Super thick, absolutely delicious and ridiculously creamy, you think that this shake was filled with sugar, carbs and milk.
It COMPLETELY tastes like it is ice cream based...but it isn't!
One thing that you probably have been missing if you are on a dairy-free and low-carb diet is Milkshakes.
When I want a milkshake, I want it to be ultra-thick and creamy, so thick you can balance a spoon on it.
I want it to be thick enough that I can turn my shake upside down just like they do at Dairy Queen (although I wouldn't suggest doing this!).
Being the picky person that I am, I knew I had to create my own copycat version of the famous Shamrock Shake! And after creating this recipe, I don't have to wait until Saint Patrick’s Day to have one.
St. Patrick’s Day has always been one of my favourite holidays.
Being originally from Canada, St. Patrick's Day meant that spring was right around the corner.
And who doesn't love St. Patrick's Day food?
I always enjoy making my own Whole30 Homemade Pickling Spice and add it to some beef and make a quick and easy Instant Pot Corned Beef with Whole30 Dill Sauce and cabbage for dinner on this holiday.
But as a kid, I couldn't make it through the month without stopping at McDonald’s for their iconic Shamrock Shake.
And with this recipe creation, I no longer have to deny myself this AMAZING mint shake!

Why do I love this Keto Shamrock Mint Shake?
- tastes just as good (if not better!) than the McDonald's Shamrock milkshake
- it is ultra creamy
- it is dairy-free and sugar-free
- the green colour comes from avocado and not unhealthy food dye
- it is REALLY easy to make
- it only has 2.7 g of net carbs (a medium McDonald's Shamrock shake has 78g of sugar!!)

What ingredients do you need to make this Keto Shamrock Mint Shake recipe?
- Avocado – this adds the cream colour necessary for the shake as well as adds a perfectly creamy texture. And if you don't like the taste of avocado, don't worry as you can't taste it at all.
- Spinach - I am always looking at sneaky ways to get in an extra serving of vegetables...plus, it adds an extra punch of green colouring!
- Full-fat coconut cream – This adds some rich flavour to the shake and keeps it creamy and dairy-free
- Sweetener of choice– Use your favourite keto sweetener. I used monk fruit, and used 2 tablespoons but feel free to taste your shake and add more as needed.
- Xanthan Gum - this helps to make the shake UBER thick
- Mint Extract - this is where all the mint flavour comes from so make sure you buy a good quality brand
- Optional -
- Ice– feel free to add ice if you want an even super thick texture, without adding fruit or other thickeners.
- Scoop of your favourite protein powder - this is completely optional but if I want this shake to be a meal replacement, I will add a scoop of either vanilla or chocolate (hence the chocolate Shamrock shake pictures!)

What are the keys to making this Ultra-thick and creamy shake?
The key to making this shake ultra-creamy is a high-speed blender.
I have a Vitamix but I am sure that any good quality high-speed blender will do the trick.
Also, the addition of xanthan gum acts as a thickener so DON'T leave it out!

What is Xanthan gum?
Xanthan gum is a popular food additive that’s commonly added to foods as a thickener or stabilizer.
It’s created when sugar is fermented by a type of bacteria called Xanthomonas campestris. When sugar is fermented, it creates a broth or goo-like substance, which is made solid by adding alcohol. It is then dried and turned into a powder.
When xanthan gum powder is added to a liquid, it quickly disperses and creates a viscous and stable solution. This makes it a great thickening, suspending and stabilizing agent for many products.
In this recipe, to get, we are adding a little xanthan gum to get that REALLY thick milkshake texture without the addition of ice cream.
If you don't have any, you can omit it but the end product will be as thick and creamy.

Can I use Peppermint Extract instead of Mint Extract for this Keto Shamrock Mint Shake recipe?
It’s best to use the mint extract for this recipe rather than the more common peppermint extract.
The extracts actually have two different flavours, and the plain mint extract will get you closer to the taste of the McDonald’s shake.

