Keto Cheddar Apple Tart - Gluten-Free

This Keto Cheddar Apple Tart combines unique flavours that, believe it or not, are a match made in heaven.  If you have yet to try the flavour combination of apples and cheddar, I urge you to try this easy keto fall dish.  A simple almond flour-based tart crust, topped with a little sour cream, sliced apples and finished with some sharp cheddar cheese - an aware winning combination!

Ingredients

For the Crust:

  • 200 g almond flour (1.5 cups)
  • 2 tbsp ground flaxseed
  • 1 egg
  • 4 oz (115g) butter, softened, unsalted
  • 2 tbsp brown sugar substitute (any sugar-free sweetener will work)
  • 1/4 tsp salt

For the topping:

  • 1 small apple, thinly sliced (about 4-6 oz)
  • 4 oz shredded cheddar cheese
  • Optional - Sprinkling of blue cheese crumbles
  • 1 tsp cardamon (optional)
  • 1 tsp chives, dried
  • 3 tbsp sour cream (or plain Greek yogurt)

Instructions

  1. Preheat oven to 350 degrees F.  Grease a rectangular tart pan well with non-stick spray.
  2. In a small bowl, combine the crust ingredients and mix until fully incorporated.  Press crust into tart pan wetting your fingertips as necessary to press the crust firmly in the pan.  Poke holes using a fork all over crust and place in the oven for 10 minutes.
  3. While crust is baking, thinly slice 1 apple and set aside.
  4. When crust is done baking, remove from oven and spread the sourcream over crust. Sprinkle chives and cardamon over the crust.  Layer apple slices over crust and top with grated cheddar cheese and optional blue cheese crumbles.  Return to the oven and bake for 20 minutes or until cheese has softened.

Notes

  • Feel free to use softened cream cheese instead of sour cream
