These Keto Salted Chocolate Almond Coconut Protein Bars are just one more variety that we love. These no-bake keto protein bars taste ridiculously decadent - no one will ever know just how healthy this homemade protein bar recipe really is.

Ingredients

For the protein bar:

  • 3/4 cup creamy all natural almond butter* (just almonds)
  • 2 tablespoons coconut oil
  • 1/4 cup liquid sweetener
  • 1/2 tablespoon vanilla extract
  • 1/4 teaspoon salt (if your almond butter isn’t already salted)
  • 2/3 cup unflavored, chocolate or vanilla protein powder
  • 1/4 cup unsweetened shredded coconut
  • 1-2 tablespoon flaxseeds (or chia seeds)

For the toppings:

  • 1/3 cup dark chocolate chunks from 85% dark chocolate bar (about 1.5 oz)
  • 1 teaspoon coconut oil
  • Coarse sea salt, for sprinkling (I use Maldon Salt)
  • 2 tablespoons chopped roasted almonds
  • 2 tablespoons unsweetened shredded coconut

Instructions

  1. Heat almond butter, coconut oil, liquid sweetener, vanilla and salt in a microwave-safe bowl for 30 15-30 seconds or until the almond butter has melted. Mix together until well combined and smooth.
  2. Stir in protein powder until smooth, then fold in flaxseeds (or chia seeds), and shredded coconut. Place in a 8x4 inch loaf pan lined with parchment paper or divide the mixture evenly between 12 candy molds.
  3. Add dark chocolate chunks and coconut oil in a small microwavable bowl and heat in the microwave on high for 30 seconds. Remove from microwave and stir until all the chocolate has melted.
  4. Spread the chocolate over the tops of the bars, then sprinkle with sea salt, chopped almonds and shredded coconut.
  5. Place in fridge for 30 minutes-1 hour before removing from pan and cutting into 12 bars. Store bars in fridge tightly wrapped or in an airtight container for up to 2 weeks.
