Prosciutto-Wrapped Shrimp is an easier version of everyone's favourite Bacon-Wrapped Shrimp appetizer! By swapping out a couple of ingredients, these delicious keto appetizers can be made for a quick weeknight dinner or for any game day or any Holiday. What could be better than shrimp wrapped in bacon, you ask? Shrimp wrapped in prosciutto with a sweet and spicy jam and a rich and creamy slice of brie!

Instructions

  1. Preheat the oven to 400 degrees F.  Line a rimmed baking sheet with parchment paper and top it with a baking rack (you can eliminate this if you don't have one).  Spray the baking rack with cooking spray and set it aside.
  2. Take a piece of prosciutto and spread it 1/2-1 tsp of Sugar-free Hot Pepper Onion Jam.
  3. Take a shrimp and place it in the middle of the piece of prosciutto.  Add about 0.25-0.5 oz of cheese to the top of the shrimp.  Tightly wrap the prosciutto around the shrimp.  Place the shrimp on the baking rack with the ends of the prosciutto facing down.  Add a dollop of jam to the top if desired.  Repeat with all remaining shrimp.
  4. Place the baking tray in the oven for about 5 minutes or until the prosciutto just begins to brown.
  5. Serve warm.

Notes

  • feel free to make as many appetizers as you wish.  The ration is 1 piece of prosciutto to 1 shrimp to 0.25-0.5 oz of cheese
  • you can use peeled and deveined raw shrimp but you will need to bake the shrimp for about 15 minutes or until the shrimp turn pearly or white, and opaque
