Creating quick, easy and money-saving recipes and products, this gal knows a thing or two about the word "easy".
After reading her recipe on Congee (a rice porridge that is popular across East and Southeast Asia which she got from Cook's Illustrated), I knew I had to someday try to make this recipe into a low carb recipe.
To start, I decided to try her "Microwave-Fried Shallots" that are used as a topping for the congee.
And boy am I ever glad I did!
Crunchy, delicious bits of fried onions, all made in the microwave in under 8 minutes!
I used them as a topping to my favourite Asian Chicken and Noodle Salad as well as on top of my Quick and Easy Parmesan Roasted Broccoli and they added such a wonderful dimension to these dishes that I have since made these Micrwave-Fried Shallots over 5 times!
What ingredients do you need to make these Keto Easy Microwave-Fried Onions?
- cooking oil (vegetable or canola)
- shallots, thinly sliced
- salt and pepper to taste
How do you make these quick and Microwaved-Fried Onions?
- In a large glass measuring cup (I used my Pyrex glass measuring cup) add ½ cup oil
- Thinly slice 3 shallots and stir them in the oil
- Microwave the onions on "hi" for 5 minutes
- Stir the onions and microwave an additional 2 minutes
- Once onions start to brown, microwave in 30-second intervals until the desired texture and colour is reached
- Using a slotted spoon, remove onions and place them on a paper towel to remove any excess oil
- Sprinkle with salt and pepper
Can I use any other type of oil?
I have made these Microwave-Fried Shallots with canola oil and vegetable oil. I think you could make them with avocado oil as it has a high smoke point.
I would not suggest trying to make these with coconut oil as I do not believe they will work.
As for olive oil, it should work.
IF you try any oil other than vegetable and canola oil, I suggest you stay VERY close to the microwave just in case!
Can I use any type of onion?
You sure can!
I have used shallots, spring onions as well as sweet or Vidalia onions. The only difference between the onions is the amount of time it takes for the onions to become crispy. Viladias seem to take the longest and never got as crunchy as the shallots.
Regardless of which onion variety you use, just make sure that as soon as the onions start to brown, you reduce the time to 30-second intervals and you start to watch the onions carefully.
Trust me...I walked away from the microwave and the next thing I knew, the onions had gone from light brown to black!
How do I store these Keto Easy Microwave-fried Onions?
I store these onions in the fridge and they lasted at least 14 days. I think they could probably last longer but they are SOOOOO GOOOOD that I finished before I could see how long they actually could last!

Ingredients
- 3 shallots (thinly sliced)
- ½ cup vegetable or canola oil
Instructions
- In a large glass measuring cup (I used my Pyrex glass measuring cup) add ½ cup oil. Thinly slice 3 shallots and stir them in the oil

Notes
- Make sure you watch the onions closely when they start to brown as it only takes a couple of seconds for the onions to go from brown to burnt!
- You can reuse the onion for another batch of onions. Just store the oil in an airtight container for up to 3 days.
- The nutritional value is VERY difficult to measure as I am unsure of how much oil is absorbed by the onion. I am assuming that 1 tablespoon of onion absorbs about 1 teaspoon of oil.
