A couple of years ago, I stumbled across a Grain-Free Dressing by Detoxinista and it quickly became one of my favourite Thanksgiving side dishes.
If I loved it so much, why on earth would I want to "remake" something so good?
Well, the problem that I have with this recipe is the amount of preparation it requires.
In the past, I have actually opened my office and treated patients on the morning of Thanksgiving. Believe it or not, it is one of my favourite days to work. Everyone is in good spirits and the morning seems to fly.
Keeping that in mind, when I get home from work, I want to be able to quickly assemble a Thanksgiving meal that tastes delicious but is not time-consuming.
That's where this Grain-Free Stuffing recipe comes in. It is not only gluten-free but also dairy-free, nut-free, Whole30 and Paleo approved. Omit the ground turkey sausage and you can have a Vegan version as well.
Filled with tons of healthy vegetables, you can easily serve this dish at Thanksgiving knowing full well that there is a 99% chance that everyone at the table, regardless of dietary restrictions, will be able to enjoy this dish.
But what about the taste?
ABSOLUTELY DELICIOUS!!!

How to make Grain-Free Stuffing
Step 1:
Cook the sausage and as the sausage is cooking, chop up the vegetables.
Once the sausage has cooked, remove it from the skillet and set it aside. Do not remove any of the leftover grease as this will add flavour to the vegetables. Using the same skillet, add all the chopped vegetables and cook until the vegetables soften.
Step 2:
Once the vegetables have softened, add the vegetables to the sausage and mix thoroughly. Place the stuffing in a large baking dish and bake for 30 minutes to help the flavours combine.

Ingredients
- 1 lb sausage (make sure it is Whole30 approved - Omit for vegan recipe)
- 10 oz. celery, chopped
- 180 g onion (medium), chopped
- 8 oz mushrooms, chopped
- 12 oz riced cauliflower
- 400 g daikon radish, chopped
- 4 tbsp ghee
- 2 tbsp garlic, minced
- 2 tbsp poultry seasoning
- 1 tbsp sage, dried
- 1 tsp salt
- ¼ tsp pepper
Instructions
- Preheat oven to 350 degrees F. Grease a 9 x 11 baking dish.
- Heat a large skillet on medium heat and add ground sausage. Cook thoroughly. Once cooked, remove sausage with a slotted spoon and place in a large bowl. Leave the sausage drippings in the skillet.
- Add vegetables, butter and seasoning to the skillet. Continue to cook until vegetables soften (about 20-30 minutes)
- Once vegetables have softened, remove from heat and add to sausage mixture. Stir until combined and place in baking dish.
- Cook in oven uncovered for approximately 30 minutes to allow flavors to combine.
