Roasted Cauliflower Buffalo Casserole - Keto, Plant-Based

This Roasted Cauliflower Buffalo Casserole is SOOOOOO GOOD and SOOOOO EASY!!!! I can not believe that with only a handful of ingredients and about 30 minutes of time, something THIS GOOD can be created. Perfect for a quick and easy Keto dinner or serve it as a side with your favourite meat, either way, this keto recipe is an absolute WINNER!

Ingredients

For the Base of the casserole

  • 1 small to medium head cauliflower, broken into small pieces
  • 1 tbsp olive oil
  • 1/4 tsp salt
  • 1 tsp garlic powder

For the Spicy Cheese Sauce:

  • 4 oz Ranch Salad or Blue Cheese Salad dressing
  • 3-4 oz cheese of choice (cheddar, brie, gouda, mozzarella, etc.)
  • 4 oz cream cheese
  • 1-3 tbsp Hot Sauce
  • 1 tsp garlic powder

For the topping:

  • 1/4 - 1/2 cup shredded mozzarella or cheddar cheese
  • OPTIONAL - sliced green onion, bacon bits

Instructions

  1. Preheat the oven to 450 degrees F.  Grease a cast-iron skillet or a 8 x 8 baking pan with cooking spray and set it aside.
  2. Toss the cauliflower bits with olive oil, garlic and salt until combined.  Spread the cauliflower mixture into the skillet or baking pan and bake for 10 minutes, stirring once at the 5 minute mark.  For softer cauliflower, bake an additional 2-5 minutes.
  3. While cauliflower is roasting, take a small bowl and add the salad dressing, cheese and cream cheese.   Place the dish in the microwave for 30 seconds or until the cheese begins to melt.  Remove the dish from the microwave and stir in the hot sauce and garlic powder.
  4. When cauliflower has roasted, remove it from the oven and pour the spicy cheese sauce over the cauliflower.  Stir to incorporate being careful as the dish will be VERY HOT.
  5. Once the sauce has been combined, sprinkle the additional cheese over the top.  Return the pan to the oven and bake for an additional 10 (for crunchy cauliflower) to 15 minutes (for softer cauliflower)

Notes

  • use any type of cheese that you have in your fridge
  • if you like crunchy cauliflower (this is my preference) roast the cauliflower for 10 minutes and bake it for 10 minutes.
