These keto bourbon nuts are SO addictive and SO delicious. They’re no fuss, quick, easy, and sure to impress.
What makes them even better is how easy they are to make. All you have to do is let the nuts soak in your favourite bourbon, then toss them with some sweetener and throw them in the oven. That’s it! Which is why this recipe is perfect for any last-minute holiday gatherings or gifts!

What sort of nuts and spices should I use?
For my recipe, I used walnuts but feel free to use any nut you like. The great thing about walnuts is that they are not only one of the less expensive nuts, but they also have all kinds of nooks and crannies which means that the bourbon can really infuse the nut.
Sometimes, I have added a dash of cinnamon or cayenne pepper in this recipe as it adds a different twist to this recipe, but feel free to play around with your own combinations.
Holiday gift tip - I also think it would be a fun idea to scoop some into gift bags and attach it to a bottle of your guests favourite bourbon!
Keto Candied Bourbon Nut Ingredients
Pretty simple ingredients is all that is needed for this simple keto nut recipe:
- Raw Walnuts - You can choose any type of nut or seed but walnuts are a great keto choice!
- Bourbon - Feel free to use a lower quality bourbon for this recipe as no one will be able to tell so save the good stuff to sip alongside these keto bourbon nuts.
- Sugar-Free Syrup - I like to use sugar-free maple syrup but you can use any flavour you wish. Be careful with allulose based syrups as allulose has a tendency to brown much quicker than any other sugar-free substitute.
- Olive Oil - Just 1 tablespoon is all you need!
- Sweetener - I like to use a brown sugar substitute for the mild caramel flavour but feel free to use any type of sweetener. You will add some sweetener to the nut mixture before they go into the oven and then I like to sprinkle on additional sweetener as soon as they come out of the oven. Not only does this allow you to adjust the sweetness but it also gives these keto candied bourbon nuts some additional texture!
- Salt - I like to use a combination of Kosher salt for when the nuts are baking and then I like to sprinkle some additional Maldon salt once they come out of the oven! Feel free to use any salt but make sure that you adjust the salt according to your taste buds.
- Ground Cinnamon and Cayenne Pepper - Use a good quality cinnamon and feel free to adjust your the amount of cayenne pepper up or down depending on your taste!
Keto Candied Bourbon Nut Instructions
Here are the steps for making these sugar-free candied nuts:
Step 1 - Soak the nuts - Optional
- Place the nuts in a medium size bowl and add ½ cup of bourbon to the bowl. Toss to coat and cover with saran wrap for anywhere from 30 minutes to 60 minutes. (Tip - the longer you soak the nuts, the stronger the bourbon flavour!)
Step 2 - Add the remaining ingredients
- Add the remaining ingredients into the bowl with the nuts and whisk to mix.
- Spread the mixture onto a parchment-lined baking sheet (Tip - don't worry if there is a puddle of liquid from the sugar-free syrup and bourbon mixture)
Step 3 - Bake and Taste
- Bake in preheated 325 degree oven for 10 minutes, then stirring every 5 minutes until the liquid is gone for a total of about 25 minutes.
- Remove from the oven and carefully (the nuts will be VERY hot!) taste a nut - sprinkle additional sweetener or salt to taste

How long do these nuts last? Should they be stored at room temperature or in the fridge?
They will last up to 4 weeks at room temperature if kept in an air tight container.
My nuts came out a little charred. At what setting should I have kept the oven?
Your oven may run too hot, or you can try taking the nuts out a bit earlier. Keep an eye on them as they bake very quickly!
How can I get a more pronounced bourbon flavour?
If you want a stronger bourbon flavour, you can soak the nuts for 30-60 minutes in some bourbon before using them in this recipe.

- ¼ cup sugar-free maple syrup
- 1 tbsp olive oil
- 1 tbsp bourbon
- 1 ½ tsp kosher salt
- ¼ tsp cinnamon
- ¼ tsp cayenne pepper - optional
- 1-2 tablespoon erythritol-based sweetener - optional
- 1 tsp flake Maldon salt - optional
Instructions
- Start by simply placing all ingredients (except nuts) in a medium to large bowl, whisk to mix.
- Add nuts and stir to coat the nuts evenly with the liquid and spice mixture.
- Pour onto parchment lined baking sheet and spread evenly in one layer, the maple bourbon slurry might puddle, but don’t worry.
- Bake in preheated 325 degree oven for 10 minutes, then stirring every 5 minutes until the liquid is gone for a total of about 25 minutes.
- Optional - For a sweetener candied nut, sprinkle additional erythritol-based sweetener over the nuts when they first come out of the oven, if desired.

- if you want a stronger "bourbon" flavour, soak the nuts in ¼ cup of bourbon for 30-60 minutes before adding remaining ingredients
- nuts can burn quickly so make sure you check on them regularly near the end of the bake.
