Ingredients
- 1/4 cup cottage cheese
- 1/4 cup sugar-free syrup (I used sugar-free Lakanto Maple Syrup)
- 1/4 cup almond milk
- 1 tsp vanilla extract
- 1/4 cup almond flour
- 1 cup vanilla casein or mixed protein powder (do not use 100% whey)*
- 1/2 cup sugar-free chocolate chips
- Optional - 1/4 cup brown sugar substitute, pinch of salt and splash of vanilla**
Instructions
- In a high speed blender, blend together the almond milk, cottage cheese and sugar-free maple syrup until no lumps remain.
- Pour the mixture into a large bowl. Add in the vanilla extract, almond flour and vanilla casein protein powder until everything comes together (Tip - it should look like cookie dough consistency). Taste the mixture and add additional sweetener or a pinch of salt to suit your taste.
- Fold in the chocolate chips and divide the dough into 4 equal servings.
Notes
* you may need to adjust the quantity of protein powder - if mixture seems too dry, add a tablespoon at a time of almond milk until desired consistency is met. If mixture is too wet, add additional vanilla casein protein powder (or almond flour).
**Taste the cookie dough and add additional salt or granular sweetener to suit your taste.
