This is the best Keto Dairy-Free Pizza Crust I have yet created. Not only does it come together in minutes but using eggplant in the crust creates a texture that is very similar to regular gluten-based pizza crusts. This crust is also gluten-free, Paleo, Whole30 and plant-based.
This is another of My Crash Test Life's completely original recipe and I am SO proud of it.
Let's face it, coming up with completely "unheard" of ideas is not that easy.
Don't get me wrong, every recipe (unless stated) is the completely original and has not been copied from another website.
However, we have all heard of pizza crusts made from wheat, cauliflower and even a "fat head" pizza crust that is comprised of mozzarella cheese and cream cheese.
But have you heard of an Eggplant Pizza Crust?
I didn't think so...but now you can say you have.
A handful of ingredients come together quickly to create this awesomely delicious and completely nutritious pizza crust!
What makes this Eggplant Pizza Crust so amazing?

- it does not contain any dairy!!
Most gluten-free pizza crusts such as most cauliflower pizza crusts or "fat head" pizza crust contain a TON of cheese in the crust as well as on top of the pizza. In fact, "fat head" dough uses not only mozzarella cheese but ALSO cream cheese!
Now don't get me wrong, I am not afraid of eating fat (hence a "keto" based blog!) but I am not sure that eating over 2 lbs of cheese in one meal is actually good for you!
Why use Eggplant to make this crust?

As for the nutritional value of eggplant, a 1 pound eggplant has only 88 calories, 0.7 grams of fat and 21.1 grams of carbohydrate (less than two slices of bread), 12.5 grams of fibre, and 3.7 grams of protein.
The net carbs for an ENTIRE eggplant are only 8.6 g!!!
As for this Eggplant Pizza Crust, a single slice is only 63 calories and only 2.6 g of net carbs.
What ingredients do you need to make this Keto Dairy-Free Pizza Crust?
- medium-large eggplant (about 1.25 lbs or 560 g)
- olive oil
- salt
- flax egg
- almond flour
- Italian Seasoning (or any other seasonings)
What is a "flax egg"?
A "flax egg" is simply a ground flax meal mixed with water. When you mix water with ground flax meal, the flax takes on a gelatinous texture that acts as an egg to bind ingredients together.
If you don't want to make a flax egg, you can simply replace it with 1 extra-large egg.
How do you make this Keto Dairy-Free Pizza Crust?
- Prepare the flax egg by combining the water with the ground flax meal. Stir and set it aside for at least 5 minutes.
- Slice the eggplant into cubes. Toss in olive oil and salt.
- Add eggplant to the air fryer and set on 400 degrees for 20 minutes.
- Once cooled, add eggplant to a food processor and turn it on until eggplant is pureed.
- Add in all other ingredients and process until all ingredients have been fully incorporated.
- On a parchment-lined pizza sheet, spread eggplant evenly (about ¼th inch thick)
- Place in the oven for 25 minutes. Remove it from the oven, flip it over and return it to the oven for an additional 5 minutes.
- Flip the pizza crust back over, add your favourite toppings and return it to the oven until the toppings have been fully heated.
What toppings can you add to this Keto Dairy-Free Pizza Crust?
- Make it Mexican with ground taco meat and cheddar cheese
- Make it plain by simply adding cheese and pepperoni
- Keep it dairy-free by using Daiya shredded cheese
- Add pesto and chicken for a different spin

Keto Dairy-Free Eggplant Pizza Crust

Ingredients
- 1 medium-large eggplant (about 1.25 lbs or 560 g)
- 1 tbsp olive oil
- 1 tsp salt
- 2.5 tbsp flaxmeal
- 4 tbsp water
- ⅓ cup almond flour
- 1 tbsp Italian Seasoning (or any other seasonings)
Instructions
- Preheat the oven to 450 degrees F.
- Combine flax and water, stir to combine and set it aside for at least 5 minutes (or up to 30 minutes)
- Slice the eggplant into ¼ inch rings. Toss in olive oil and salt.
- Add eggplant to the air fryer and set on 400 degrees for 20 minutes.
- Once cooled, add eggplant to a food processor and turn it on until eggplant is pureed.
- Add in all other ingredients and process until all ingredients have been fully incoporated.
- On a parchment lined pizza sheet, spread eggplant evenly (about ¼th inch thick)
- Place in the oven for 25 minutes. Remove it from the oven, flip it over and return it to the oven for an additional 5 minutes.
- Flip the pizza crust back over, add your favourite toppings and return it to the oven until the toppings have been fully heated.
Notes
- Do NOT skip the "prebaking" step otherwise, you will end up with a soggy crust...Trust me, I tried it!
- If you don't have an air fryer, simply use the oven instead
