That was the case for me a few summers ago when I was on a family trip, trying to stay cool and energized. After reading the nutrition label on my favourite coffeehouse drink, I decided there had to be a better (and keto-friendly) way. That’s how these Easy Keto Frozen Caramel Macchiato Cups were born.
These little cups are like coffee shop indulgence in frozen dessert form: a rich espresso-kissed ice cream base, a buttery layer of homemade sugar-free caramel sauce, and a fluffy whipped topping to bring it all together. Plus, they’re portion-controlled (unless you make the frozen pie version—because, sometimes, you do need a whole pie). I’ve made these for friends and family countless times, and they never guess they’re low-carb!

Keto Coffee Ice Cream Layer
- Espresso Powder + Hot Water – Gives that bold macchiato flavour; instant espresso dissolves easily.
- Cream Cheese – Adds body and a subtle tang to mimic cheesecake-like richness.
- Sweetener (e.g., Allulose, Monk Fruit, or Erythritol) – Keeps it keto while sweetening naturally.
- Heavy Cream – Whips into the ice cream base for a creamy, scoopable texture.
Whipped Topping

- Blend the coffee ice cream layer until silky smooth—don’t skip this step! It keeps the texture creamy once frozen.
- Layer in this order for best structure: caramel, ice cream, whipped topping.
- Freeze each layer briefly before adding the next to get cleaner layers and avoid sinking or blending.
A Note on Keto Macchiato Leftover Ingredients
You will likely have leftover caramel sauce, coffee base, or whipped cream depending on the size of your molds. But don’t worry—each component is delicious on its own:
- Drizzle caramel over keto brownies.
- Freeze extra coffee mixture in popsicle molds.
- Use leftover whipped cream in your morning coffee.
Trust me, too much is better than not enough. The extra bits never go to waste in my house.
Easy Keto Frozen Macchiato Cups Recipe
Step 1 - Prepare the Caramel Sauce
- Melt allulose and butter in a saucepan over medium heat. Stir frequently.
- Once golden, add cream slowly (it may bubble). Stir until smooth. Remove from heat, stir in vanilla and salt.
- Let cool (it will thicken as it cools!)
Step 2 - Prepare the Coffee Ice Cream Layer
- Dissolve espresso powder in hot water.
- Blend with cream cheese and sweetener until smooth.
- Add heavy cream and continue to blend until thick and creamy
Step 3 - Prepare the Sugar-free Whipped Cream
- Whip cream and sweetener together until soft peaks form.

Step 4 - Assemble
- Spoon a layer of cooled caramel sauce into each cup or a pie crust.
- Add a layer of the coffee ice cream mixture.
- Top with whipped cream.
- Place the cups in the freezer to firm
- Remove 5 minutes before serving to soften ever so slightly!

Ingredients
For the Caramel Sauce:
- 1 cup allulose
- 8 tbsp butter, unsalted, cut into 8 pieces
- ½ cup heavy carem
- 1 tsp vanilla
- ¼ tsp salt
For the Coffee Ice Cream and Whipped Topping
- 4 tbsp instant espresso powder
- 2 tbsp hot water
- 2 cups heavy cream
- 8 oz cream cheese, softened
- 1 cup allulose, divided
- 1 tbsp vanilla
Instructions
Prepare the Caramel Sauce:
- In a small saucepan, heat the allulose on medium-high heat until it melts and turns a golden brown (about 3-5 minutes). Add in the butter and whisk until it is fully incorporated (2-3 minutes). Remove from heat and stir in the heavy cream. Allow to cool at room temperature before placing in the fridge to fully cool (40 minutes or overnight)
Prepare the Espresso:
- In a small bowl, add the water and microwave on high for 30 seconds. Add in the espresso powder and whisk until the powder has fully dissolved. Allow to cool completely.
Prepare the Whipped Topping and Coffee Ice Cream:
- In a large bowl, whip the heavy cream and 1 cup of allulose until stiff peaks form (about 3-5 minutes). Place the bowl in the fridge.
- In a medium bowl, beat the cream cheese, cooled espresso and 1 cup of allulose until combined (no need to wash the beaters!).
- Fold slightly more then half of the heavy cream into the coffee mixture until no white streaks remain.
Assemble the Keto Caramel Machiato Cups
- Add a tablespoon of the cooled caramel to the bottom of each 6-8oz cup. Place the coffee ice cream in a piping bag and pipe the ice cream into each cup (you may have some leftover!). Drizzle approximately 1 teaspoon of caramel over the coffee icecream. Next, add the remaining whipped cream into the same piping bag and pipe the whipped cream over the caramel layer.
- Place the cups in the freezer to firm, anywhere from 1 hour to overnight.
- When ready to serve, remove the cups from the freezer and allow them to sit at room temperature for 30 minutes. Feel free to drizzle additional caramel over the whipped cream if desired.
Notes
- you will have too much caramel sauce so store any leftovers in the fridge for up to a week or in the freezer for up to 30 days.
- you may have too much coffee ice cream and/or whipped topping - better to have too much than too little!
- feel free to make a pie crust and create a pie instead of cups!
