of the springform pan and press it down slight.
- In a medium-size bowl, beat together the eggs and sweetener. Add in the almond flour, baking powder and salt and almond extract (if using) and beat until incorporated. Add in the melted butter and beat one more time, about 1-2 minutes.
- Carefully spread the mixture over the top of the cranberry topping. Place the rimmed baking sheet in the oven and bake for 30-35 minutes or until the top turns a nice golden brown.
- Remove the baking sheet from the oven and place the springform pan on a cooling rack. Allow to cool for 10 minutes before running a knife between the edge of the pan and the cake. Carefully remove the ring from the cake.
- Place a plate overtop of the cake and carefully flip the cake to that the cake is now on the bottom and the cranberries are on top. Remove the bottom of the springform pan carefully, using a spatula to separate the sticky cranberry topping from the pan.
- Serve immediately or with some keto stabilized whipped cream.
- Store any leftovers in the fridge for up to 5 days.
