This Whole30 Leftover Ham Bone Soup is the perfect accompaniment to a cold and dreary day.  By simply combining some leftover vegetables in an Instant Pot, Ninja Foodi or any other pressure cooker, along with the leftover bone from a ham, you can create this delicious and nutritious Paleo and Whoel30 Leftover Ham Bone Soup in under 20 minutes.

  • Total Time: 30 minutes
  • Yield: 4 servings 1x

Ingredients

Units Scale
  • 1 medium onion, diced
  • 6 garlic cloves, minced
  • 2 carrots, thickly sliced
  • 1 leftover ham bone
  • 2 cups spinach
  • 4 cups water
  • 2 cups chicken broth
  • Optional - 1 tbsp pickling spice
  • salt and pepper to taste

Instructions

  1. Select "saute - hi" on the pressure cooker (I have the Ninja Foodi and I absolutely love it!)
  2. Add onions and cook until softened (about 5 minutes)
  3. Add garlic until it becomes fragrant (about 1 minute)
  4. Add in carrots, ham bone, spices and water
  5. Select "Pressure Cook - Hi", seal the vent and set for 30 minutes.  Allow pressure to release naturally for 5 minutes and then manually release pressure.
  6. Remove ham bone, stir and enjoy!
