Have a little too much leftover ham on your hands? This keto ham loaf is the perfect recipe to use up any leftover Easter or Christmas ham! Only a 7 basic ingredients, this keto ham loaf is easy to make - you can even make this into individual loaves and stash them in the freezer for a quick and easy dinner.

For the Keto Ham Meatloaf

  • 16 oz chopped ham
  • 16 oz ground pork (unflavoured)
  • 140 grams onion, chopped
  • 2 eggs
  • 1/2 cup Homemade Parmesan Crumbs
  • 1 tbsp mustard

For the Glaze:

  • 1/4 cup brown sugar substitute
  • 1/4 cup sugar-free ketchup
  • 1/4 cup apple cider vinegar
  • 1 tbsp mustard

Instructions

For the Ham Loaf:

  1. Preheat the oven to 375 degrees F.  Line a rimmed baking sheet with aluminum foil and spray it well with cooking spray.
  2. In a large skillet, cooked the onion until translucent and just beginning to brown, about 5 minutes.  Remove from heat and allow to cool slightly.
  3. In a large bowl, combine all the ingredients, including the slightly cooled onion.   Mix with a large spoon (or your hands) until fully incorporated.
  4. Shape into a meatloaf and bast with a little glaze.
  5. Bake for 55 minutes, basting top of ham loaf with glaze every 30 minutes or until internal thermometer reads 155-160 degrees F.  Allow the meatloaf to cool slightly before serving.

For the Glaze:

  1. Combine the ingredients in a medium-size bowl or 4 cup glass measuring cup and whisk the ingredients together.  Cook in the microwave for 1 minute intervals, stirring in between each minute, until the mixture thickens (should take approximately 3-5 minutes).  Set the glaze to the side.
