Keto Coconut Chocolate Chip Bars
I am definitely a snack-lover. Sometimes, during the day, I just need a quick and easy snack and this healthy keto snack bar recipe always does the trick! With only a couple of ingredients, this copycat Perfect Keto Nolabar recipe tastes just like the real thing.
Sweetened coconut sprinkled with chocolate, one of these keto coconut chocolate chip bars have under 1 gram of sugar in each bar!
After creating the most AMAZING copycat Perfect Keto Peanut Butter Bar recipe, I decided to try my hand at some other flavours that the Perfect Keto company offers.
Since Mr. Grumbles is a huge coconut fan, (hence all my keto coconut recipes, like this Easy Keto Coconut Cream Pie, these Keto Funfetti Macaroons, as well as this Copycat Coconut Keto Clusters Recipe with Pecans, Almonds and Pumpkin Seeds), I decided to make him an easy keto snack that is super healthy and absolutely delicious!
These Keto Coconut Chocolate Chip Bars are easy to make, only require a handful of ingredients and taste better than any store-bought sugar-free granola bar (and much cheaper, too!)

Ingredients for this Easy Keto Snack
Almonds - I used sliced almonds for this recipe but you can use any type of almond or nut of your choice. I do not suggest using salted almonds as they are a little too salty for my liking.
Coconut - I used unsweetened shredded coconut. Coconuts are especially high in manganese, which is essential for bone health and the metabolism of carbohydrates, proteins, and cholesterol. They're also rich in copper and iron, which help form red blood cells, as well as selenium, an important antioxidant that protects your cells. The coconut also adds a little extra bulk to the bars. I did not bother toasting the coconut but if you want, you can always place the coconut in a small pan and toast it.
Soluble Tapioca Fiber Syrup - I use the soluble tapioca fiber syrup by Keto Goods which you can buy through the company directly (use coupon code "Catou" to save 10%) or buy it on Amazon. You could replace this with liquid allulose or Lakanto Maple syrup but you will definitely give the bars a maple flavour if using maple syrup!
Sweetener - In this recipe, you can use any brand of sugar-free substitute. I have made this recipe with both allulose and Lakanto erythritol sweeteners.
Sugar-Free Chocolate Chips - I have recently been using Thrive Market sugar-free chocolate chips since they are actually much cheaper than any other sugar-free brand on the market. However, feel free to use any brand such as ChocZero, Lakanto or Lily's.
Vanilla, Coconut Extract (optional) and Salt - These 3 ingredients help to round out the flavours of these sugar-free granola bars. The coconut extract is purely optional and ONLY add 1-2 drops for a more intense coconut flavour.

What is Soluble Tapioca Fiber Syrup?
Soluble tapioca fiber is a ketogenic-friendly sweetener that is being used in many of your favourite products. It is made from non-GMO corn syrup that has been broken down through an enzymatic-based process, leaving you with a true keto-friendly fiber.
Known as a prebiotic fiber, Soluble Tapioca Fiber Syrup has been shown to promote a healthy gut biome, improves metabolism and energy levels and aid in the body's production of neurotransmitters.
Is Soluble Tapioca Fiber Syrup Keto-Friendly?
According to recent research, tapioca fiber syrup has no glycemic impact and is low in calories. A serving only contains 1 gram of net carbs and is high in dietary fiber.
As far as the nutritional breakdown, 1 teaspoon of tapioca fiber syrup has only 10 calories, and 6 grams of carbs of which 5 are fiber.

So, how does my copycat Perfect Keto Nolabar recipe compare to the super expensive store-bought sugar-free granola bar?

Are Sugar-Free Granola Bars OK on a Keto Diet?
Keto isn't so much about what you eat, but more about hitting specific nutritional targets. And since you're trying to hit a higher fat intake while keeping your carb count low, these keto coconut chocolate chip bars are actually a perfectly healthy keto snack bar that can easily fit into your nutritional goals.
Each Copycat Perfect Keto Nolabar actually contains 70% fat. Most Keto diets recommend 60 - 70% of your daily nutrition to come from fat so these keto coconut chocolate chip bars can fit right in!
STORING COPYCAT PERFECT KETO NOLABAR
The great news is that because these bars have nothing in them that spoils easily, they can be made well in advance.
I recommend storing them in the fridge in a covered container so that they don’t get overly soft. They will soften at room temperature especially if you live in a hot climate.
They can last up to 3 weeks if properly stored and refrigerated.
To freeze, I would wrap up the bars tightly in plastic wrap, to avoid freezer burn. They can be frozen for several months and eaten directly from the freezer.

Easy Keto Bar Recipe Substitutions
Although, I highly recommend not changing this recipe to keep these as close to a copycat Perfect Keto Nolabar, here are some substitutions that should work. I have not tried these substitutions so if you make any swaps, send me a note and let me know how they worked!
- Almonds - You can use any type of nut or seed but make sure that if the nuts or seeds are large, you break them down in a food processor. Also, be careful about using any type of salted nut or seed as they may end up making these sugar-free granola bars too salty.
- Tapioca Fiber Syrup - You can use any type of keto syrup such as Lakanto Maple Syrup or ChocZero Caramel syrup. Just realize that the bars will take on a maple or caramel flavour (not such a bad thing;-)

Tips for making Keto Coconut Chocolate Chip Bars
- Make sure that you chop the almond slices into smaller sections either by hand or using a food processor.
- Press each bar down firmly to ensure that the bars stick together.
- If the bars do not firm enough, keep them in the freezer - they can be directly eaten from the freezer
- If you don't have a mould, press the mixture into a lined 9 x 5-inch loaf pan and then cut them into pieces.
- Place the chocolate chips into each mould first and then press the bar mixture into the mould - you can also fold the chocolate chips directly into the bar mixture if you prefer.
- To ensure the exact nutritional value of each bar, make sure that you weigh each bar.

Ingredients
- 1 ½ cup sliced almonds
- 1 cup unsweetened shredded coconut
- ¼ cup tapioca fiber syrup
- 2 tbsp allulose
- 1 tsp vanilla
- ½ tsp salt
- ½ cup sugar-free chocolate chips
- Optional - 1 tablespoon Lakanto Golden or other granular sweetener.
Instructions
- Place the sliced almonds and shredded coconut in a food processor and pulse 5-10 times or until the almonds have been broken down. (If you don't have a food processor, use a sharp knife and chop the almonds instead)
- Place the almond/coconut mixture in a medium-size bowl and add in all the remaining ingredients, reserving 4 tablespoon of chocolate chips for decorations. Stir the ingredients well and divide the mixture evenly between 12 candy bar wells. If you don't have a mould, simply place the mixture in a 9 x 5-inch loaf pan that has been lined with parchment paper.
- Press the mixture down firmly and refrigerate (or freezer) until firm.
