I have tried to grow so many different things in my raised garden beds but it seems that Florida is just not an easy state to grow vegetables.
Except when it comes to tomatillos!
After a bumper crop a couple of years ago (and hence the recipe production of this Green Tomatillo Enchilada Sauce as well as this Tomatillo Salsa Verde recipe from the abundance of tomatillos!), I actually decided NOT to plant tomatillo seeds in my garden this year. But, would you know it, somehow some tomatillo seeds made it into the soil et voila, yet another year of thousands (slight exaggeration!) of tomatillos!
And that's why this copycat Chipotle recipe was created. A tomatillo salsa with so many layered and complex flavours you would think it takes a long time to make and is super complicated. But really its just one extra step of roasting a few vegetables in your air fryer until they’ve charred before adding them to a food processor. When you char and roast a vegetable it adds a smokey new flavour which adds just the right intensity to this salsa.

Chipotle Tomatillo Chili Salsa Ingredients
- Tomatillos - Make sure that you remove the husk from the tomatillos and rinse them under water before using.
- Tomatoes - Use firm tomatoes such as Roma or plum
- Cilantro - Fresh cilantro adds the perfect fresh taste to this copycat Chipotle salsa recipe
- Red Onion - I like to use red onion but any onion will work.
- Chipotle Peppers - You will want to use chipotle peppers in adobo sauce. These are typically found in a can in the Mexican section of your grocery store.
- Spices - A combination of garlic cloves, dried cumin and oregano, salt, pepper, lemon and lime help to complete this complex roasted chipotle salsa
Roasted Chipotle Salsa Instructions
Making this healthy tomatillo salsa is really easy. I like to use my air fryer to roast the vegetables but you can also place them on the top rack of your oven to roast.
Step 1: Roast the Veggies
- In an air fryer, sprayed with avocado oil, add the tomatillos, tomatoes, garlic, and onion. Add 1 teaspoon of olive oil and toss to coat.
- Set your air fryer to 400 degrees on "Roast/Bake".
- Roast for 20-30 minutes or until vegetables just begin to char.
- Remove basket from air fryer and allow to cool.

Step 2: Process
- Add the roasted vegetables and all remaining ingredients to the bowl of a food processor.
- Pulse until slightly chunky, 10-20 seconds.


Step 3: ENJOY

Storing Healthy Tomatillo Salsa
- Since it contains fresh cilantro this salsa is best consumed within 72 hours and should be kept refrigerated when not being consumed. If you skip the cilantro you could keep it for up to 5 days if kept refrigerated.

- 450 g tomatillos, husked and washed
- 200 g tomatoes, quartered
- avocado oil spray or 1 teaspoon avocado oil
- 6-10 garlic cloves, whole, raw
- ½ red onion, cut into wedges
- 2 canned chipotle peppers in adobo sauce
- 1 tsp cumin
- ½ tsp dried oregano
- ½ tsp kosher salt
- ¼ tsp ground black pepper
- 1 tbsp lemon juice
- 1 tbsp lime juice
- ½ cup fresh cilantro
