This keto sausage stuffed mushroom casserole tastes exactly like stuffed mushrooms with half the amount of work! Serve it as a main meal, appetizer or side dish, this mushroom casserole is sure to be a hit!

Instructions

  1. Preheat the oven to 350 degrees F. and grease an 8 x 8-inch square pan with cooking spray.
  2. Heat a large skillet over medium-high heat.  Add the sausage and cook until no longer pink.  Remove the sausage from the pan, leaving the sausage drippings in the pan.  Add the musrhooms and 1/2 tsp of salt along with a few grinds of black pepper.  Cook until the mushrooms have softened and most of their liquid has evaporated. Add the minced garlic and cook for 1 minute.
  3. Stir in the cream cheese and heavy cream and cook until the cream cheese has fully melted.  Stir in the mozzarella and 1/2 cup of Parmesan Crumbs until combined.
  4. Transfer the mixture to the baking dish and sprinkle with remaining 1/2 cup Parmesan crumbs and additional cheese, if desired.
  5. Bake until the top begins to turn a light golden brown, about 20-25 minutes.