Can I use Real Vanilla Extract instead of Imitation Vanilla Extract?
I don't suggest it.
Even though real vanilla is much better in baked goods (I actually make my own homemade vanilla extract), it does not work well in "no-bake" recipes.
Real Vanilla Extract contains alcohol. When you bake with real vanilla extract, the alcohol actually burns off and so you do not have any alcohol taste.
Since we are not baking this shake, if you use real vanilla extract, you will have a slight "alcohol" after taste.
Imitation vanilla does not contain the same ingredients and will not have an alcohol aftertaste like real vanilla.

How do you make this Copycat Dairy-Free Shamrock Mint Shake?
- Add half the coconut milk to the bottom of a good quality blender.
- Next, add the mint, avocado, spinach, vanilla and sweetener.
- Finally, add the remaining coconut milk and blend until thick and creamy.
- While the blender is running slowly add ⅛ teaspoon of xanthan gum
- If the shake is not thick enough, add an additional ⅛ teaspoon of xanthan gum or ice until desired thickness is reached.

Can you add protein powder to this Keto Shamrock Mint Shake?
Of course!
Adding some protein powder will make this keto shake into a meal replacement. Use any of your favourite shake companies in either a vanilla or chocolate flavour.
My favourite dairy-free protein powder is Orgain which you can buy online, on Amazon or at most health food stores (I actually bought mine at Sam's Club!)
Be sure to read the labels correctly, and choose a protein powder that has less than 1 gram of carbs per serving.

How do you make the drizzles down the side of the glass?
The drizzles are fun and SUPER EASY to make.
- Take a tall glass and place it in the freezer to get it nice and cold.
- Once the glass is cold, drizzle the chocolate syrup around the edges of the glass.
- Place the glass back in the freezer to harden as you prepare your Shamrock Mint Shake.
- Once your shake is done, remove the glass from the freezer and carefully pour the shake into the glass.
- Top the glass with whipped cream and drizzle with additional chocolate syrup.
My favourite sugar-free chocolate mint syrup is NuNaturals Cocoa Mint Syrup.

Tips, Tricks and Substitutions:
- The amount of coconut milk suggested is simply an estimate, and yields a thick and creamy texture. For a thinner texture, you can add more coconut milk or any other milk substitute.
- If you choose to enjoy a shake as a meal replacement, feel free to add a scoop of protein powder.
- If you don't have issues with dairy, feel free to use heavy cream instead
- make sure that you add the xanthan gum slowly as too much of it will make the shake much too gooey
- make sure to add the xanthan gum while the blender is running otherwise it can clump together.
- if you want a super green shake, feel free to add an additional 5-10 drops of green food dye (or 3-4 drops of concentrated green food dye gel)
- do not use REAL Vanilla Extract - only use imitation vanilla.
- if you don't like avocado, use all spinach instead but you will need to add some ice for the extra thickness

This Keto Shamrock Mint Shake - Dairy-free is the most amazing homemade and healthier version of the McDonald's Shamrock Milkshake! Ingredients
- ⅔ cup full-fat coconut cream (or unsweetened almond milk)
- 4 tablespoons (2 oz.) avocado
- 1-2 cups fresh spinach
- 2-4 tablespoon allulose (or other sweeteners of choice)
- ½ teaspoon imitation vanilla extract
- ⅛ teaspoon pure mint extract (add more if you want)
- ⅛ tsp xanthan gum
- ½ cup ice (OPTIONAL)
- OPTIONAL - Whipped cream for topping and Stevia Chocolate Mint for drizzling
Instructions
- If decorating the glass, pour syrup along the edges of the glass and place the glass in the freezer.
- In a blender, combine the coconut milk, vanilla extract, mint extract, sweetener, spinach and avocado. Process until smooth, about 30-60 seconds.
- With the blender still running, slowly add ⅛ teaspoon of xanthan gum. Process for 30 seconds. If the mixture seems too thin, add an additional ⅛ teaspoon of xanthan gum.
- If the mixture seems too thick, add some additional liquid (either almond milk or any other milk of choice)
- Remove the glass from the freezer and pour the shake into one large or two small glasses. If desired, top with sugar-free whipped cream and a drizzle of chocolate syrup!
