Weeknight Keto Dinner Idea
The other day I was in hurry to get something on the dinner table for Mr. Grumbles and I. Having just come home from a run and smelling all the charcoal grills searing up delicious burgers, I developed a hankering for a burger.
So, after ransacking my fridge, I came up with this Bacon Mushroom Swiss Burger casserole that was so ridiculously easy to make that it has since been incorporated regularly in our easy keto dinner rotation!
This 7-ingredient casserole is a low carb and keto version of my favourite mushroom swiss burger, with just 6g net carbs per serving. Deep savoriness from mushrooms and ground beef combined with distinct Swiss cheese flavours make this casserole a crowd-pleasing dinner.

Keto Burger Casserole Ingredients
Even though this burger tastes just like a regular pub burger, it is a low carb and gluten-free version of what could potentially be a super-carb-heavy meal.
Ground Beef: I used 85% fat for this keto casserole but you can use a leaner cut of ground meat instead. You could also use ground turkey or chicken instead or even lean (95%) ground beef instead. If you want to make this a keto plant-based dinner, use any type of meat substitute.
Barbeque Sauce: You can either make my Smokey Onion Bacon BBQ Sauce (Whole30, Keto) or my White BBQ Sauce (Whole30, Low Carb, Keto) or just buy some sugar-free BBQ sauce. My favourite brands are Sweet Baby Ray's, G.Hughes or this one from Sticky Fingers.
Swiss Cheese: Although I used Swiss cheese for this exact recipe, I have also used cheddar, Havarti and even blue cheese! I like to use cheese slices or grate my own cheese from a block as they melt much better than prepackaged shredded cheese.
Bacon: You use either center-cut bacon or traditional bacon. To save time, sometimes I just use real bacon crumbles instead.
Mushrooms: Mushrooms help to add some bulk to this casserole. You can omit the mushrooms and just add more ground beef instead. Since you don't want the mushrooms to cook down too much, simply quarter the mushrooms instead of slicing them.
Onions: I love the taste of caramelized onions but if you are not a fan of onions, you can omit this ingredient and just add some extra mushrooms.
Mayo: Adding the mayo to the keto burger casserole lends an extra level of creaminess to the dish. If you haven't tried making your own Homemade mayo, I highly encourage you to try as the taste is like nothing you can buy at the store. Some keto-friendly brands of mayo are Dukes as well as Primal Kitchen.

Instructions for Bacon Mushroom Swiss Burger Casserole
One of my favourite things about this easy keto dinner is that it is all made using just one skillet! That's right...only one dish to clean!
First things first, let’s the bacon cooking! I like to use a cast-iron skillet but any oven-proof skillet will work. Chop the bacon and add it to a hot skillet. Cook the bacon, stirring it every so often, until crispy. Using a slotted spoon, remove the bacon from the pan and place it in a bowl.
While the bacon is getting nice and crispy, chop the mushrooms and onions.
Using the same skillet that cooked the bacon, add the ground beef and season it to your liking (I used Montreal Steak Spice). Cook until the beef is no longer pink. Take your slotted spoon and place the beef in the same bowl as the bacon.
Finally, add the mushrooms and onions to the skillet. If your skillet is on the smaller side, add the mushrooms first and cook them for about 2-3 minutes before adding the onion. Cook the two for about 10 minutes total.
While the mushrooms and onions cook down, add the barbecue sauce and mayo to the bowl with the bacon and cooked beef. Stir to incorporate the ingredients.
Once the mushrooms have cooked down and the onions begin to caramelize, layer the beef and bacon over the mushrooms and onions. Top the keto burger casserole with the cheese and place the skillet under the broiler until the cheese melts and begins to brown.
Sprinkle any leftover bacon over the cheese if you want.

Equipment
As I stated earlier, I like to use my Lodge 12-inch cast-iron skillet but any oven-proof skillet will work.
If you do not have an oven-proof skillet, you can easily cook the ingredients on the stove-top and then place them in a 9 x 9-inch baking pan. Place the pan under the broiler until the cheese begins to brown.
If you do not want to use the broiler at all, simply cook all the ingredients on the stovetop, add the cheese and place a lid over the skillet. This will help the cheese to melt but will not allow the cheese to get crispy.

Storage
This Bacon Mushroom Swiss burger casserole can be stored in an airtight container in the fridge for 5 days. I like to divide it up into individual containers and eat them for lunch the next day.
You can even freeze this keto burger casserole for up to 3 months. To reheat, allow the casserole to thaw in the fridge and then place it in a 300-degree oven for 20-30 minutes or until it is warmed through.

Plant-based Keto Recipe
If you would like to make this recipe into a plant-based keto recipe, all you have to do is substitute the beef with any type of ground plant-based meat substitute.
Also, if you can't easily find ground plant-based meat substitutes, you could always just double the vegetable ingredients and make this a vegetarian keto dinner recipe!

Ingredients
- 4-6 bacon slices, coarsely chopped
- 16 oz 15/85% grass fed ground beef - cook
- 1 tbsp Montreal steak seasoning
- 16 oz fresh mushrooms, quartered
- 1 onion, sliced
- ¼ cup sugar-free BBQ sauce
- ¼ cup mayo
- 4 slices swiss
- Cooked bacon bits
Instructions
- Take an oven proof skillet and heat it on medium heat. Once heated, add the bacon. Cook stirring every so often until the bacon is cooked to your liking. Using a slotted spoon, remove the bacon from the pan (leave the grease in the pan) and place the bacon in a medium-size bowl.
- In the same pan with the leftover bacon fat, add the ground beef and Montreal Steak season. Cook, stirring constantly until no longer pink. Remove the beef with the same slotted spoon and put it in the bowl with the bacon. Stir in the mayo and BBQ sauce and set the bowl to the side.
- Using the same skillet, add the chopped mushrooms and onions. Cook until the onions begin to brown and caramelize, 7-10 minutes.
- Turn off the stove and remove the skillet from the heat. Spread the mushroom and onion mixture across the bottom of the skillet. Spread the meat mixture over the mushroom layer. Top with the cheese and bacon bits (if using).
- Turn the broiler on "hi" and place the skillet under the broiler until the cheese melts and begins to brown.
Notes
- If you want to omit using raw bacon and just use bacon bits instead, feel free to do so.
Simply start with browning the beef instead of cooking the bacon.
