Keto Creamy Tomato Soup
You will love how easy this is to make! This awesome soup recipe is perfect for a cold winter day. And, when all you have to do is simply throw a few ingredients together in a pot, only to come out with a warm creamy bowl of comforting soup in minutes, this will quickly become a recipe that you make over and over!
I have been tweaking my tomato soup recipe for years until I have finally created a recipe that is simple to make, healthy, and comforting. With a couple of ingredient swaps, this soup can be made dairy-free, and can also be filed under "Whole30 Soup" as well as "Paleo Soup recipe".
Saute some onions (and bacon if you want!) into a big pot, then throw in some canned tomatoes, add some spices and herbs, and then simmer until done. Blend with a little cream or coconut milk, and you are done. If you are looking for a chunkier easy Whole30 soup which is also a Paleo Soup recipe as well, then try my Leftover Ham Bone Soup (it’s made with lots of veggies and a light ham bone broth).
This soup comes together quickly. It’s also light on the prep. This Keto Creamy Tomato Soup is also very easy to adapt. Make it gluten-free, vegetarian, or vegan. I’ve shared how to make the changes below so keep reading!

Keto Tomato Soup
Nothing beats a warm bowl of creamy tomato soup with crunchy bits of garlic pork rind croutons floating on the top. Full flavoured with garlic, onions and herbs subtle enough to shine through and compliment the natural flavour of tomatoes without overpowering it.
I can almost guarantee that you may already have the necessary ingredients in your kitchen, which means you are only minutes away from a satisfying bowl of keto-creamy goodness!
And if you thought that you couldn't have soup on a keto diet, this keto creamy tomato soup will show you that you can! Although higher in carbs than my Keto Dairy-Free broccoli cheddar soup, this soup has about 3.5 grams of net carbs per serving. Compared to Campbell's Creamy Tomato soup which contains 32 grams of carbs, this keto tomato soup can easily fit into a keto diet. You can also change the macros by decreasing the number of tomatoes used in this recipe and replacing it with more cream.
Ingredients for Keto Tomato Soup
Creamy Tomato Soup from scratch has a depth of flavour that is so different from canned soup.
Just a handful of ingredients needed to make your keto tomato soup
- Tomatoes - I used canned tomatoes since it was just easier especially since tomatoes are not in season right now. Make sure that when you pick your canned tomatoes that you check out the ingredient list and make sure that the company has not added any sugar. Two of the lowest carb brands are Natural Value or Bella Terra which you can find at Whole Foods.
- Onion - I used a small sweet onion but any onion or shallot will work. If you want to omit the onion, you could always use onion flakes instead.
- Herbs: The best herbs we have found over the years to compliment those incredible flavours is a combination of garlic, oregano and basil. Of course, if you don’t like those, you can also use rosemary, thyme, parsley, chives or cilantro. Use what you love or what you have on hand!
- Cream: I used heavy cream in this recipe but half and half or light cream will all yield similar results, however heavy cream adds richness. You could always experiment using sour cream or cream cheese as well but I have not tried it so I could not tell you how much to add.

Keto Garlic Pork Rind Croutons
Although these garlic pork rind croutons are completely optional, I really like the added crunchy texture. Plus, since they are so easy to make and taste delicious, I often make a large batch and snack on them or use them as a topping for a salad.
To make the keto garlic pork rind croutons, simply toss some pork rings with a little olive oil, garlic and parmesan cheese. Place them under the broiler for about 3-5 minutes, stirring them halfway.
If you don't have any parmesan cheese, you can completely omit this ingredient. Also, feel free to use any type of seasoning that you have on hand.
Making Keto Creamy Tomato Soup Whole30, Paleo and Vegan Approved
If you need to leave out the cream and make this creamy soup dairy-free, you can substitute it with coconut milk instead. Just be careful not to bring it to a rapid boil as, like all milk products, it may curdle. Go with a very gentle simmer over low heat for about a minute to heat it through.
You can also try and use rice cauliflower instead of the cream. Pureed riced cauliflower will add some thickness to the soup but not as much creaminess.

Make Ahead Tips
Believe it or not, I actually prefer this soup after a day or two. You can refrigerate the soup for up to 5 days or, freeze it in individual containers for up to 3 months. The soup may become very thick after freezing. When reheating, you can always add additional water or cream to thin the soup out a little.
Also, remember to SLOWLY heat the soup after it has been frozen. IF you heat the soup too quickly, some of the soup may come to a boil before all of the soup has been warmed. This can result in some of the cream curdling.
Do not add the keto garlic pork rind croutons until right before serving as they will go mushy quickly.

Keto Creamy Tomato Soup with Garlic Pork Rind Croutons
How to make quick and easy Keto Creamy Tomato Soup with Garlic Parmesan Pork Rind Croutons with only one pot and under 35 minutes from start to finish! The deep rich and creamy flavours of a classic homemade cream of tomato soup recipe can’t be beaten, especially when it’s ready in minutes. You’ll never open another can of tomato soup after trying our recipe!
- Total Time: 35 minutes
- Yield: 8-10 servings 1x
Ingredients
For the Keto Creamy Tomato Soup
- 1 tbsp unsalted butter
- 1 tbsp olive oil
- 1 small onion, diced
- 3 garlic cloves, minced
- 5 cups whole tomatoes in their juice (about 3-14 oz cans)
- 1 cup heavy cream
- 2 tbsp erythritol
- ¼ tsp red pepper flakes
- ¼ tsp dried oregano
- salt and pepper to taste
For the Garlic Parmesan Croutons
- 1 cup pork rinds
- 1 tbsp olive oil
- ¼ tsp garlic powder
- ¼ cup Parmesan cheese
Instructions
Prepare the soup
- In a large saucepan, melt 1 tablespoon of the butter in 1 tablespoon of olive oil. Add the sliced onion and smashed garlic and cook over moderate heat, stirring occasionally, until softened about 5 minutes. Add the tomatoes and their juice, the water, heavy cream, sweetener, crushed red pepper, and oregano and season with salt and pepper. Bring the soup to a boil over high heat, breaking up the tomatoes with the back of a spoon. Reduce the heat to moderate and simmer for 10 minutes.
Prepare the Croutons
- Meanwhile, in a small oven-safe dish, mix the olive oil, pork rinds, garlic powder and Parmesan cheese. Turn the oven on "Broil-Hi". Place the dish in the oven for 3-5 minutes, stirring halfway through or until the pork rinds begin to brown. Set the dish to the side.
Finish the Soup
- Working in batches, transfer the tomato soup to a blender and puree until smooth. Alternatively, you can use an immersion blender and blend the soup in the pot. Return the soup to a clean pot and rewarm the soup if necessary. Season the soup with salt and pepper. Ladle the soup into bowls and serve with the croutons.
Notes
- Only add the croutons right before serving as they will get soggy
