I recently accepted a challenge with a co-worker to try a zero carb diet. Whether it be carnivore or fit into a protein-sparing modified fasting day, the goal was just to eat zero carbs. Always up for a challenge, I accepted and then had to scramble to find unique and different ways to create zero carb recipes so I wouldn't get bored and quit. After making PSMF Baked Cod with Prosciutto in my air fryer, I decided to see what else I could create.
You see, food has always been about the "exploration" of tastes as well as the "creation" of delicious-tasting keto recipes.
In reality, food should have these features every so often but we need also to recognize food as simply "fuel".
When it comes to cooking steak …the beloved air fryer has entered the chat, and the result is the ultimate juicy and flavorful steak bites. In just under 7 minutes, the extra hot air works its magic, giving your steak that has a totally gorgeous and lightly crispy char on the outside.
Air Fryer Carnivore Steak Bites Ingredients
These keto air fryer steak bites only require a couple of simple ingredients. If you want make this into a protein sparing modified fasting air fryer recipe, you simply need to make a few changes which are noted below.
- Beef - I like to use a boneless sirloin tip roast for making these air fryer carnivore steak bites. Not only is this choice of beef an economical choice, but it is also lower in fat and easier to slice into cubes than other choices.
- Bacon Fat - I also save the rendered fat from my bacon and I love the smokey flavour that the bacon fat gives to this zero carb recipe. However, you can use tallow, butter or olive oil (although olive oil is NOT considered part of a carnivore diet as it is plant-based). If you want this to be a PSMF air fryer steak recipe, then omit the bacon fat altogether.
- Kosher salt and black pepper
- Optional ingredients - If you are not following a strict carnivore diet, then add some chili powder, garlic, onion powder and a pinch of brown sugar substitute for the perfect keto air fryer steak bites.
PSMF Air Fryer Steak Recipe Instructions

Step 1 - Preheat
- Preheat the air fryer at 400 degrees for 5 minutes
Step 2 - Season
- Cut the steak into 1-inch cubes and season with spices
Step 3 - Air Fry
- Air fry the steak bites for 6 minutes at 400ºF, shaking the air basket halfway
Step 4 - Make the Sauce
- Melt bacon fat (or tallow/butter) and mix with garlic powder, parsley flakes, and crushed red pepper.
- Toss the air-fried steak bites in the sauce and enjoy!
Can I make these steak bites without an air fryer?
Yep! Get a large skillet (cast iron if possible) with lots of surface area really hot before adding a little oil and the steak bites. Cook for 2-3 minutes before stirring to finish cooking, about 4-5 minutes total. A meat thermometer would come in clutch here.
Do I have to make the garlic sauce?
Absolutely not! Feel free to omit this ingredient and instead, simply dip these air fryer carnivore steak bites in some Easy Homemade Keto Carnivore Bacon Mayo

How do I make these more PSMF friendly
To make these more into a protein sparing modified fasting air fryer recipe, you can omit the fat and make sure to use a lean cut of steak.
What other types of beef can I use?
Top sirloin filet has 5g fat per 4 oz raw. You can also use round steak (7g fat per 4 oz raw), flank steak (9g fat per 4 oz raw), or skirt steak (14g fat per 4 oz raw). Note: Thinner cuts will cook faster.
How do I keep these air fryer carnivore steak bites nice and juicy?
When meat is cooked, its juices move towards the outside. So, if you’re tempted to dig in immediately (who wouldn’t be?), your meat will end up dry and tough. IT DOESN’T HAVE TO BE THIS WAY. Simply give it some time to rest (literally) and let those juices redistribute.
What are common steak temperatures?
You can add or subtract air frying time depending on how you like your steak bites. Don't forget that the steak temperature will rise by 5-10 degrees after being cooked.
Medium rare (pink)- 130-135 degrees
Medium (some pink)- 145-145 degrees
Well (tiny bit of pink)- 145-155 degrees
Well done (99% brown)- 155-165 degrees
What type of cooking spray should I use in my air fryer
Use Avocado Oil Spray not regular cooking spray.
Avocado oil spray has a higher smoke point so it doesn’t create that weird residue which is really hard to clean.
How do I ensure even roasting in my air fryer?
Don’t over crowd the basket. This is one of the most important rules when using an air fryer. When you overfill the air fryer basket it makes it hard for the air to circulate which results in soggy or unevenly cooked food.

Ingredients
For the Steak Bites
- 16 oz Top Sirloin Filet*, cut into bite-size pieces of about 1 inch
- ½ tbsp bacon fat (or tallow/butter)
- ½ tbsp tablespoon (6g) Brown Sugar substitute (optional - omit for carnivore diet)
- 1 tsp Kosher Salt
- 1 tsp Black Pepper
- 1 tsp Chili Powder
- ¼ tsp Garlic Powder
- ¼ tsp Onion Powder
For the Garlic Suce - Optional
- 1 tbsp bacon fat (or tallow/butter)
- ¼ tsp Garlic Powder
- ¼ Red Pepper Flakes
- ¼ tsp Parsley Flakes
Instructions
- Toss the steak pieces with the tallow. Mix the dry spices together and coat the steak in the seasoning. Set aside
- Preheat an air fryer for 5 minutes at 400ºF. Once heated, add the steak to the basket and air fry for 4 minutes and then shake the basket. Return and cook for an additional 2-3 minutes or to your desired doneness.
- While the steak cooks, melt the bacon fat (or tallow/butter) and mix in the garlic powder, red pepper, and parsley. Toss the finished steak in the sauce before serving.
- Optional - Top with blue cheese crumbles for an indulgent treat!
