I started experimenting with this recipe when I realized how few clean, protein-rich treats existed that didn’t taste chalky or artificial. Most protein bars on the market are either loaded with sugar alcohols or filled with ingredients I can’t pronounce.

Millionaire Protein Bars Ingredients and Substitutions
You really don't need that many ingredients to make these sugar-free millionaire bars. However, if you are missing some of the exact ingredients, I am including substitutions that I believe will work. But, since I have only made it with the exact ingredients listed in the recipe card, you might need to adjust some of the substituted ingredient quantities.
- Pea Protein Powder - As I mentioned earlier, I used Plain Naked Pea Protein powder. All protein powders have a variety of flavours as well as absrobency of wet ingredients so you may need to adjust the wet ingredients to accommodate the change. You can also use vanilla or a flavoured pea protein powder but I would suggest you decrease the quantity of sweetener in the crust. I also think that casein would work well but I do not suggest whey.
- Almond Flour - Use super-fine almond flour if possible. You could try using a 1:1 gluten-free baking blend instead of the almond flour or try oat flour.
- Coconut Oil - Using such a small amount of coconut oil does not lend any flavour to the crust. However, if you do not have any coconut oil, you could try using butter or a plant-based butter to make these a vegan healthy chocolate caramel protein bar!
- Sweetener - Any type of sugar substitute will work. Feel free to use regular sugar as well.
- Peanut Butter - You can use almond butter, sunflower seed butter or cashew butter instead.
- Sugar-free Maple Syrup - Adding the sugar-free maple syrup to the peanut butter along with the collagen, creates the texture and taste we are looking for in these keto millionaire bars. You can use sugar-free honey or tapioca fiber syrup instead.
- Naked Caramel Collagen - I LOVE this product and highly suggest you order it RIGHT NOW! However, if you are dying to make these and don't want to wait for your order to arrive, you can use any collagen powder you wish. If your collagen powder is plain, you may need to add some additional sweetener and a dash of caramel extract to get the caramel flavour.
- Sugar-free Chocolate - You can use any type of sugar-free chocolate or regular chocolate for the topping.
- Salt and Vanilla
Healthy Chocolate Caramel Protein Bar Recipe
I made these keto millionaire bars in an 8 x 4 lined loaf pan. Feel free to double the ingredients and make them in an 8 x 8 inch baking pan instead if you wish!
Step 1 - Make the Pea Protein Base Layer
- Mix all base ingredients in a bowl until a dough forms. Press into a parchment-lined loaf pan. Tip - if the mixture will not stick together, add 1 teaspoon of water at a time until it sticks to itself

- Bake at 350 degrees F. for 10-12 minutes or until the edges just begin to brown.
Step 2 - Make the Collagen Caramel Layer
- Melt the peanut butter and sugar-free maple syrup together in the microwave for about 30-60 seconds. Stir in the remaining ingredients.

- Spread the mixture over the cooled crust. Tip - the crust can still be slightly warm when pouring the collagen caramel layer over the top

Step 3 - Make the Sugar-free Chocolate Layer
- Melt the chocolate in the microwave for 30 seconds. Stir and return it to the microwave for 15-second intervals, stirring in between, until the chocolate has fully melted.
- Carefully pour the melted chocolate over the caramel layer. Smooth the top and chill until set (about 20 minutes).
- Slice into bars and store in the fridge or freezer.

Healthy High Protein Millionaire Bars -Keto, Gluten-free and Sugar-free

Ingredients
For the Shortbread:
- 2 scoops (30 g) plain pea protein powder
- ¾ cup almond flour
- 3 tbsp coconut oil, melted
- ¼ cup sweetener
- pinch of salt and a dash of vanilla
For the Caramel Layer:
- ½ cup smooth peanut butter (or almond butter)
- 1 tsp vanilla extract
- pinch of salt
- ¼ cup sugar-free maple syrup
- ¼ cup caramel collagen powder*
- pinch of salt
For the Chocolate layer:
- ½ cup sugar-free chocolate
- 1 tsp coconut oil
Instructions
- Preheat the oven to 350 degrees F. Line an 8 x 4-inch pan with parchment paper and lightly spray the paper with cooking spray. Set the baking dish to the side.
- In a small bowl, combine all the shortbread ingredients until fully combined. Place the mixture in the bottom of the baking dish and press it down firmly. Using a fork, prick the crust and place the dish in the oven for 10-13 minutes. Allow to cool slightly.
- In the same small bowl that has been wiped clean, heat the peanut butter and sugar-free maple syrup until peanut butter has melted. Add in remaining ingredients and stir to incorporate. Pour the caramel topping over the shortbread layer and place in the fridge for at least 4 hours or overnight.
- Melt the chocolate and coconut oil in the microwave for 30 seconds. Stir and if the chocolate has not fully melted, return it to the microwave for 15-second intervals until all the chocolate has melted. Pour the chocolate layer over the caramel layer and place in the fridge for 2 hours or longer.
- Slice into 8 bars.

- *if you do not use caramel collagen powder, you may want to add some caramel extract as well as some additional sweetener if your collagen powder is not sweetened.
