When I stumbled upon the classic version of this cake on Bake From Scratch, I was immediately intrigued by its elegant layers, airy texture, and creamy filling.
However, being keto for health and habit reasons meant that traditional sugar wasn't going to cut it. So I embarked on a fun kitchen experiment: convert this French molded cream cake into a keto, no-bake delight.
This project combined my love of classic European desserts with my passion for making them accessible to anyone on a keto or low-carb eating plan.
What started as curiosity turned into an obsession, and now I want to share every delicious detail with you.
On my first attempt, this keto molded cake held its shape, but once I started slicing it, I realized it wasn’t quite firm enough. I was also disappointed that some of the cake stuck to the serving plate.
So, for my second attempt, I used my Easy Keto Eggless Snacking Cake recipe and added black cocoa powder to create a bottom layer. This not only improved the structure, but also ensured that not a single piece of the French vanilla molded cake was left behind.
Next, while I do enjoy vanilla, I find the flavour on its own can be a little too subtle. By adding my 5-Minute Keto Strawberry Sauce on top, the taste went from “nice” to a full-on OMG, dance party in my mouth.

Whether you decide to make the chocolate bottom layer, the strawberry topping, or both, this cake is absolutely worth making—any way you choose.
A Little History: Keto French Vanilla Molded Cream Cake
The French molded cream cake has roots in classic French pastry traditions where texture and balance matter as much as flavour.
Often made with layers of biscuit or sponge and filled with rich creams or mousses, these cakes showcase the smooth, delicate contrasts that French desserts are known for. Many versions are chilled rather than baked, highlighting a cool, creamy consistency that melts in your mouth.
When I first saw the Bake From Scratch version, I loved how it combined light cake layers with rich cream. My challenge (and joy!) was to preserve that indulgent experience while making it keto and no-bake—eliminating sugar and flour without losing flavour or texture. And let me tell you, the result is absolutely worth it.

Gluten-free French Vanilla Cake Ingredients
Below are the ingredients I used from the original recipe, modified to fit keto and low-carb needs. I also chose to make half the original recipe size so this cake would be more manageable and just right for sharing (or savouring slowly on your own!).
- Almond Flour - A keto staple, almond flour forms the base of the cake. It’s gluten-free, low carb, and gives a tender, moist crumb that pairs beautifully with creamy fillings.
- Cream Cheese - This provides richness and structure to the creamy layers. When whipped with sweetener and flavourings, it becomes velvety and decadent without added sugar.
- Heavy Cream - Heavy cream is essential for a luscious texture. Whipped into the mixture, it helps create a light, airy filling that balances the denser almond base.
- Vanilla Whey Protein Powder - I added one scoop (30 grams) of vanilla whey protein powder to not only add additional protein to this recipe but to also augment the "vanilla" flavour profile.
- Keto Sweetener - Whether you choose erythritol, monk fruit, or allulose, this keeps the dessert sugar-free and low carb while still offering sweetness. Note: Allulose may brown or caramelize slightly if heated, but because this is a no-bake dessert, that effect is minimal—just be mindful if you’re adjusting textures.
- Gelatin - Gelatin is a secret weapon for no-bake cakes. It helps the filling set nicely while maintaining a soft, smooth texture that won’t collapse.
- Vanilla bean paste - classic vanilla intensifies sweetness and complements both the nutty almond base and creamy filling. I scraped the vanilla bean pods from my DIY Homemade Vanilla Extract, but you can also buy vanilla bean paste here.
Optional Ingredients:
- Strawberries (Fresh or Thawed Frozen) - For a fresh, vibrant layer of flavour, strawberries add natural sweetness, colour, and a bright counterpoint to the rich creamy layers.
- Eggless Snacking Cake - Simply remove teh cinnamon and replace ¼ cup of almond flour with ¼ cup black cocoa powder or regular cocoa powder

Sugar-free Molded Cake Instructions
Here’s a high-level overview of the process—simple enough to follow, elegant enough for a special occasion:
- Prepare the Cake Base (purely optional!)
- Combine the eggless snacking cake mix and pour it in the same mold pan that you will be using for your French vanilla molded cream cake. Bake for 15 minutes, remove and pop the cake out and allow it to cool.
- Activate Gelatin
- Bloom gelatin in cold water - let stand for 5 minutes
- Make the Keto French Vanilla Cream Cake
- In a medium saucepan, cook yogurt, cream, and sweetener over low heat, whisking frequently, until sugar dissolves and mixture is warm. Whisk in gelatin mixture until dissolved. Remove from heat, and let cool for 5 minutes.
- In the bowl of a stand mixer fitted with the whisk attachment, beat cream cheese at medium speed until smooth and creamy. With mixer on low speed, gradually add yogurt mixture, vanilla protein powder and vanilla bean paste; thoroughly scrape whisk and bottom and sides of bowl. Beat until smooth and well combined
- Pour into Mold
- Lightly spray an 4- to 5-cup mold or fluted tube pan with cooking spray. (See Note.) Pour mixture into prepared pan; cover and refrigerate until set, at least 6 hours, preferably overnight.
- Add the Cake Layer - OPTIONAL
- Flip the eggless cake over and place it on top of the cream cake, pressing it slightly down into the cream.
- Cover and refrigerate for several hours (or overnight) to let the mold set firmly.
- Serve
- Once set, unmold carefully - fill a large bowl with warm water. Submerge bottom of mold or pan into warm water for about 2 minutes. Remove from water, and gently dry bottom of mold or pan. Place a serving platter on top of mold or pan, and invert together to turn out.
- Slice with a sharp knife (dipped in hot water for cleaner cuts) and garnish with strawberry sauce or a light dusting of powdered keto sweetener if desired.

- 10g unflavoured gelatin
- 1 cup (120 g) plain whole Greek yogurt
- 1 cup (240 g) heavy whipping cream
- ¾ cup (150 g) allulose sweetener
- 8 oz (225 g) cream cheese, softened
- 30 g vanilla whey protein powder
- 2 tsp vanilla bean extract

- Prepare cake and strawberry sauce if using and set aside.
- In a medium bowl, place cold water. Sprinkle gelatin over the top and let stand until water is absorbed and gelatin has fully bloomed, about 5 minutes.
- In a small saucepan, cook yogurt, cream and allulose over low heat, whisking frequently, until allulose has dissolved and the mixture is warm. Whisk in gelatin mixture until dissolved. Remove from heat and let cool for 5 minutes.
- In a bowl of a stand mixer fitted with the whisk attachment, beat cream cheese at medium speed until smooth and creamy. With mixter on low speed, gradually add yogurt mixture, vanilla whey protein powder and vanilla bean. Scrape the whisk and the bottom and sides of the bowl. Beat until smooth and well combined.
- Lightly spray a 4-5 cup mold or fluted tube pan with cooking spray. Pour mixture into prepared pan (if using, gently place cake layer on top of cream, pressing down slightly); cover and refrigerate until set, at least 6 hours, preferrably overnight.
- When ready to serve, fill a large bowl with warm water. Submerge the bottom of the mould or pan into water for about 2 minutes. Remove from water, and gently dry the bottom of the mold or pan. Place serving platter on top of mold pan and invert them together to turn out. Spread strawberry sauce overtop of pan (if using). Refrigerated in an airtight container for up to 3 days.
