Do you love dips or ever crave a good plate of nachos? I do! Although you can use sliced vegetables as "chips" for both of these foods, I still miss the saltiness and crunch of a good old tortilla chip. Now, you may be asking yourself, what is so wrong with a tortilla chip made from corn?
Well, first off, it is not considered Whole30 or Paleo approved. Like all grains, corn contains prolamins, which are a class of proteins that your body can’t properly break down. If your gut can't break down a food, it can lead to or exacerbate leaky gut as well as increase the growth of bad bacteria in your digestive system.
A study conducted by Harvard scientists in 2015 stated that corn was the worst vegetable on the market. Corn is a very starchy food which means it has a high glycemic load which in turn produces frequent and intense blood sugar spikes after it is eaten. For anyone with insulin sensitivities, this is a major problem.
Finally, almost of all the corn grown in the US is genetically modified. First note that not all genetic modification of food are bad. However, when it comes to corn, the plant has been genetically engineered to express agriculturally-desirable traits, including resistance to pests and to herbicides. What does that mean? Farmers can spray their crops with tons of chemicals and the corn plant will still survive!
Although hard to find, organic corn does exist. So if you do want to have some, make sure you do your research first to confirm that it is truly organic.
Now does it now make sense why I don't eat corn?!
This recipe is made with only 3 ingredients so there is no excuse not to make organic and healthy corn-free tortilla chips that the whole family will enjoy!
The Execution
In a large bowl, whisk the almond flour to make sure that there are not any clumps.
Next, pour in the liquid egg whites and squeeze a ½ a lime into the mixture and stir to combine. I also added a little salt and some cumin to my mixture as well so technically, this is a 5 ingredient recipe!
Place the dough between 2 large sheets of parchment paper and roll the dough to a thin consistency. I use my pastry rolling pin so that I can make sure to keep the entire rectangle to about ⅛th thickness. This mini rolling pin is only $3.21 on Amazon and ships for free with any $25 purchase! Definitely worth it as you will use it time and time again.
Finally, pull back the top piece of parchment paper and using a sharp knife, cut the the rectangle into triangular shapes.
If I am going to be using these chips for a dip, I will sometimes roll them our a little thicker to make sure that they will be able to scoop up the dip without breaking!
Finally, bake these chips in the oven and that's it... 3 ingredient, super simple corn free tortilla chips!
These can be served with my Deliciously Easy Baked Ricotta or with my Pesto Goat Cheese Gratin.

3 Ingredient Tortilla Chips (Whole30, Paleo, Gluten Free, Low Carb)
Egg whites, almond flour and a squeeze of a lime is all you need to make this healthy, Paleo, low carb, Whole30 approved tortilla chips.
- Total Time: 15 minutes
- Yield: 8 servings 1x
Ingredients
- 2 cups almond flour
- 2-3 egg whites (100 grams)
- ½ - 1 tablespoon lime (depending on your tastes)
- 1 tsp salt (adjust to taste)
- ½ tbsp cumin (optional)
Instructions
- Preheat oven to 350 degrees F.
- Whisk the flour in a large bowl to ensure there are not clumps.
- Add egg whites and spices and stir to combine.
- Place mixture between 2 large sheets of parchment paper. Roll out dough to desired thickness and remove top piece of parchment paper.
- Using a sharp knife, cut triangles throughout dough. Place parchment on baking sheet and place in oven.
- Bake for 10 minutes or until edges are starting to brown.
- Break into pieces and enjoy!
