This super Healthy High Protein Cookie Dough is great for a quick breakfast, snack, or even pack in your kids' lunchbox! Packed with over 24 grams of protein, low in carbs, keto-friendly, easy to make...and absolutely delicious - what is there NOT to love?!!

Ingredients

  • 1/4 cup cottage cheese
  • 1/4 cup sugar-free syrup (I used sugar-free Lakanto Maple Syrup)
  • 1/4 cup almond milk
  • 1 tsp vanilla extract
  • 1/4 cup almond flour
  • 1 cup vanilla casein or mixed protein powder (do not use 100% whey)*
  • 1/2 cup sugar-free chocolate chips
  • Optional - 1/4 cup brown sugar substitute, pinch of salt and splash of vanilla**

Instructions

  1. In a high speed blender, blend together the almond milk, cottage cheese and sugar-free maple syrup until no lumps remain.
  2. Pour the mixture into a large bowl.  Add in the vanilla extract, almond flour and vanilla casein protein powder until everything comes together (Tip - it should look like cookie dough consistency).  Taste the mixture and add additional sweetener or a pinch of salt to suit your taste.
  3. Fold in the chocolate chips and divide the dough into 4 equal servings.

Notes

* you may need to adjust the quantity of protein powder - if mixture seems too dry, add a tablespoon at a time of almond milk until desired consistency is met.  If mixture is too wet, add additional vanilla casein protein powder (or almond flour).

**Taste the cookie dough and add additional salt or granular sweetener to suit your taste.
