I was shell-shocked the other day when I went to buy some coconut butter. A jar of Nutiva Coconut Manna (which is their name for coconut butter) is over $15...and that does not even include shipping!
Instead of wailing and lamenting, I decided to create a recipe for coconut butter. This budget friendly keto recipe only requires 2 ingredients, a food processor and about 10-15 minutes of time. Easy enough, right?! Plus, this organic recipe for coconut butter costs under $5. Win-win!!
Coconut Butter vs Coconut Oil
There is a big difference between coconut butter vs coconut oil. Coconut oil is made entirely of fat, mostly saturated. One tablespoon has around 14 grams. Coconut butter is made from whole coconut, so it also contains saturated fat, around 10 grams per tablespoon. It has nutrients that coconut oil doesn't, most notably fiber.
The nutritional breakdown of coconut butter (not coconut oil!) is as follows: 1 tablespoon has 9 grams of fat, and 5 grams of carbs of which 3 grams are fiber and 1 gram of protein. At over 80% fat content, coconut butter is a great addition to your keto diet!

Ingredients
Only 2 ingredients are needed to makehomemade coconut butter. This is definitely a budget friendly keto recipe that is perfect for any level cook!
Coconut - You will need about 2 cups of unsweetened coconut. I used shredded unsweetened coconut instead of coconut flakes since the smaller size coconut is easier to break down.
Coconut Oil - Although you do not have to add coconut oil to this coconut butter recipe, I find that the coconut oil helps to break down the coconut a little faster.

Instructions
This recipe for coconut butter requires only 2 basic steps.

Add the unsweetened shredded coconut and the coconut oil (if using) to the bowl of a food processor.

Turn on the food processor and let it run for about 10-15 minutes, scraping down the sides every minute or so until the shredded coconut is turned into a soft texture.

That's it! Then, all you have to do is bottle the coconut butter and get ready of all the amazingly different uses for coconut butter.
Hint: Coconut butter ends up being slightly sweet but if you taste the mixture and want to make it sweeter simply add a tablespoon of keto sweeteners until the desired level is reached.
Variations
There are a million (ok...maybe a slight exaggeration!) ways that you can modify this recipe!
- Coconut Nut Butter - add some almonds, peanuts or cashews along with the coconut to create an amazing keto spread.
- Chocolate - Pour the coconut butter into a bowl and add some sugar-free chocolate chips. If the coconut butter is still warm, the chips should easily melt. You could also stir in some unsweetened cocoa powder and add some additional sweetener
- Vanilla White Chocolate - add some vanilla and sugar-free white chocolate chips. If you do not stir the mixture, you will end up with some delightful little chunks of white chocolate bliss!
- Cinnamon Roll - stir in some cinnamon, brown sugar and cream cheese. Since you are adding cream cheese, this version will have to be refrigerated.

Equipment
Although this recipe is really easy, it does require a food processor. I used my Kitchen-Aid food processor. You can use a small 5-cup food processor and as large as a 10-cup. Any larger and you will want to double this recipe or else you will be spending your time scraping down the edges!
I do not suggest using a Vitamix or a heavy-duty blender. Although I love my Vitamix, the coconut is too light and ends up not being heavy enough to drop down into the blades. Also, it is very difficult to get the coconut butter out of the bottom of the high-speed blender.
Storage
You can store this coconut butter in an airtight jar at room temperature. You do not need to refrigerate the coconut butter but I would refrigerate it if you are not planning on using it within a month.
You can also easily freeze the coconut butter for up to 1 year.

Top tip
Make sure that the food processor is full enough so that the shredded coconut does not just stick to the sides. Also, scrape down the sides every so often until the coconut liquifies and no longer sticks to the edges.

Is coconut butter the same texture as coconut oil?
The texture of coconut butter is much thicker than coconut oil as it contains fiber. Coconut butter is a little grainier than homemade nut butters so do not expect this butter to turn out completely smooth.
How do I know when the coconut butter is ready?
Once the shredded coconut turns into a liquid form, your coconut butter is ready. Do not stop processing until the liquid forms as it is too early. However, expect about 10% of the total coconut butter to be in a somewhat "soft" solid form.
Do I have to use coconut oil?
You can make this coconut butter without adding any oil. When I first create this budget friendly keto recipe, I did not add any oil and the recipe worked well but it took much more time to break down the coconut so now I add the oil to help out my food processor!
Can I use toasted coconut?
If you want, you can quickly toast the coconut in a skillet on the stovetop until it just begins to brown. Be careful as coconut will quickly go from brown to burnt in a matter of seconds. The end product will have a nice, almost caramelized flavour and will be darker in colour.
What are some uses for coconut butter?

Coconut and coconut butter is keto-friendly because it is high in healthy fats. It is also minimally processed and free of harmful ingredients. Most of the carbs found in coconut are in the form of fiber which makes the net carbs of coconut suitable for a keto diet.

Store the coconut butter in an airtight container on the counter for 2 weeks or in the fridge for 1 month or freezer for 3 months.
