Keto Spinach Cheese Casserole
If you haven't noticed, I do not take calling a recipe "the BEST" very lightly! Although I LOVE all my recipes (or else I wouldn't post them on this blog!), I reserve the title for the "BEST" to a very select few.
And this Keto Spinach Gratin Casserole is one that deserves the title.
Adapted from Ina Garten's Spinach Gratin recipe, which got 5/5 stars and over 390 positive reviews, I knew that with a few simple tweaks, I could recreate her recipe and turn it into a delicious keto casserole, packed with all the flavour of the original.
Keto Spinach Side Dish Ingredients
This keto spinach side dish only requires some pretty basic ingredients:
- Butter - I like to use unsalted butter so that I can control the amount of sodium in this keto casserole
- Onion - I ended up decreasing the number of onions that the original recipe called for to help decrease the total amount of carbs. I used a sweet onion but a yellow onion or even shallots will work.
- Heavy cream - Make sure you use heavy cream and not half and half. I think you could use a can of full-fat coconut milk but I have not tried it so I can not say for sure.
- Cream Cheese or Boursin - Adding Boursin or cream cheese helps to make this keto casserole super creamy.
- Almond Milk - Use unsweetened almond milk
- Spinach - You will need 4 packages of frozen spinach. Make sure you allow enough time for the spinach to thaw before making this keto spinach cheese casserole.
- Cheese - I used a combination of grated Parmesan cheese and Gruyere. Using the Parmesan cheese that does NOT need to be refrigerated has a dual purpose - not only does it add some great flavour but it also helps to absorb some of the liquid since we are removing the flour from the original recipe.
- Seasoning - A combination of salt, black pepper and nutmeg come together to round out the flavours. Do NOT mistake KOSHER salt with regular table salt. If you only have table salt, decrease the salt to 1-2 teaspoons.

Keto Spinach Gratin Casserole Instructions
Get ready to indulge in a creamy, cheesy keto spinach side dish that's not only satisfying but also guilt-free. Enjoy!

Melt the butter in a heavy-bottomed saute pan over medium heat. Add the onions and saute until translucent, about 15 minutes.

Add the nutmeg and cook for 2 minutes. Add the heavy cream and cook for 1-2 minutes or until slightly thickened. Add the spinach to the sauce. Add ½ cup of the Parmesan cheese and mix well. Season, to taste, with salt and pepper.

Transfer the spinach to a baking dish (or leave it in the skillet if it is oven-proof) and sprinkle the remaining ½ cup Parmesan and the Gruyere on top.

Bake at 425 degrees F. for 15-20 minutes until hot and bubbly. Serve hot

Ingredients
- 2 tablespoons unsalted butter
- 2 cups chopped yellow onions (1 large)
- ¼ teaspoon grated nutmeg
- 1 cup heavy cream
- ½ cup almond milk
- 2 oz cup cream cheese
- 4-10-ounce frozen spinach, thawed
- 1 cup freshly grated Parmesan cheese
- Salt and pepper to taste
- ½ cup grated Gruyere cheese
Instructions
- Preheat the oven to 425 degrees F.
- Melt the butter in a heavy-bottomed saute pan over medium heat. Add the onions and saute until translucent, about 15 minutes.
- Add the cream cheese and nutmeg and cook, stirring, for 2 more minutes. Add the cream and milk and cook for 2 minutes. Squeeze as much liquid as possible from the spinach and add the spinach to the sauce. Add ½ cup of the Parmesan cheese and mix well. Season, to taste, with salt and pepper.
- Transfer the spinach to a baking dish and sprinkle the remaining ½ cup Parmesan and the Gruyere on top. Bake for 15-20 minutes until hot and bubbly. Serve hot
