This easy Keto Chocolate Lasagna Recipe is a scrumptious no bake dessert that comes together in minutes. A crunchy keto cookie crust, layered with a rich cream cheese layer, a creamy chocolate layer and topped with whipped cream and some more chocolate...what is there not to love?!!!
Yes...it is true...my oven is STILL on the fritz and looks like we won't be getting a new one for quite some time, which means more easy keto no bake desserts are on their way!
This keto chocolate pudding layered cake was inspired by my Easy Keto Butterscotch Layered Dessert. By creating a perfectly crunchy Keto Chocolate Almond Flour Pie Crust and layering a creamy whipped layer with a silky smooth keto homemade chocolate pudding, this recipe may look complicated but it really is not!

Ingredients
Although this keto chocolate lasagna looks like it requires quite a few ingredients, I am almost certain that you already have most of these ingredients on hand!
- Almond flour - Since the almond flour is only being used in the no bake crust, you do not have to use super-fine almond flour
- Cocoa powder - I used unsweetened black cocoa powder to get the "oreo" cookie crust I was looking for but feel free to use any type of unsweetened cocoa powder.
- Sweetener - Although you can use any type of sweetener for the crust, I highly suggest using powdered allulose (or confectioner Swerve) for the creamy lasagna layers. Using other types of keto sweeteners could result in a grainy texture.
- Shortening - I used organic palm shortening
- Cream cheese - You will add the cream cheese to the bottom layer. This will help ot create a more stable base to spread your keto homemade chocolate pudding
- Heavy cream - Heavy whipping cream is used twice - once combined with the cream cheese and the second time for the whipped topping.
- Unsweetened chocolate - You can use blocks of unsweetened chocolate (such as Ghiradelli or Baker's) or unsweetened chocolate chips (such as Pasha's)
- Almond milk - Plain unsweetened almond milk is used to make the keto homemade chocolate pudding
- Xanthan gum - Xanthan gum is a thickening agent that will create the "pudding" texture that we are looking for
- Salt and Vanilla - Both of these two ingredients help to bring out as well as round out the flavours.

Instructions
Making this keto chocolate pudding layered cake is actually really easy and comes together very quickly!

Add all the keto crust ingredients into a skillet and cook, stirring constantly for 5 minutes. Remove and press the mixture into the bottom of an 8 x 8 inch pan. Place in the freezer to cool.

In a small bowl, beat together the cream cheese and sweetener for 2 minutes. Add the heavy cream and beat until light and fluffy.

Spread the cream cheese layer over the crust and place in the freezer while preparing the keto homemade chocolate pudding

Prepare the pudding mixture by first melting the chocolate with the almond milk and shortening in the microwave. Whisk together the allulose, cocoa powder and xanthan gum. Whisk the dry ingredients into the wet ingredients. Whisk in the salt and vanilla. Place the mixture in the fridge to cool, stirring every 10 minutes until it cools to room temperature.

Once the pudding mixture cools slightly, spread it over the cream cheese layer. Place the keto chocolate lasagna back in the freezer.

In a large bowl, beat the heavy whipping cream, allulose, vanilla and salt until stiff peaks form. Spread the whipped topping over the keto homemade chocolate pudding layer and place the keto chocolate lasagna in the fridge to firm for at least 3 hours.

When ready to serve, cover with a drizzle of chocolate fudge sauce, sugar-free chocolate chips or anything else your heart desires!
Hint: You can always prepare the keto homemade chocolate pudding first and allow it to cool before preparing the other layers. This will allow the pudding to cool enough to be able to spread it on top of the cream cheese layer.
Variations
The best thing about this easy keto no bake dessert is how easy it is to add some variations to the recipe to suit your taste!
- Mint - add mint extract or use sugar-free mint chips instead of chocolate chips.
- Double chocolate - add unsweetened cocoa powder the the cream cheese layer for a double chocolate dessert
- White chocolate- add sugar-free white chocolate chips and omit the unsweetened cocoa powder for a white keto chocolate lasagna!

Equipment
You will need an 8 x 8-inch square pan for this recipe. You can use any type, glass, ceramic or metal. If you want to make slicing and removing slices of this dessert even easier, use parchment paper or aluminum foil (make sure to leave some overhang!) to remove the bars before slicing.
You can also easily double this recipe and use a 9 x 13-inch pan instead.
Storage
Easy keto desserts like this one need to be kept in the fridge since they contain milk products.
Top tip
If you want a thicker chocolate layer, simply double the ingredients for the chocolate pudding. Also, feel free to make the crust several days ahead and keep it in the freezer until you are ready to assemble your keto chocolate lasagna!

FAQ
Why is this keto dessert called "lasagna"?
Using the term "lasagna" for layered desserts was new to me when I moved to the USA. As it turns out, anything that is a layered dessert can be referred to as a "lasagna".
Can I use Simply Delish chocolate pudding?
When I tried to use Simply Delish chocolate pudding, the pudding layer initially set but when I cut into the dessert, the chocolate pudding had turned into liquid. I therefore do not suggest replacing my homemade keto pudding with Simply Delish.
Is this the same as "Possum Pie"?
Yes. Believe it or not, people have told me that they refer to this type of dessert as a Possum pie as the whipped topping is "hiding" two additional layers.
Can I use sugar-free Cool Whip?
If you do not want to make your own whipped cream, you can use sugar-free cool whip or keto Truwhip instead.

For the Crust:
- 1 ½ cup almond flour
- ½ cup unsweetened cocoa powder (I used black)
- ¼ cup sweetener
- ¼ cup palm shortening
For the Cream Cheese Layer:
- 4 oz softened cream cheese

- ¾ cup heavy cream
For the Chocolate Layer:
- 4 oz unsweetened chocolate

Prepare the Lasagna Layers:
- In a small bowl, beat together the cream cheese and sweetener for 2 minutes. Add the heavy cream and beat until light and fluffy. Spread the cream cheese layer over the crust and place in the freezer while preparing the keto homemade chocolate pudding
- Prepare the pudding mixture by first melting the chocolate with the almond milk and shortening in the microwave for about 45-60 seconds. Remove and stir until smooth. If chocolate does not fully melt, return the mixture to the microwave for 15 second intervals. Whisk together the allulose, cocoa powder and xanthan gum. Whisk the dry ingredients into the wet ingredients. Whisk in the salt and vanilla. Place the mixture in the fridge to cool, stirring every 10 minutes until it cools to room temperature.
- Once chocolate pudding has cooled slightly, remove the pan from the freezer and spread the pudding over the cream cheese layer. Make sure that your pudding is not warm as it will melt the cream cheese layer and not form distinct layers. Place the pan back in the freezer.
- In a large bowl, beat the heavy whipping cream, allulose, vanilla and salt until stiff peaks form. Remove the pan from the freezer and spread the whipped topping over the keto homemade chocolate pudding layer and place the keto chocolate lasagna in the fridge to firm for at least 3 hours.
- If desired, spread chocolate syrup over lasagna or drizzle syrup over top before serving.
