Combining fresh spices to make this easy and delicious Homemade Pickling Spice recipe creates the most intricate and flavourful spice mix.

Ingredients

  • 3 tbsp whole Allspice (about 0.5 oz or 14.2 g)
  • 2 tbsp whole Cloves (about 0.25 oz or 7.1 g)
  • 2 tbsp red pepper flakes
  • 2 tbsp whole peppercorns (black, white or a mixture or both)
  • 2 tbsp mustard seed
  • 1 tbsp ground cardamom
  • 1 tbsp ground ginger
  • 1 tbsp ground corriander
  • 0.2 oz whole bay leafs

Instructions

  1. Place allspice, cloves, red pepper, black (and white) peppercorns and mustard seeds in a small skillet
  2. Heat on medium heat, stirring constantly until seeds start to become fragrant (1-2 minutes)
  3. Remove the seed from heat and let cool slightly
  4. Add remaining ingredients
  5. Grind the seeds using either a mortar and pestle or use a high-speed blender for 30 seconds
  6. Store in an airtight container for up to 1 year
