It is officially summer! I can not believe that we have already had the longest day of the year and that we have turned the corner to shorter daylight hours. And to help celebrate, I decided to create a Whole30 Loaded Mustard Vinaigrette Coleslaw.
For my fellow Southerners, we are hitting our peaks in terms of temperature and humidity. With temperatures well into the 90s, we only have a couple more months to go before we start to see some cooler weather.
As for my fellow Northerners, it appears that summer may be a little late this year. According to my parents in the province of Quebec, they have yet to have any steady temperatures in the 80s.
Regardless of whether you live in the North or the South, this Loaded Mustard Vinaigrette Salad is sure to please.
Why do I love this salad so much?
A) I do not have to turn on my oven or use my stovetop.
B) I can use ANY leftover meat such as chicken, pulled pork or even ground turkey.
C) Unlike creamy coleslaw recipes, this mustard vinaigrette is much lighter in both taste and calories.
D) Did I mention that I don't have to turn on my oven?:-)
How do you make this Whole30 Loaded Mustard Vinaigrette Coleslaw?
- Place all the vinaigrette ingredients in a medium-size mason jar and shook it until all they were blended.
- Next, open a bag of shredded cabbage and combine the vinaigrette with the cabbage
- Set it in the fridge to allow the flavours to blend.
When we were ready to eat, I simply took some leftover pulled pork and placed it under the broiler in the toaster oven to heat it and give it a little extra crispiness.
Finally, I simply loaded the pork onto the slaw and voila! The dinner was complete!
Fast, fresh and ridiculously healthy!
PS - I just finished having some leftovers for dinner tonight and it was maybe even better the next day!
