I am calling this recipe Lemon Chicken even though it is based on a Lemon Picatta recipe because I was afraid that Mr. Grumbles may not have tried it if I used fancy words!
And did Mr. Grumbles like this dish?
He sure did! He actually declared it to be one of his favourites!
As we all know how picky Mr. Grumbles is, this is a HUGE statement.
What is even more shocking is how absolutely easy this recipe is to make.
Using a pressure cooker (I love my Ninja Foodi), this Whole30 5-Ingredient Lemon Chicken was a breeze to make.
What is Chicken Piccata?
Chicken piccata is nothing more than chicken breast cutlets, dredged in flour, browned, and served with a sauce of butter, lemon juice, capers, and white wine.
How do you make this Lemon Chicken Whole30 and Paleo approved?
- brown the chicken and omit the flour
- use olive oil instead of butter
- use chicken stock instead of white wine
What ingredients do you need to make this Whole30 Instant Pot 5-Ingredient Lemon Chicken?
- chicken breast, butterflied
- a lemon (half squeezed and half thinly sliced)
- chicken stock
- capers, rinsed
- coconut aminos
- salt, pepper and garlic to taste
What are capers?
- Capers are actually little flower buds.
- They come from a plant called a Finders Rose (or Caper Bush, for the less creative).
- Capers are extremely bitter when eaten right off the bush.
- Capers are packed in a salty brine, so over time, the bitterness mellows out.
- Capers should be rinsed before being used in order to wash off some of the salt
How do you make this Lemon Chicken in an Instant Pot?
- Take each butterflied chicken breast and season with salt, pepper and garlic
- Set pressure cooker to "saute - Hi"
- Once hot, add chicken breasts, 2 at a time to not overcrowd
- Cook for 3 minutes on each side or until brown.
- Remove chicken and repeat with remaining chicken breasts until all chicken has been browned.
- While chicken is cooking, combine chicken stock, capers, lemon juice and coconut aminos.
- Stir to combine.
- Once all chicken has been cooked and removed from the pressure cooker, turn pressure cooker off and add liquid, using a wooden spoon to scrape off any brown bits on the bottom of the pan.
- Place chicken on top of liquid and top with sliced lemon
- Set Instant Pot to "Pressure Cook - HI" for 5 minutes. Allow to release naturally for 10 minutes and then manually release it if necessary.

- 1 lemon (half squeezed and half thinly sliced)
- ½ cup chicken stock
- ¼ cup capers, rinsed
- 2 tbsp coconut aminos
- salt, pepper and garlic to taste
